I love to shop when I don't have to stick to a budget....

right now I am making French toast, sausages, and hash brown potato things...

I really outdid myself today. Basmati rice with cumin & garam masala (Bren's favourite e-v-e-r); black-eyed peas with bacon and a sh1tload of chili, corn on the cob; and currently have gravy-cheesy-potatoes in the oven. Once that's done, in go the whole wheat blueberry muffins.

We went out to dinner to celebrate our anniversary (it was on V Day and we had stayed in then). Hubby and I shared coconut shrimp and fried calamari for appetizers, he had salmon with a spinach stuffing and I had veal and shrimp. For dessert, he had creme brulee and I had chocolate bread pudding. Was VERY yummy smile.gif It was definitely worth it, even though the roads were horribly icy and we slid into a snowbank on the way home (car is fine, we're fine, just a little freaked out, especially since, when we started spinning, I was praying we wouldn't hit anything with enough impact to set off the airbag. Thankfully, we didn't. We drove about 10 miles an hour after that, saw where at least 4 others had slid off the road). BUT ..... the food was STILL worth it smile.gif

Oh, I am SO glad you guys are safe. That sounds like an AMAZING dinner. Creme brulee is my favourite. In fact, I almost made it this evening. But I wanted to get rid of my bananas so we had a kind of chocolate banana pudding with custard and raspberries. Happy anniversary, Autumn!!!!!

BTW, thanks for reaffirming that my husband did eat a really gross sandwich! He continues to claim it was delicious (blech!).

Yes, it was truly a gross sandwich. But I'm not surprised that he thinks it was delicious. Which, in fact, turns out to be good news for you. You can feed him crap from now on and he should sing your praises. If he does not, let him go back to self-made crap sandwiches. That should straighten him up.

The pudding was actually surprisingly delicious. There was no recipe but this is what I did. I wanted to get rid of ingredients I already had in the cupboard so I took some banana arrowroot cookies (brought from Canada) spread some chocolate pudding on top, sliced bananas, then some banana pudding on top of that, then some more banana arrowroot cookies, then some banana pudding, then some raspberries, then some chocolate pudding, then some sliced bananas, then some custard poured over top. I would have used whipped cream but I didn't have any. But I think the custard worked just as well.

My Husband can and does cook. He actually likes some weird things, well things - yesterday for lunch I made him the ever popular canned spaghetti grilled sandwiches.

He can cook anything really.

IR5 wanted a PBJ sandwich - he had steak = he lives with Mumsie and Pops good.gif

I am eating leftovers from dinner last night right now.... MMMMMMMM .... mashed potatoes, veggies, shrimp and veal smile.gif

I put a pork roast in the slow cooker this morning, so dinner tonight will be bbq pulled pork sandwiches, baked beans, potato salad and something for a veggie ... not sure exactly, just whatever I pull from the freezer.

Making homemade spaghetti sauce with meat and vegetables - then, spaghetti, of course with garlic bread and a salad. zucchini, yellow squash, onions, celery, tomatoes, mushrooms and eggplant in the sauce.

Mom used to collect those things every year, must have 20 years' worth. The puddings were always pretty good.

ok here is the recipe.. had to hunt it down because I knew I had it here somewhere... didn't feel like typing it all out again..

Crock-Pot Sweet and Sour Pork


* 1 1/2 to 2 pounds pork cubes
* 1 tablespoon cooking oil
* 1 cans (15 ounces) pineapple tidbits, drained but save juice...
* 1 small sweet green bell pepper, chopped
* 1/2 cup water
* 1/3 cup brown sugar
* 2 tablespoons ketchup
* 1 tablespoon quick-cooking tapioca *
* 3 teaspoons soy sauce
* 1/2 teaspoon dry mustard

PREPARATION:
In skillet, brown pork cubes on both sides in hot oil. Drain off fat and transfer pork to a 3 1/2 to 5-quart crock-pot. In a bowl, combine pineapple juice, a few of the pineapple chunks, green pepper, water, brown sugar, ketchup, tapioca, soy sauce and dry mustard.

Pour over pork cubes. Cover and cook on LOW for 8 to 10 hours (or HIGH 4 to 5 hours). Towards the end of the cooking time add as much or as little of the leftover pineapple chunks as you want. Serve with hot cooked rice.

Serves 4-6.

* if you don't have tapioca, about an hour or so before it is done take a tablespoon or two of cornstarch and mix it with a bit of cold water and then stir into crock-pot...

