OK, I read through this whole thread hoping to find out what cock-a-leekie pie is...could someone enlighten me? biggrin.gif

Beef stroganoff sounds yummy...gotta look back in the other OT (sigh) and find Marilyn's recipe. I'm trying to cut and paste all these yummy recipes in a word doc so I don't have to hunt them down. smile.gif

Leekie = leeks

Basically a chicken pot pie made with leeks.

I think this is the one....

Slow Cooker Beef Stroganoff

INGREDIENTS:

* 1 pound cubed beef stew meat
* 1 (10.75 ounce) can condensed golden mushroom soup (I used just plain old cream of mushroom soup)
* 1/2 cup chopped onion
* 1 tablespoon Worcestershire sauce
* 1/4 cup water
* 1 or 2 tsps of soy sauce (this wasn't in the recipe but I added it)
* 1/2 to 1 garlic clove, chopped (this also wasn't in the recipe but I added it)
* 4 ounces cream cheese

DIRECTIONS:

1. In a slow cooker, combine the meat, soup, onion, Worcestershire sauce and water.
2. Cook on Low setting for 8 hours, or on High setting for about 5 hours. Stir in cream cheese just before serving. It might be kind of runny but once you add the cream cheese it thickens up a bit ...

*you might want to double the recipe good.gif YUM!!! YUM!!!!

I believe she also mentioned that she browned the beef a bit first.

yeah, or whatever noodles you have... you could also serve it with rice...

it is sooo yummy and the beef gets nice and tender good.gif

this is another good recipe for the crock pot... this is one of the few recipes that my hubby even commented on the next day.... good.gif

Crock-Pot Sweet and Sour Pork

* 1 1/2 to 2 pounds pork cubes
* 1 tablespoon cooking oil
* 1 cans (15 ounces) pineapple tidbits, drained but save juice...
* 1 small sweet green bell pepper, chopped
* 1/2 cup water
* 1/3 cup brown sugar
* 2 tablespoons ketchup
* 1 tablespoon quick-cooking tapioca *
* 3 teaspoons soy sauce
* 1/2 teaspoon dry mustard

PREPARATION:
In skillet, brown pork cubes on both sides in hot oil. Drain off fat and transfer pork to a 3 1/2 to 5-quart crock-pot. In a bowl, combine pineapple juice, a few of the pineapple chunks, green pepper, water, brown sugar, ketchup, tapioca, soy sauce and dry mustard.

Pour over pork cubes. Cover and cook on LOW for 8 to 10 hours (or HIGH 4 to 5 hours). Towards the end of the cooking time add as much or as little of the leftover pineapple chunks as you want. Serve with hot cooked rice.

Serves 4-6.

* if you don't have tapioca, about an hour or so before it is done take a tablespoon or two of cornstarch and mix it with a bit of cold water and then stir into crock-pot...

LOVE my crockpot too! just made Cabbage Rolls in it last week...mmmm

gonna try that stroganoff recipe next week!

Our lamb turned out nummy too! In fact, I have enough left over for my dinner this evening. Hubby is working late so he will just have soup or a smoothie or something. So I have the night off! kicking.gif

My cock-a-leekie pie was wonderful. I just make the soup recipe, add carrots as well. Lots of dill...mmmm Then I thickened it and topped it with a puff pastry top. I have NO idea what I'm making tonight. Maybe this should be a leftover night. I have jambalya left over, some gnocci, some cock-a-leekie , maybe some homemade chive and cheddar cornbread with it?

I also think that Crock-Pot's rule! Especially for things you can put together in the morning and come home to at night. I probably don't use it like I should now that I'm not working at all, and have all day to cook. That pork recipe looks very good though Marilyn!

Ground beef vegetable soup and cornbread muffins. Been pondering on this all day and with it being so friggin cold outside (not to mention my honey is working tonight) this sounds perfect. It's also good the next day. biggrin.gif

Yup, that's the one. I used regular cream of mushroom soup too. Didn't have soy sauce, but I added a bit extra of Worcestershire sauce.

Tonight's dinner was: salt and vinegar chips for hubby and chicken noodle soup for me (hubby "cooked" smile.gif According to the doctor, I have a virus (bizarre only symptom is extreme dizziness) ... so I have been in bed all day.

I have no clue what I'm making tonight. I may pick up a pizza. J and I are leaving early in the morning for our drive down to Ft Lauderdale to pick up my sister and BIL from their ship. Then we're staying a few days in Delray Beach before heading back home. Which means he'll be working late to tie up any loose ends at work so the place doesn't fall apart while he's gone. wink.gif Which means I have no idea when he'll be home. If he comes home late he doesn't like anything heavy, so I'm not about to make something he's not going to eat. Plus I don't want a big mess to clean up because I've got to pack and clean the house so it's nice when we come back and I don't want to stay up late because we have to get up early and we have a bit of a drive so I need to put a small cooler together and..... I don't think the non-cooking spouses have any idea of the thought process which goes into thinking out and preparing meals. tongue.gif

ANYHooooo..... they have these excellent new frozen pizzas (can't recall the name of them) which come on a tray which goes straight in the oven..... and the pizza's already sliced. The tray makes the pie all nice and crispy but soft.... just like a real pizza. Yummy in my tummy.

You should! I mean co-op does it here, they used to charge $8 per delivery, I believe it is almost double that now - but I am sure you could charge more!

Hey, that's called "boiled dinner" on the east coast of Canada! I made it two weeks ago! LOL. The stock makes FANTASTIC ham and pea soup. And you can chop the leftovers and throw that in too. But the American corned beef is different than the Canadian version, so it doesn't taste quite the same.

hmm, I am thinking of getting hubby to pick up a $5 Little Ceasers pizza on his way home from school today...

but then I am thinking he could buy a gallon of milk and a dozen eggs for about the same and we could have scrambled eggs and hash browns for dinner unsure.gif ... and we do need more milk....

I just had a Canadian Cheese Whiz and mayonnaise sandwich as a snack while waiting for hubby to come home. Then we'll have pizza. I picked up a Freschetta Pizza Amoré for when he gets home later. Yum. kicking.gif

We bought a $5 rotisserie chicken from the supermarket, I made some potatoes, and we'll have a store bought cheesecake for dessert. Yum....cheesecake....mmmmmmmmmmm!

Mmmmmm. I LOVE cheesecake. Especially homemade baked ones. They make a really great blueberry or cherry cheesecake crumble here in our Publix supermarkets. But I still like homemade.

but then I am thinking he could buy a gallon of milk and a dozen eggs for about the same and we could have scrambled eggs and hash browns for dinner unsure.gif ... and we do need more milk....



We LOVE having "breakfast" for dinner... at least once a week I clear out whatever veggies I have left in the fridge and saute them all together with some onion and garlic and make omeletts(sp) for dinner..yummy..

tonight I think were having tacos...have some ground beef that needs to be used... also marinating some chicken in Teriyaki sauce for Sundays dinner.. found this marinade on allrecipes (you can also use Cinnamon in place of ginger, we prefer ginger) when we first got married and have been using it for 6 years..we love it for chicken, pork and beef..

Teriyaki Marinade
1/3 cup brown sugar
1/3 cup soy sauce
1/3 cup water
1 large garlic clove minced
1 teaspoon ginger ( I use powdered, not sure how much if you choose to use fresh)

put meat in a ziploc bag or bowl pour marinade over meat...you can marinate for a few hours but I always marinate overnight...mmmm!
