Holy crap. So I boiled my perogies first a little bit (though the box said to fry them frozen) and then fried them in butter. I had way too much butter obviously and might have over boiled them in the first place.

So for dinner last night we had Perogie Mush with onions yay. Oh well wife liked it and didn't complain, me on the other hand couldn't believe how well they didn't turn out...

We had the grilled Chicken boobs on WW buns. I had a South west marinade mix so made that and left them in the fridge for a couple hours before my husband popped them onto that frigging George Foreman grill. Hate that damn thing...takes up space.

When we buy a house...I am going to need an entire pantry type cupboard just for all the damn extra '1 job' appliances

I keep 3 appliances on the counter - toaster, microwave and coffee machine - I can't stand to have a bunch of clutter on the counter, so I hear you! Every time I need the kettle or sandwich maker or popcorn maker etc, have to go get it. I like the idea of appliance cupboards.

For dinner tonight my Husband is going to bring Tim Hortons sandwiches, well at least that is the plan at this point - he also has to go to walmart for kitty litter etc - I have gotten to the point where I will not go to Walmart - it's ugly it's overcrowded and I don't like it.

That was actually my first thought, but then looked at a starving wifey on the couch looking hungry...

i lived with my brother for awhile and he has no idea how to cook.. so I did most of the cooking..

but once in awhile he would cook.... he would take frozen perogies throw them in baking dish with some onion and butter, I think and then throw it in the oven.... dang those perogies would be so chewy... tongue.gif I think it would have come out ok, if the perogies were thawed... lol

Grilling again...chicken drumsticks...half basted in olive oil with herbs, the other half in bbq sauce. Half as in 6 legs one way, 6 the other. The leftovers will be lunch tomorrow for us both and snacking later on. Scalloped potatoes, corn on the cob, and hmmmm....maybe a french vanilla pudding for later.

Ok...I need a recipe for donair sauce. I'm sure they abound on the 'net but I just don't feel like surfing right now. Now I know someone posted one a while back but I've lost it (and yes, I could search but I'm still feeling crappy right now) and I have a craving REALLY BAD for the bloody stuff. Anyhoo, no hurry... if anyone has it handy or knows it (I bet Marilyn does! biggrin.gif ) I would LOOOOOOOOVE it.

I think I HEARD there was a recipe for Donair sauce, but I just use tzatziki sauce on my donairs...actually I use it a lot on a LOT of things!

This is the 3rd of March, and I think you wanted it for last night? If not, let me know and I'll give you my Tzatzki sauce if Marilyn doesn't post her donair sauce. OR I'll post a donair sauce that I've googled since you're not feeling well...but it doesn't mean I've tried it.

We had grilled salmon on the weekend and it was divine! Mmmmmmmmmm Was 73 here yesterday, so of course we had to grill.

I'm going to make zuchinni sausage squares tonight because now it's pouring and we're supposed to get snow/sleet after noon here, so I'll be cooking inside.

We're going to have chicken vegetable soup tonight. We're having a bit of a snowstorm today. Gene didn't go to work. blink.gif So, we're hunkering down and going to have some comfort food. Maybe I'll make some parmesean butter rolls for the soup. Did I tell you it was 78 degrees on Sunday??? Weird weather!

mmmmmmmmmmmmm! Thanks Cassie!!! Can't wait to try this donair sauce. I've not been able to find anything down here in the South to match this sauce. AUGH!

Just had to go buy American tea for the first time in two years! 2 YEARS! My MIL kept me supplied with King Cole tea and our latest care package hasn't gotten here yet (I bet it's in customs being searched...again) so it's on with some Seattle's Best coffee I found on sale and some Tetley British Tea.

For supper...hmmmm...maybe chicken strips...maybe breffus for supper. I could make a homemade pizza too. Now there's a thought......

We're in Florida visiting my mom ... have been eating lots of yummy food. We were in the Everglades earlier tonight and had dinner at a restaurant there .... conch fritters, gator bites and steamed shrimp for me ... hubby also had fried catfish, frog's legs and crab cakes. And I had the yummiest Key Lime pie for dessert smile.gif MMMMMMM!

We just got back from Florida and I'm missing that kind of food already!! Mmmmmmmmmmm Hope you're relaxing and having fun autumnchik!

We're going out for supper tonight...don't know where yet. My Valentine's Day present was tickets to see Michael Buble tonight, so we're going to go out for supper first.

Now that's what I call a good dinner. Well all except the pie. Gator is one of my favoritest meals, though I always feel bad because when I go down to Florida I hike the swamps looking for gators to photograph. I just can't help it though, I love eating gator and frog legs. Damn you now I'm hungry and all I have left is a left over slice of vegetarian pizza...

Last night we ate at the Islamorada seafood restaurant at the Bass Pro Shop. It was HORRIBLE. I highly recommend no one go there. good.gif

The night before we ate at Jim 'n Nick's BBQ. It was good. Tonight.... I'm not sure. Maybe Indian?

Anyhoo, it is steak tonight for dinner, since I took it out of the freezer on Monday but obviously didn't do anything with it. Yams, potatoes.

already had dinner, husband leaves for work at 3pm this week...it seems more like lunch.. made steak, roasted cauliflower and brussel sprouts and salad...

