Struck the mother load last night!! Live in a Condo and the lady downstairs is a great neighbor! Walks my dog if I'm away for too long, etc etc! She knows my wife is away, and last night due the icey roads, her company cancelled! So knock knock on my door, there she is standing with a plate of food for me!! Meatloaf and potatoes! yummy!!

One of my furbabies is sick so weve been so busy with her the last 3 days that last night we just ordered Chinese..(my husband is sooo gonna miss "Canadian Chinese")..I have a couple favorite places in Las Vegas that Ive taken him too but it just doesnt taste the same to him...He loves my homemade Egg Foo Young and Chow Mein so I guess when he gets a craving, I will have to make it myself..LOL
today starting a pot of spaghetti sauce..will cook it all night tonight and most of tomorrow and use it for tomorrows dinner..

forgot to say that Im also making up a batch of "Cracker Candy" to take to work... have been off since Sunday to be home with (and go back and forth to the vet) with my furbaby..so taking some goodies tomorrow to work to say thanks for being so understanding and concerned while Ive been off
Im sure you all know what Cracker Candy is, if not heres the recipe...its always a hit and no one ever guesses its made of saltine crackers..
Cracker Candy
saltine crackers (38 to 44) depends on size of cookie sheet
2 sticks of butter (1 cup)
1/2 cup of sugar
1 12oz bag chocolate chips
preheat oven to 350...lay tin foil on cookie sheet...place crackers on cookie sheet ,enough to cover the entire sheet...boil sugar and butter together for 3 minutes...pour over crackers....put in oven for 10 minutes....pour bag of chocolate chips on crackers...as it melts spread chips over crackers...add nuts if desired...refrigerate for 2 to 3 hours, break into pieces.

I totally miss CDN "Chinese" food.. it doesn't even LOOK the same to me..
I ordered spareribs the other night and they had a yuky red sauce on them.. I like me ribs with a chocolate brown colored sauce.. I'm a visual eater, so it was pretty hard for me to eat what didn't LOOK like spareribs to me.

We had left over chicken, artichoke hearts with olive oil, garlic and black pepper, and egg noodles with powdered cheddar cheese and butter (I live somewhat close to the Cabot cheese factory and just took my dad there the other day for a tour. While I was there, I picked up this great powdered cheese ... looks like parmesan but it is cheddar. It is especially yummy on popcorn!)

I concocted something out of leftovers, and its quite good. *pats herself on the back*

I had leftover rotisserie chicken (mainly the breast) and rice. I took the meat off the bones and chopped it in cubes, chopped up some parsley and added the rice. I then mixed in a can of cream of chicken soup and popped it in the oven on 375 for 15 minutes or so....just long enough for the ingredients to mingle and get hot. I made a salad and that's dinner!

We had leftovers from last night -- I was sneaky yesterday and put a jar of mild salsa in with the spaghetti sauce to get some more veggies/nutrition in the meal -- my hubby is notorious for not eating veggies. he loved the dish and is still raving about it tonight. I win!

have been cooking spaghetti sauce since yesterday so tonight will be Pork Parmesan (same as chicken parm but dont have any chicken breasts) with spaghetti, Bruschetta, salad, and I have some bananas that are turning so think I will make some mini banana bread loaves (love my mini loaf pan) with walnuts and macadamia nuts in them.. not so much a romantic meal but all of my husbands favorite things..

Okay. I think I'm going to make lamb chops with a mint gremolata on a bed of grains with roasted carrots and green beans. And chocolate dipped strawberries for dessert. And mojitos for an apéritif. Yikes. I guess I'd better get started.

Tonight, we are staying in, we will go out on the weekend to celebrate combo V Day and anniversary. I'm making steak, baked potatoes, salad and maybe green beans.

I am sick...so Valentines sucks...My husband took meat out for Meatloaf so i think we're having that and salad and roasted potatoes...still yummy. Hopefully I can stomach it or even taste it

Change in menu: the steak had not thawed in time, so I ran to the grocery store to pick something else up. I was seduced by the lovely lovely (and oh so pricy) lobsters ... and the best part is, the store steams them for you! So we had that and a tossed salad and strawberries with chocolate dip for dessert.

Was AWESOME. I used coconut rum for the mojitos and they were perfection. (All natural ingredients... no premix stuff. Chose mojitos because it pairs well with the mint and lemon I used to prepare the lamb.) Instead of green beans we had peas, because they go perfectly with lamb. I sprinkled some of the gremolata on the peas and they were perfect also. Candles. Wine. Just about to log off and eat chocolate dipped strawberries now. *sigh* Had a wonderful night.

I ended up making twice baked potatoes, steak, salad and beans. Steak is my Husband's favorite - so there you go. We were going to go out for dinner tonight but I think we may wait and just go out to eat tomorrow since we are going to the Mall shopping anyway.
Tonight it will be something easy, not sure what yet, how about some grilled cheese!

Grilled cheese is awesome anytime! I have to laugh, though.... every time I think of grilled cheese I think of my daughter. She loves it too. Home made chicken noodle soup, salad and crusty bread:-). I love getting the roast chickens from Kroeger - have roast chicken for two nights, some sandwiches for lunch and then make soup with the remainders of the carcass. Yum!

Yum. Home made soup. Unfortunately, we do not have a Kroeger's... thought it does sound good. I've tried the roasted chicken at the various stores here, but they're substandard so I just make my own.
Tonight we had home-made french fries, onion rings, chicken strips (with home-made dipping sauces), and salad. I had initially intended not to put too much effort into dinner but... oh well. I'm a sucker for good food rather than quick food.

1 pound (or less if I have it) pork sausage, breaking up like you would for hamburger. (I use a spicy sausage)
Drain and wipe out pan.
Fry up in a little olive oil (or whatever the heck you have!) :
3 medium sized zuchinni (or more if you'd like) sliced thin (like for scalloped potatoes)
1 small onion cut up
1/2 tsp. basil
1/2 tsp. oregeno
salt and pepper to taste
Prepare 9x13 inch pan. Roll out one can of Pillsbury Crescent Rolls, pinching together seams. Line the pan, and up sides a little. Spread a tablespoon of Djon (I've used regular mustard) on top of the crescents in pan.
Pull zuchinni mixture on top of crescents. Scatter cooked sausage on top of zuchinni mixture. Shake 1 1/2 cup of shredded cheese over top. (I use Sharp Cheddar).
Pour 3 beaten eggs over top.
Bake in 350 degree oven for about 18-20 min.
Cut in large, or small squares and enjoy!

Sushi is good stuff

although I only like sushi that has no fish in it.

well, I was going to make that cabbage beef bake thing but we got home really late so I just fried up the ground beef with some onion and green pepper added some spices and served it with corn tortillas, cheese, lettuce and salsa... tacos... they were yummy!!

We are having leftovers from last night's sweet & sour chicken that I did in the crock pot while we were out at the Chocolate Festival yesterday!! It was WONDERFUL to come home to a meal all ready for us to eat!

I haven't a clue what's for dinner. We have to do some serious grocery shopping when Joel gets home from work. AUGH. Sometimes grocery shopping is more of a chore than a pleasure. Maybe it's cos I'm tired today and have no interest in pushing a buggy up and down aisles and aisles....but it's one of those things that's gotta be done.
We do have leftover Italian from last night...went to a local Italian restaurant last night...mmmm!
