not sure what to do for dinner... I don't know if hubby will be home or not...

We're going out for dinner! And I was out for lunch too:-). My former co-workers and I were 'courted' at a special lunch today by the president of the local Tourism board - our former employer Stately Oaks decided to end the docent program and go to MP3 players (a BIG mistake which they will soon realize) - but there are other organizations out there interested in gaining our expertise and services so - a wonderful lunch in a private home with antique dishes, linen napkins and the President himself serving us lunch:-). And we have been approached by other Historic sites wanting us to work for them too! Tours are Us, here we come! Not sure where we will go for dinner yet - possibly our favourite local diner - a mixture of Greek, Italian, Mexican and 'American" (hehehe) food - very unpretentious looking, but great, great food!

Not to take the subject away from dinner, but the other day while doing our weekly grocery shopping, I was in the frozen section browsing some options to have in the freezer to take for lunch, when I don't have left-overs, or don't feel like making a sammich. whistling.gif They had those Stoufer's (sp?) panninis on sale, so I bought a couple. Has anyone had these....I found them to be just great! I usually try to stay away from the frozen lunch foods, they just don't have much taste IMO, and but these things really are surprisingly yummy! I promptly went back to the grocery store and bought several more of these things in different flavors. blush.gif They're quite handy when you don't have anything to take for lunch, but I don't want to spend too much money. Just pop them in the microwave in our office kithenette and 2-3 minutes later I have a nice tasty hot sammie for lunch. smile.gif

We're grilling steak tonight....well, Joel is grilling, I'm gonna be chillin' with something cool in my hand. We just bought a nice gas grill from Lowe's the other day. Went to buy the gas tank and all the accessories - you know...man tools for grilling. I'll probably do a dessert and baked potatoes, possibly a salad. He is sick as a dog, but that won't stop him from grilling tonight!

Hubby likes them a lot. I have tried the Lean Cuisine ones and they weren't too bad either.

Well, I have eaten chicken soup, juice and popsicles today. Have no idea what hubby has eaten, knowing him, probably Cheetos!

Hey Crikey, we're visiting my mom and stepdad in St. Pete next week and stepdad is all excited to take us to a local China Buffet .... not sure as to the food quality, but it makes me laugh at how excited he is about it!

i am thinking of making a butter tart slice for dessert... the only problem is that I don't have raisins... but a couple of recipes i saw online had coconut in it maybe I will do that instead...

Ok, we went to our favourite little diner and I had these great cabbage rolls with mashed potatoes, gravy and fresh steamed broccoli, carrots and green beans. Joe had a chicken pot pie that was big enough for two people. In fact, we both brought home the left overs in doggie bags, so I know what we are having for lunch tomorrow! Yum! Oh, I also had a big salad and Joe had homemade chicken noodle soup before the entrees.

Sirloin steak (med rare) with minced garlic, Fettuccine Alfredo with peas and carrots. Plus about 20 ounces of milk with ice in it. Must be at 33 degrees no more!

It was great the blood ran out of the steak and mix with the pasta. Yum! Yum! Yum!

Oh, forgot to mention - the fortune cookies. Normally it has some little ditty on it and then numbers on the back.

Last night the cookies had the ditty in French on the back. Fortune cookies are now officially bilingual!

Whatever we have for supper will be cooked by my hubby...after taking care of the Princess and her father, I now have the crud they had. Methinks a little pampering is in order for a few days. biggrin.gif

PS: He's going to love this...I *can't* talk. Now that I think about it, my kids are gonna love this tomorrow at school. To put it the way the Princess did last week, regarding her throat: "It feels like hot sausages in my froat."

We are having also chicken wings flavoured by a jerk. I mean, by me. I just threw in some diced potatoes; chili oil from Trader Joe's (GOTTA BUY THAT SH1T PEOPLE, IT'S AWESOME), thyme and basil. The results are still much in limboooooooo (or in the oven).

Next week a prof from my department is teaching me how to cook paneer. I am excited!!!!

