I'm hoping hubby feels up to taking me out for dinner. I am so exhausted from this pneumonia that I don't have any desire to cook, but I do have a desire to eat!!! I could really go for mussels steamed in white wine .... and I know just where to get them!

I worked but when I got home my hubby had made turkey burgers and fries good.gif and then we went to Coldstone Creamery for dessert to use his free ice cream coupon he got for his Birthday..

I chopped up some leftover grilled italian sausage, sauteed it in a smidge of olive oil, mixed it with sauce and put it on whole wheat pasta. Yum smile.gif

I got my mussels and oh man were they good smile.gif They are an appetizer at this restaurant, but I got them as my meal ... a nice big bowl and a huge piece of garlic toast, perfect for soaking up the white wine and garlic sauce. I could eat a million of these smile.gif

Yay!! I'm glad you went!

Now that I am more of a seafood lover- I would like to try mussels again. I tried them once long ago but I was weird about them back then.

I don't know what I'm going to have tonight for supper. I might make some beef empanadas. A nice salad to go with.

Gene and I were out geocaching a week ago and in a public park found an apple tree that had some nice apples nearer the top. Gene climbed up it, and shook the tree, and we picked up a dozen apples or so. We've eaten a few as a snack. I used up most of them this weekend for an apple pie. Mmmmmmm

Anyway, I cut us both a slice for dessert last night and I had my usual slice of cheddar cheese (sharp of course!). He just shook his head and giggled...where does that tradition come from? I said, I don't know, we've just always done it. (we= my family, extended family, friends in Canada) I think it comes from maybe fruit and cheese being good mates? Let me know what you think.

I have no idea either.. my family never did it but my ex-husband's family did it.. that and put butter on top of their apple pie.. It was something I'd never seen before! smile.gif

Anyone ever grilled eggplant before and can explain how you do it? I had the BEST grilled eggplant sandwich yesterday, c/w roasted peppers.. mmmmmmmmm

tonight's dinner is barbecued chicken drumsticks... I put a little mustard on the chicken and then sprinkled some homemade chicken rub on them.. .. they smell good already and they are not even cooked yet... we are going to watch a movie while they are sitting in the the rub and will bbq them later.. going to serve some pasta roni with them...

the rub was chili powder, paprika, cayenne, onion powder, garlic powder, cumin, coriander, oregano, basil, salt, pepper.. and then I mixed in a little brown sugar....

We had broiled fish, potatoes and carrots. I felt virtuous and healthy afterwards and then blew it all by eating a big bowl of ice cream laughing.gif

Does this make the eggplant non-spongy - the grill? I can't stand the texture of eggplant, but I haven't grilled them.

We had really good ham for dinner last night, I haven't baked ham on the bone for a long time, but I really do find the taste superior to other hams.

I don't eat cheese with my apple pie, but it seems normal to me, I mean I have seen/heard of it - I like cheese, I would be happy to eat cheese with anything really laughing.gif

I REALLY love eating cheddar cheese and green olives.

I did that the other night too! Made a lovely light meal of shrimp, bok choy, and rice..... then had buttertarts for dessert. blush.gif But now I'm not happy with my husband because he'd never had buttertarts before so I gave him one the last time I came back from Canada and he said he didn't really like them. On Sunday he suddenly proclaimed that he loved them..... but I only brought one package back. headbonk.gif

Well, it's firmer than a sponge. Does that make sense? laughing.gif I think 5 min. on each side makes it firmer than a complete wet sponge.

Make more eggplant dishes

And i'm not crazy about peas but when I was cutting the ham up last night I said, this stuff i'm leaving behind would probably make great soup stock and Mike said - nice ham and pea soup!

Then we proceeded to throw that in the garbage. I have never made soup from scratch tongue_ss.gif

Ok, I have a question! The bread here (I mean like the sara lee and the wonder bread and pretty much ALL bread that is packaged in a plastic bag that is sitting on a shelf) - what is in it.

When you open the bag it has that 'smell' - I have no idea what it is - it is so off-putting and the taste stands behind it too.

I am now officially boycotting ALL but some in-store bakery bread. I don't know how people here can stand the other stuff - whatever is in it is just gross.

Ok, I have a question! The bread here (I mean like the sara lee and the wonder bread and pretty much ALL bread that is packaged in a plastic bag that is sitting on a shelf) - what is in it.

HFCS ?- I was discusted when I read that it's in BREAD as well...

