Well, we ended up having pork cutlets, cauliflower and hollandaise, and macaroni with tomatoes, onions, and garlic last night. Tonight we are having bean and bacon soup. I am on a clean-up-all-my-cupboards-and-freezer-and-fridge kick, so I'm trying to make only meals where I have ingredients that need to be used. I also made Chubby Mommies for dessert. It's one of the recipes from the
Your Recipe Book collection that my family and friends put together for my wedding. My cousin, Jacqueline, contributed it and her note says: "These can make anybody chubby if you eat too many... not just mommies."

It's one of the easiest desserts I've ever made! And boy are they yummy. Here's the recipe:
CHUBBY MOMMIES
1/2 cup white sugar
1/2 cup corn syrup
1/2 cup peanut butter
4 cups corn flakes
1 pkg chocolate chips
2 tbsp butter
Heat sugar and corn syrup in large pot until on verge of boiling. Turn off heat and mix in peanut butter and cornflakes. Press into 8x8 inch pan. Melt chocolate chips with butter and spread over squares. Cool in fridge for one hour before cutting.

Many thanks to MarilynP for the Tamale pie recipe....turned out beautifully. I too did not find the Fiesta tomato soup so I used reg Campbell's tomato (yes, there's HFCS in it too..cripes) and used 3/4 pkg of taco spice seasoning on the beef (had low sodium on hand). I sprinkled a little shredded cheddar on top of the beef mixture, prior to pouring the cornbread batter on.
Also broiled a little cheddar on the finished product. Was a hit with all and leftovers were taken for lunch. Think it would freeze well too. With salad, it made 4 servings. Soooo easy, 20 min prep and 20 min baking, 1 pot, 1 pan and a cutting board

We didn't have the steak last night, neither one of us felt good. So had chicken nuggets and potatoes for dinner instead.

Thanks for the review of the Tamale Pie, Udella. I think I'm going to make it.... but not today. It reminds me of the Fajita Pie my cousin makes. Hmmmm. I think I'll ask her for the recipe.

I think it the recipe called for fiesta chili beef soup... I always just use Beef vegetable soup and then add some chili powder...

Evil Crikey! Those sound decadently delicious. And now that I passed my gestational diabetes test, might as well load my body up with sugar!!! LOL
I think we are having leftover Chinese for dinner tonight, chicken with broccoli and hot and sour soup. That is, if hubby hasn't eaten it all by the time I get home.

I think I have had that too... yum yum!!! most of the MArie Callendar frozen dinners are really good... we ate a lot of those when I was pregnant and didn't feel like cooking

i am going to see if I can talk hubby into getting these yummy subs at the deli down the street....

Because I am a lazy ### tonight I decided to convince my husband that we are in dire need of chinese food tonight.
So its general tso chicken for us.
11 points on the old weight watchers scale.

Wow! That's a great deal! Wish we had those sales. I've bought the Marie Callendar frozen lasagnas too. They're surprisingly good.

(Surprising because I don't expect prepared frozen stuff to be good.... just convenient.)

My previous indoor grill (a George foreman thingy, but it was better) broke awhile back so I purchased a Breville "Indoor BBQ"

I bought it at Bed Bath & Beyond, so it was on sale, Plus I had 20% Rebate card AND they had a $30 mail in rebate! So was a very good deal!! Only downside is that the grill is hard to clean!! Yes the top/bottom do easily snap out, and they can be put in dishwasher , but since the indentations of the grill are soo close, doesn't always come out clean, and a bit hard to hand wash.As wel lit has no timer, but thats minor, as I just use the one on the oven or microwave! But as stated earlier, cooks extremely quick and well made!
So, I'm making pork chops on the grill, and wil microwave a potato!! Better half doesn't return till next Friday, so just have to worry about myself!! lol

Hey that does look good flames, I have been thinking about purchasing one of those.
On another note we decided to buy an electric frying pan a couple of months ago - due to the limitations of the very old stove, wanted more uniform heating - anyhoo, that lasted about 5 weeks, started sticking, ended up throwing it in the garbage, not a cheap cheap one either, think it was about $50.

I think it is far superior to the George Foreman models! They just dont feel like they are well made. I'm glad I purchased it and would recommend it! As well it does get a bit smoky, but no different that any other indoor grill. And after all my rebates, was just slightly more than the Foreman Grill!

I decided this thread needs some pictures, so I took a picture of dinner last night. I don't think it turned out all that well, but I took the picture so I am posting it!
The rib eye was good because of the spices, I bought the steaks in a pack of 6 from m n m meats and they were all disappointing in flavor - last ones I bought were good.

I thought of pizza, but that didn't turn me on. The chinese food sux the bigween here, so that's out. Then I thought that maybe I could get him to pick something up from the local Mexican restaurant on his way home because he likes that. I am not a big fan of Mexican food but I am just
starting to like it a teeny weeny bit.... as long as I don't get given big piles of mushy things. And then I thought well maybe some chicken strips and shrimp rolls, cause they're pretty easy, but more like snacks than dinner food so....

hubby has been clamouring to go to our favourite Chinese buffet for awhile now.. maybe I will give in and say we can go tonight... I know we shouldn't spend money and I have plenty of food at home but I just don't feel like cooking.. besides I was busy with other stuff today and I didn't take anything out....

I have no clue either, I should be cooking chicken breasts that I defrosted, but I had a hell day at work and really have no energy so ........ a burger is sounding good to me. The only problem is, it is snowing and apparently the roads suck (haven't left my office yet), so the dining out options in our small town are so limited.

Ravioli LasagnaBasically layered ravioli (frozen and i thaw it overnight) - no need to boil them. sprinkled cheese (I use mozzarella) sauce of choice (i use a favourite marinara) and bake.
I cover with foil for the first half and I have to cook it for about 45- 1 hr in order to get it really heated through. Leftovers freeze well and teenagers loved it. I've thought of layering some grilled zucchini or mushrooms in it too, think it would be good!

http://www.recipezaar.com/40467Ohmygosh, I had totally forgotten about that. I used to make individual servings with large raviolis. They were great for keeping the ravioli and sauce separate from the caesar salad and garlic bread. You know how I hate having my food touching.

Tonight we ended up having butter chicken and basmati rice. It was yummy.

We ended up having frozen pizza last night. I had gone to the store and picked up all the ingredients to make burritos, got home, realized how sick I felt and said to hubby, please make yourself something, I am going to bed. ARGH! I hate being sick, especially when every OTC medicine I have in the house says if you are pregnant, consult your doc.

You know, it was only like last month that pizza hut even offered online ordering here - I mean really, we must be short of web design companies or something!
We ended up having.....wait for it.....grilled cheese, then a few hours later we shared some noodles. I REALLY wanted chinese food, even had the menu out, but since neither of us are feeling that great I knew it was a bad idea.
Which begs the question, what is up with the chinese food in the states? I have heard you all talk about it and have experienced this myself in Spokane. Down there visiting my Aunt and we all go out and i'm like - what is this? Lived in SE Asia, so i'm familiar with non-westernized asian food, but my question is, where do these cooks come from and who said they could cook anyhoo?? AND why do we seem to have the impression that chinese food is good in Canada but not in the U.S. - do all good chinese cooks head north?

I was thinking the exact thing myself -- sounds like a good plan for tomorrow's lunch