I just wanted to add that my hubby said he couldn't even taste the cabbage in the Cabbage beef bake and that the dish almost tasted like lasagna with the cabbage taking place of the noodles...

A&P had some really nice looking Prime Rib roasts on sale so we got one, also having Roasted Asparagus, and Egg Rolls (from Costco, never go to Costco hungry!!..LOL)..also have a Tim Hortons Ice Capp to wash it down...not the best or most creative meal, was going more for quick and easy..LOL..trying to get everything done so I can watch the Oscars tonight..


My husband looked at me like I was on crack when I started taking pics of dinner!..LOL

Making taco soup tonight, last night I cooked goatmeat stew over rice. I have been watching hubby make the stew since he arrived and last night was the first time I made it. I did a good job and he said it was delicious. good.gif good.gif good.gif smile.gif

I'm making saucy chicken and asparagus tonight. Easy peazy recipe if anyone wants it. Asparagus was $1.98 a pound here this week! Amazing!

The original french onion soup recipe I have is also made with chicken stock, and it comes out beautifully. But I have seen lots of recipes that call for beef stock, too, so who's to say which is better. It's all personal taste, really. smile.gif

Isn't it wonderful?! I just love when fruits and vegetables come into season.

On Saturday we had roasted chicken with homemade fries and collard greens and...... SWISS CHALET SAUCE!!!!! laughing.gif I had brought a few packages back with me from Canada. It was sooooooo goooooood.

Yesterday we ate at Pollo Tropical because we were out buying my new rug shampooer. I have not a clue what we'll be having this evening. I have a lot of grocery shopping to do, so I guess I'll see what strikes my fancy while I'm out.

Ahhh groceries. We are again low on all foodstuffs! Husband will stop at the store tonight for a few things, so that will help determine what we are having tonight, although I did take out pork chops last night which we didn't have, because we had the left over chinese food.

I double fry them like they do in England. You first fry them at a medium low temp (325o)to cook their insides and bring out the sugars. Then you take them out before they brown and let them rest on a wire rack until you are ready to eat. Then you raise the temperature a bit to brown them. This makes them crispy on the outside and soft on the inside, without being greasy. And I always salt them as soon as they're done. The salt doesn't stick to them afterwards if you don't.

this is the recipe I found for the fish.... never tried it before....


Breaded Fish


50 g dried breadcrumbs
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
250 ml milk
2 teaspoons salt
675 g cod , fillet cut into 4 pieces
40 g butter or margarine , melted


1. Preheat the oven to 230degrees/450 F/gas 8.
2. Grease a shallow ovenproof baking dish.
3. Combine the breadcrumbs, oregano and cayenne pepper on a plate and blend together.
4. Mix the milk with the salt in a bowl, stirring well to dissolve the salt.
5. Dip the pieces of cod fillet in the milk, then transfer to the plate and coat with the bread-crumb mixture.
6. Arrange the coated fish in the prepared baking dish, in a single layer.
7. Drizzle the melted butter or margarine over the fish.
8. Bake in the preheated oven for 10-15 minutes, until the fish flakes easily when tested with a fork.

and this is the recipe I found for the wedges... haven't tried this one before either...


Easy Baked Potato Wedges


4 large potatoes
1/4 cup cooking oil
1 tablespoon parmesan cheese
1 teaspoon salt
1 tablespoon paprika
1/2 teaspoon pepper
1/2 teaspoon garlic powder


1. Wash potatoes, cut into wedges.
2. Place potatoes skin down in a baking dish.
3.Mix the next 6 ingredients together and brush onto potatoes.
4. Bake at 350 for 1 hour.

this recipe is pretty good...

Tender Italian Chicken


6-8 boneless chicken thighs
1 onion, chopped
1/2 cup tomato sauce
1/2 cup Italian dressing
1 teaspoon oregano
1 zucchini, sliced (optional)
1/2 grated Parmesan style cheese

Arrange thighs on top of onion in a baking dish. Combine the tomato sauce,dressing and oregano and pour over chicken. cook in oven for about 20 minutes. Add zucchini(if using) and cook chicken until done. Stir in cheese and serve over pasta....