I gave up on American bread about the same length of time it took you to. laughing.gif I now bring it from home and freeze it. There is one bread I've found, however, that tastes and has a texture most like the fibre bread I ate at home. It's available in Walmart and is called "Arnold Natural Wheat Bread - Original Brownberry Recipe". No HFCS's to be found at all. Yay. kicking.gif

Homemade soups are divine! Although I've never made ham and pea soup, because I've never had a ham bone, nor do I like peas in soup if that makes sense. laughing.gif However, yesterday Gene was home sick, and I made up a pot of homemade chicken soup. I freeze chicken stock for just this purpose! Grilled up some chicken breasts for the soup, and an array of vegetables. It was very good.

I don't eat packaged store bought bread. I go to St. Louis Bread Company, Breadsmith, and a few local bakeries around here. We love whole grains, sunflower seed, multigains, flax etc. breads. It has meant we've cut down on our bread eating I think, which is probably a good thing.

We had Boston Market chicken last night - I do really like their food.

For dessert we had Vanilla ice cream with a peach sauce I made - that was delicious.

No idea what's for dinner tonight, I suppose I should go look and see!

oh poutine reminds me of who wants to be a millionaire.. we don't really watch that show but we stopped on it the other day and the question was about poutine.. something like, "what is the main ingredient of poutine a traditional Québecois dish covered in cheese curds and gravy"..

the guy had it narrowed down to; crepes, french fries and mushrooms.. he then says he knows it isn't french fries and is final answer was mushrooms tongue.gif of course I was yelling french fries at the TV laughing.gif

I had leftovers from a concoction made last night: shredded chicken mixed with honey, garlic, crushed red pepper flakes, water, salt & pepper, heated up and served over pasta. Yummy. smile.gif

Well, I have a whole lot of left over ham to use up. I made a ham, cheese and chive quiche last night and tonight I think I will do a mixture of ham and beans in a casserole dish with cornbread baked on top and serve that up with some tomato and basil soup.

Oh yum. Both those meals sound really yummy. Now I have a craving for quiche for breakfast, but I'd have to go shopping first. lol

My Husband cooked tonight. We had pork tenderloin with asparagus, green beans and bread.

The pork has lemon/garlic marinade on it already, it was ok...I like my meats really well done and this was done but not well done and I think that put me off a bit - but it tasted good.

Bought an uncut loaf of some type of round italian bread at Super Target today...it tastes just like sourdough.

speaking of easy meals I found this one the other day.. now I want to try it...



Super Simple Stunning Quesadillas

* 2 Chicken Breasts ( Boneless - sliced )
* 4 Flour Tortillas
* 1 Medium Red Onion
* 2 Tbsp Olive Oil
* 1 Clove Garlic
* 1 Tbsp Taco Seasoning
* 1 Cup Sliced Mushrooms
* 2 Cups Baby Spinach
* Sprinkle Red Pepper Flakes
* Shredded Cheese ( Cheddar, Mozzeralla, Monterey Jack)

1. Preheat Oven to 350 Degrees Oven
2. Preheat Frying Pan and add the olive oil
3. Once ready, add red onion, garlic and red pepper flakes
4. Stirring often, cook mixture until onions become translucent - then add the mushrooms
5. Continue cooking until mushrooms release their liquid and begin to brown - then add the chicken
6. Once the chicken is cooked through and no longer pink - add taco seasoning and water and allow sauce to thicken. Once thickened, then add the spinach and toss through
7. Ready to prepare the quesadilla, Lay parchment paper on cookie sheet and place one tortilla on top, Then spoon the mixture on top of the tortilla evenly
8. Now Sprinkle cheese over evenly ensuring that you have cheese on the edges to allow the tortillas to stick together.
9. Place other tortilla on top and bake in the oven for about 10 minutes or so or until cheese is melted and the tortilla is golden brown. Take out of the oven and serve.

*the filling is enough for two quesadillas

I have been craving a full-on Sunday dinner for quite a while now, so tonight we are having:

Roast beef
Yorkshire puds
Roast potatoes
Gravy
Carrots & parsnips

Hmm. I just had a craving to include brussell sprouts as my green veg. Or maybe I'll just have peas. I'll have to think about that. lol

That dinner looks so good krikit, so good in fact that you should post a picture!!

Not sure what's for dinner tonight, but I am going to take something out of the freezer soon. Last night we had some frozen waffles lol - rather pathetic but we had a frozen pizza around 4ish, then got to playing world of warcraft, only thing handy was the eggos to kind of grab and eat laughing.gif

I think what I would like for dinner is some pasta - so maybe meatless tonight.

We do that too.... if we have a late lunch we'll just have something snacky a little bit later on. On Friday we went to the movies (at the AmStar in Lake Mary) so I had some old cheddar (which I'd brought from Canada) crackers and grapes, with a glass of wine, just before I went to bed. OMG, I had nightmares ALL. NIGHT. ohmy.gif It was horrible. Next time I'll have cereal. laughing.gif
