Its Friday so its hot dogs and fresh cut fries. Mike and Ethan seem to like those a lot. So much so that whenever Ethan is not watching his plate, Mike steals his fries and vice versa.

I put a corned beef brisket in the crockpot this morning along with potatoes and carrots and let it simmer all day. The meat was so tender it sort of fell apart when I cut it. I served it all with sauerkraut and a Caesar salad. Now, I'm stuffed - and there's lots of left overs for lunch tomorrow.

I came home from work and hubby was grilling turkey burgers.. we had them with fries..
i am sure going to miss having him around when he goes back to working 10 to 12 hour days

I made pork chops, green and yellow beans, and a package mix of noodles that I got over the border in Quebec ... they were singapore curry noodles. Yummy!

Last night I ended up making homemade chicken noodle soup and tuna sandwiches.
Tonight we are going out, we have a show to go to at 7. We will probably go out somewhere after that.

We had some friends over for Games Night and just made appetizers. I made the buffalo chicken dip and also lil smokies in bbq sauce (in the crockpot). Friends brought cheese and pepperoni and crackers and a veggie tray. Oh yeah, I also made chocolate chip cookies. I am stuffed!!!
And .... we played Cranium and hubby and I kicked azz!!!!

we're having a little island flavor tonight.
chicken and shrimp garden rolls, with all the herbs and vegetables bought at the farmers market today. Dipping sauce is some guacamole and mac nut sauce we bought there too from the nicest woman. She makes no sugar, no sodium sauces - with all the ingredients from her backyard. Her company is called Broke the Mouth. And a little coconut rice to go with it.

She thought we were tourists and kept saying - don't worry about a fridge in your cabin on the cruise ship, these don't need the fridge they're very stable. She blushed when we told her that we lived in Pahoa. We probably should have said nothing.
I've been totally bombing in the kitchen since I've gotten here. I hope things taste better tonight.

I made beignets last night and they were yummy!

Tonight's dinner will be a nod to Canadian Thanksgiving but modified enough where I don't get sad because I'm not having real Thanksgiving with my family. I've been marinating a half chicken in a lemon garlic herb mix so I'll BBQ that and have it with a wild rice and mushroom mix, green beans, and carrots and parsnips.

To accompany my turkey tenderloin yesterday I made a wonderful new casserole. It's a gratin, with cauliflower and carrots, with extra sharp cheese, bechemal curry sauce. Anyone wishing the recipe let me know. It was spectacular and a lovely change from the usual. Nice to make for a special occassion.

Well yesterday I decided we would have turkey tacos and salad - so I made up the turkey in the afternoon and I was finished and just about to put it in a bowl and lo and behold the dumb frying pan we bought had teflon peeling off it! So turkey goes in the garbage. (It was just an inexpensive pan we picked up as I wanted to shop around for new cookware - have now just purchased a T-FAL set).
So we ended up having some of that ham I cooked a couple of weeks ago, potatoes and corn.
Tonight, since my Singapore curry gravy has been in the relocube - we will be having beef curry with rice!

Sorry jodee for just seeing this now! My tabouleh I make with either bulgar wheat, or couscous. I really like the couscous. I boil a 1/2 cup of water with 1/3 cup of lemon juice and 2 tbsp. of olive oil. Throw in a package of couscous (1 cup), take off heat and let sit for 5 min. Meanwhile I mix up the veggies. Usually...grape tomatoes split in two...at least 1/2 a carton, or instead you can use regular tomatoes, about 3 cut up. I use a couple of small zuchinni cubed, and/or 1 english cucumber, and 1 small onion, or a bunch of green onions tops included. One tsp. of minced garlic as well. The spices I use are about 2 tsp. coriander, 1 tsp. cumin, I don't use mint because I don't like it in this recipe...but you could add some mint leaves. Salt and pepper to taste. 1/2 cup of parsley as well (dried). About 1 cup fresh cut up finely. I actually don't measure out the spices, but this is what I think approximately the amount I use is. I mix all the veggies, spices and couscous together, then pour another 1/3 cup of lemon juice on it, and another 2 tbsp. of olive oil. Refridgerate.
I like to have it sit in the fridge all day, or better yet, make it a day ahead.

i made this chicken the other day.. hubby told me that I definitely had to make it again and gave it an A+..
it was so yummy and tender and juicy... mmmmmm.. the two pieces I had were not enough...

Oven-Fried Garlic Chicken Recipe * 2/3 cup breadcrumbs
(I used Italian bread crumbs) * 2/3 cup grated Parmesan cheese
* 1/4 cup minced fresh parsley
* 1/4 teaspoon salt
* 1/8 teaspoon fresh ground pepper
* 5 tablespoons butter or margarine
* 3 cloves garlic, minced
* 3 lbs chicken, cut up
1. Preheat oven to 350.
2. In a shallow bowl, blend together bread crumbs, Parmesan cheese, parsley, salt, and pepper.
3. In a small saucepan, heat butter and garlic over very low heat until butter melts.
4. Remove from heat.
5. Brush chicken pieces with garlic butter, then roll in bread crumb mixture to coat.
6. Place chicken skin side up on a large foil-lined baking sheet.
7. Mix together any remaining crumb mixture and butter and sprinkle over chicken.
8. Place in oven and bake for about an 1 hour. (I baked them for about 40 minutes)

My parents are visiting and we went out to eat tonight. I had scallops and lobster and then stole bites of hubby's prime rib. YUMMY!

Quiznos' subs are awesome. Haven't had one here in the US, though. The other night I had my first taste of American KFC. Hubby brought it home because I was down-in-the-dumps and didn't feel like cooking. Since I only ate KFC less than once a year in Canada, I
think that it tasted about the same. In other words..... it'll be another year or two before I eat it again.

haha I always say I'm the KFC Queen. I didn't eat it a lot in Canada, but I LOVE KFC, or I did in Canada. It didn't seem to matter where in Canada I ate it, it was always the same. Not so here in the US. The first time I tried KFC was in KY. I thought it would be the best since it referenced the name of the state! WRONG! Ugh, it was horrible. Actually everywhere I've had it, it's been horrible. No consistency at all. The places I've been to eat it, KFC establishments have been not very clean as well.

Gene laughs when we're in a state and asks if I want to stop into a KFC to see how it tastes. The absolute worse one was in Hawaii.

It turned out fabulous, and I didn't even have a recipe! I had some apples and fresh cranberries and fresh ginger, so I used all those and made an oatmeal crumb crust. We had it with ice cream. Mmmmmmmmm
Tonight we are having seafood chowder and fresh crusty bread. Yes, I am watching it rise as we speak. Can't wait!
I'm hungry.

I made something new yesterday. A ground beef black bean dish. It was very good. Red peppers, celery, onions, black beans, with a lovely not too spicy sauce. Served with dirty rice.
I also made some pumpkin praline tarts. Gene says they are better than ANY pumpkin pie he's tasted.