I make a marinade that is pretty good, leave the chicken in the marinade for a while (overnight is best) and bake in the oven. I usally do this with wings, but thigs is good too.

Olive oil
dijon mustard (or any kind is good, as long as its not the super yellow american mustard)
lemon juice,
salt/pepper

I don't know measurements, since I tend to cook by sight, eyballing what looks to be enough, but basically enough ingredients to coat chicken well (work it w/ hands to make sure each chicken piece is well covered w/ marinade). I usually bake in the oven, but this weekend I suggested my mom use this marinade for the chicken we cooked on the grill and it was delish! smile.gif

The recipe I'm making tonight calls for chicken thighs. And aspargus. You could use any vegetable you'd like though...green beans, baby carrots...etc.

Saucy Chicken and Asparagus

1 pound fresh asparagus spears halved
4 boneless skinless chicken breasts (or whatever you have...skinned or boned...who cares!)
2 tbsp. vegetable oil
1/2 tsp. salt
1/4 tsp. pepper
1 can condensed cream of chicken soup, undiluted
1 tsp. lemon juice
1/2 cup mayonnaise
1/2 tsp. curry powder (I like to use more)
1 cup shredded Cheddar Cheese

Place the asparagus in a greased 9 inch square baking dish. In a skillet over medium heat, brown chicken in oil on both sides. Season with salt and pepper. Arrange chicken over asparagus. In a bowl, mix soup, mayonnaise, lemon juice and curry powder; pour over chicken. Cover and bake at 375 for 50 minutes or chicken is tender. Sprinkle with cheese, let stand for 5 min.

tonight I am going to make deviled chicken with some rice and maybe some steamed corn....


Deviled Chicken

* 1/2 cup ketchup
* 1/4 cup Worcestershire sauce
* 2 tablespoons brown sugar
* 1 tablespoon Dijon mustard
* 1 tablespoon water
* 2 tablespoons oil
* 1 (appr. 3 lbs) broiler chicken, cut up, or equivalent chicken parts

PREPARATION:
In a small bowl, combine ketchup, Worcestershire sauce, brown sugar, mustard and water; stir to blend well. Heat oil in a large skillet; add chicken and brown well on both sides, about 15 minutes. Remove chicken to a shallow baking pan.

Pour off fat in skillet; add ketchup sauce mixture, stirring to loosen browned particles in bottom of pan. Pour sauce over the chicken. Cover with foil and bake in preheated 350° oven for 30 minutes. Remove foil; continue to bake until chicken is tender, about 10 to 15 minutes longer.

Both recipes look delicious, but since we are low on foodstuffs I'm going to use that recipe Marilyn (because we actually have that stuff laughing.gif) , with our pork chops, will have some rice with it as well good.gif

* 1 (appr. 3 lbs) broiler chicken, cut up, or equivalent chicken parts

PREPARATION:
In a small bowl, combine ketchup, Worcestershire sauce, brown sugar, mustard and water; stir to blend well. Heat oil in a large skillet; add chicken and brown well on both sides, about 15 minutes. Remove chicken to a shallow baking pan.

Pour off fat in skillet; add ketchup sauce mixture, stirring to loosen browned particles in bottom of pan. Pour sauce over the chicken. Cover with foil and bake in preheated 350° oven for 30 minutes. Remove foil; continue to bake until chicken is tender, about 10 to 15 minutes longer.



Both recipes look delicious, but since we are low on foodstuffs I'm going to use that recipe Marilyn (because we actually have that stuff laughing.gif) , with our pork chops, will have some rice with it as well good.gif

Ooh Carla and Marilyn, both recipes look really good. I will have to try them when I am feeling better.

I am living dangerously tonight and having vegetable soup instead of chicken noodle. Woohoo!

Hubby will probably have hot dogs again.

I never have Dijon mustard because hubby doesn't like it so I just use regular mustard....

Roasted Red Pepper and Tomato soup with big crusty rolls and butter - and maybe a salad:-).

The soup is actually made by Pacific Natural Foods. We gt it at Costco - and it is yummy!