Ugh. I was worried I'd get the flu this year because I didn't get my annual flu shot. So far so good, though. *knocks on wood* I used to catch everything going where I used to work. I worked in an enclosed office and a lot of people would show up for work, even though they were sick as dogs. It used to drive me bonkers, and I'd get really ticked. Especially for one of my co-worker friends whose husband was going through cancer treatment, her daughter was pregnant, and her mother was very sick in a nursing home. She could not afford to get sick because of her husband's weakened immune system, and the nursing home would not let any visitors into the home if they showed the slightest sign of being sick. Poor thing.

thanks guys. smile.gif I felt ok last night, but I ended up sleeping in this morning until almost 11 am, which never happens! I feel better today, just stuffy, so methinks it isn't the flu. I was worried because people at work have been getting super sick left right and centre and I really didn't want to be sick for a week plus!

Tonight's supper is turkey sausages -- we have never tried them before.

we had lobster chowder tonite, and tomorrow me thinks it will be hamburgers and french fries.. of course hubby will be out on the grill, grilling hamburgers.. mmmmm

good.gif on the turkey sausages. They don't have the "snap" you get when you bite into a Johnsonville italian sausage, but they were very tasty indeed. We are looking for healthier alternatives and we think we've found one. smile.gif

Hmmm. I've never had turkey sausages. Think I might give them a try now.

We had our burgers and fries last night, and I've got a couple of leftovers. I think I might turn them into salisbury steak with mashed potatoes, peas, and carrots for tonight.

We had pork chops, rice, mayonnaise popovers, gravy, and a saucer of olive oil, minced garlic, and parmesan cheese for dipping the bread in. Comfort food...mmmmmmm!

Tonight...not sure. Something that will entice the Princess to eat since she's sick today (sore throat, cough, headache, fever).

Mel is teaching tonight so it is just me and my stepson. I think I might take him out to eat somewhere. Maybe Applebees or Chili's. Somewhere close.

We will be having leftovers from last night ... pulled pork sandwiches, baked beans, potato salad and sweet and sour red cabbage. Everything was yummy except I didn't have enough bbq sauce!!! I had cooked the pork in the slow cooker in bbq sauce and then, when it was done, shredded it and added a little more sauce ... thought I had another bottle of sauce in the cupboard, but sadly, not the case sad.gif

Everyone's meals sound yummy ..... I want to come over!!!

I think I am going to make this ground beef thing that you bake with cornbread on top.... I just need eggs for the cornbread mix I have... hubby likes this one too...

Tamale Pie

1 pound ground beef
1 can (11 1/4 ounce) Campbells condensed Fiesta Chili Beef Soup **
1/2 cup water
1/2 cup chunky salsa
1/2 cup frozen whole kernel corn
1 pkg (8 1/2 ounces) corn muffin mix


Preheat oven to 400 degrees.

Cook beef until browned and pour off fat.

Add soup, water, salsa and corn and mix together. Spoon beef mixture into a 2 quart shallow baking dish.

Prepare corn muffin mix according to package directions. Pour over beef mixture. Bake for about 20 minutes or until golden.

** I never can find the Fiesta Chili beef soup so I just use vegetable beef soup and add some spices like chili powder...

Hmmm. That sounds interesting. I may give that a try sometime. I betcha I can find the fiesta chili beef soup here! There is a HUGE Mexican population in Florida, so there's never a hard time finding ANYTHING Mexican. I get spoken to a lot in Spanish too. I guess I look kind of multi-national that way. smile.gif

your welcome... good.gif i usually serve it with some type of rice....

just make sure and not to use a sweet cornbread mix... I did once and it was not very good.... I like to use the Jiffy cornbread mix.... there is another one I like to but I can't think of the name right now....

ok, I have the beef part all ready.. now I just need some eggs so I can make the corn bread... i think the other mix I like doesn't require eggs.. need to get that one next time....

and I think I am going to serve it with a taco rice mix I have.... I would serve it with white rice but we had taht yesterday already....

Mmmmmm....I went to work my afterschool job this afternoon and I come home to the house smelling like steak! Baked taters in the oven, Kraft Dinner (not the Cdn kind though sad.gif ) and the remnants of Joel's valentines/just because surprise...Red Velvet Cake.

We are having steak, potatoes and - something.

Husband went to Schwartz's Deli when he was in Montreal, for a smoked meat sandwich - that was very good btw, he bought a bottle of their beef spice - so that will go on the rib eye!

I was going to make chili sgetti for tomorrow because it always taste better the next day but I wanted to make that cabbage beef thing on Friday, (i need to before the cabbage goes bad) so I didn't want to have beef two nights in a row...

I will make chili sgetti sometime next week then...

Husband went to Schwartz's Deli when he was in Montreal, for a smoked meat sandwich - that was very good btw, he bought a bottle of their beef spice - so that will go on the rib eye!






Crap. I was thinking about a smoked meat sandwich earlier. Can't get them, or even make them here. *grumble grumble*