I also like to make low sugar pies from one of my favorite cookbook authors..Joanna Lund.. today Im making her Almond Rejoice Pie...soo good

Almond Rejoice Pie

1 (4 serving) pkg. Jell-o sugar-free chocolate pudding mix
2/3 cup Carnation nonfat dry milk powder
1 1/3 cups water
1 tsp coconut extract
1 cup Cool Whip lite
1/4 cup (1ounce) chopped almonds
1 (6 ounce) Keebler chocolate-flavored piecrust
1 tablespoon (1/4 ounce) miniature chocolate chips
2 tablespoons flaked coconut

In a medium bowl, combine dry pudding mix and dry milk powder. Add
water.
Mix well, using a wire whisk. Blend in 1/2 tsp. coconut extract and
1/4 cup
cool whip lite. Add almonds. Mix well. Pour mixture into piecrust.
Refrigerate for about 15 minutes. In a small bowl, combine remaining
3/4
cup Cool Whip lite and remaining coconut extract. Spread
mixture
evenly over filling. Sprinkle mini chocolate chips and coconut evenly
over
top. Refrigerate until ready to serve.

Waiting for Joe to get home - it is a challenge making a dinner that can keep and be served any time between 6:30 and 7:30 - the variance in his arrival home times:-).

Tonight we will have hamburger patties mixed with a hot pepper sauce and onions, seasoned curly fries baked in the oven and broccoli.

it is one of my hubby's favs... he says the sauce almost tastes like the Jack Daniel's sauce from TGI Fridays... the recipe originally called for 1 cup honey but I changed it to 1/3 cup honey and 1/3 cup brown sugar....

Ugly Naked Chicken


8 pieces bone-in skinless chicken
garlic powder , to taste
salt , to taste
black pepper , to taste
1/3 cup honey
1/3 cup brown sugar
1/8 cup soy sauce (I use low-sodium)
1/4 cup butter or margarine
1/8 cup Worcestershire sauce
1/8 cup lemon juice

1. Preheat oven to 350 degrees F.

2. Place chicken pieces in a 9x13" casserole sprayed with nonstick cooking spray.

3. Generously sprinkle chicken pieces with garlic powder, salt and pepper to taste on both sides.

4. Bake, uncovered, for 40 minutes.

5. Meanwhile, in a microwaveable bowl, combine honey, soy sauce, butter, Worcestershire sauce, and lemon juice and heat on HIGH power for about 30-45 seconds, or until butter melts and you can easily stir ingredients together- watch carefully so you don't overheat it and end up with a melted butter mess in your microwave.

6. After chicken has baked for the 40 minutes, pour the honey mixture all over the chicken and bake another 10 minutes, flip chicken over, bake another 10 minutes longer or until chicken is cooked all the way through and is tender.

7. Note: If you prefer your chicken"dressed," go ahead and leave the skin on.

Marilyn - That sounds really good, I'm going to try it later this week. I make something similar but use just soy sauce, honey and garlic. I think the worchester and lemon will make it a little more interesting.

Tonight I am having dinner at White Spot (which I despise) with my Mom .. the last two nights I was too exhausted to cook and had just cheesy noodles (yep .. bland .. and bad for me).

Tomorrow I am going to try a chicken fricassee crock pot recipe that my mother in law gave me. Mel loves chicken fricassee. I have never tried it.

This is the basic recipe:
CHICKEN POTSTICKER SOUP
Instructions

32 oz Swanson Chicken Broth

2 bay leaves

2 cups baby spinach, shredded

16 oz package Trader Joe's Chicken Gyoza Potstickers

1-2 teaspoons freshly cracked black pepper

Ingredients

1. In a large stock pot, heat chicken broth and bay leaves 15 minutes on medium heat.

2. Add spinach and allow to wilt 2-3 minutes.

3. Add potstickers and cook an additional 2-3 minutes or until potstickers are soft.

4. Season with black pepper. Remove bay leaves.



These are the modifications i made: it made 6 large servings

* 4 14oz cans of low sodium Chicken broth (not the kind which needs to be diluted)

* I used chopped Napa cabbage instead of spinach - 1 med head - it's the weird wrinkly kind

* along with the cabbage, I added a cup of finely julienned carrots

* I ground the pepper into the broth at the beginning

* Giant Nature's Own brand organic potstickers(pork and veggie) were great

* at the end I stirred in about 1-2 tsp Sesame oil - to taste, a little more would be great, it's easy to get too much quickly

Really yummy, milk free a nice light supper

Mmm Marilyn, the chicken recipe sounds delicious ... will have to try when I get home.

Tonight we went to a Chinese buffet, actually one of the best ones I have been to. The crab legs were very good ... nice and large and yummy!!! The only disappointment was that they had a lovely selection of sushi, which I cannot eat at the moment sad.gif
Tomorrow we are going to Busch Gardens so I imagine our menu will include the usual selection of amusement park fare.

That Naked Chicken sounds yummy Marilyn. We just had chicken the other night though, and I like to alternate...chicken, beef, fish, pork...so I'm going to have to do something else tonight. I'm thinking calzones or a pizza loaf and salad. Maybe finish up some soup I made the other day as well.

Autumnchik...it's important that everyone at least once a year eat amusement park or fair food! I would miss it if I didn't have that to eat once a year! We really try to eat healthy throughout the year, but really and truly...everyone DESERVES greasy fair food once a year! Mmmmmmmmmmm

Actually Marilyn, I think I'm going to make that Naked Chicken Friday night....and serve it naked! blush.gif

Has anyone got a George Foreman grill? I'd like to get one. I don't want one of those little bitty ones...the larger ones I thought were a bit pricey? I'm seeing for most, if not on sale $70.00? Anyone have one and like it?
