not sure if I posted this recipe before but this is what I am making for dinner tonight.. this is so delish... mmm yum... I am going to stir fry some frozen stir fry vegies with some leftover rice I have for a side dish to go with the chicken....
Crock Pot Super Garlic Chicken Legs Recipe
* 6 chicken legs (more or less as needed)
* 20 garlic cloves (skins left on)
* 1 teaspoon dried rosemary
* 1/2 teaspoon salt
* 1/2 teaspoon pepper
* 1/4 teaspoon red pepper flakes
* 1/3 cup chicken broth
* 3 tablespoons oil (i like to use olive oil)
1. Place garlic cloves in crock pot.
2. Mix spices together in med bowl.
3. Pour oil into separate med bowl.
4. Dip chicken legs in oil. Sprinkle spices over both sides of the chicken.
5. Place chicken legs in crock pot with garlic cloves surrounding it.
6. Pour chicken broth over all ingredients.
7. Cook on Low for 8 hours or on high for 4 hours...

I made some chicken soup that would be good for you. Too bad you're so far away!

Well, I made a smoked beef sausage vegetable stir fry yesterday with an orzo lemon artichoke salad. It was pretty good.
I'm away in training all day today, so I'm throwing some ribs in the slow cooker. I also didn't make those brownies yesterday, so I'm going to make them this morning before I go.
Best start that now!

I just used red pepper but you could leave that out or maybe use a dash of paprika.... I think the flakes are those things you put on pizza

The ribs yesterday weren't bad. I'm glad I finally got them out of my freezer. I bought them at a time when we were both craving ribs, and they weren't that good, kind of tough. I rarely buy ribs because it's so hard to find any decent one without paying an arm and a leg. Sure there are cheap ribs, but they're lousy tasting! Anyway, the ones in the crock pot were pretty good. Just made a soy, brown sugar, bbq sauce for them. Had herbed rice and green beans with them.
I did however, make Ina's Outrageous Brownies yesterday. OH....MY....WORD.....They are the BEST brownies I've ever tasted. They made a HUGE amount, I put some in the freezer. Outrageous is certainly a good word for them. Very very good.
I don't know what we're going to have tonight. I'm getting lax in working out my weekly menu ahead of time. Usually Thursdays before a long weekend (meaning Gene has the Friday off) are leftover night, but we just don't have many leftovers! If we're going away this weekend, we'll be eating out...so I'm thinking...hmmmm....salmon burgers!

yesterday hubby made dinner, it was good but a little too salty... he had followed the recipe exactly, the recipe called for salt and soy sauce.. he felt a little bad.. I hope this doesn't discourage from cooking more often...

Well, we are having chicken soup tonight - left over remains of a roast chicken, so into the pot with rice, spices, carrots, zucchini, eggplant, broccoli, onions, some green beans - in fact, everything I could find from the garden. I picked up some artisan bread at Costco yesterday, so that and the soup will be a nice dinner - and lunch for tomorrow too, hehehehe.

Oooh Keg steak would be yummy right now ... if I am thinking of the right thing. I've been to a Keg restaurant in Montreal, is that what you mean?
I had ..... chicken soup again. Still sick, doc says it is bronchitis. It is kicking my azz, can't stop running a fever, coughing and oddly enough throwing up too

Hope the soup stays put.

Awww came home to hubby making dinner....a HUGE plate with nachos, beef, beans, chihuahua cheese, tomatoes, guacamole, salsa, sourcream, jalapenos....
And just woke up a while ago from the 6 hours nap we just took...and hubby still sleeping.....ROFL
I guess I should go back to bed I work in 7 hours....

I've been really good and trying very hard to stick to this no sugar, no wheat, no dairy crappy diet..
Had eggs last night.. made them into a wee dip and put them on rice crackers.. blech..
Hubby had chipolte marinated beef done in the slow cooker and then pulled apart and made into a wrap.. lucky bugger!

We had frozen pizza and asparagus last night

I did, however, stew some raspberries and we had them over ice cream and dessert sponge cups - that was good.
I'm actually just peeling potatoes right now, I think we will have burgers and I will boil/mash these potatoes then fry them up later with green onion and garlic and whatever else takes my fancy.

Soup again for me ... but this time I am branching out. Hubby just went up to the local Chinese place and got me a bowl of hot and sour soup. I'm hoping that the spices will help clear up my congestion.

Change of dinner plans here, we ended up having a hamburger for lunch so I am making pulled pork sandwiches and those same fried potatoes I prepared earlier.

Marilyn, I tried your garlic chicken in the crock pot today - was trying to get something made that would last me a few days so i don't have to cook as hubby is away.. it smelled AWESOME.. and i'm going to try it tomorrow, as tonite we had a big bbq at a friends.. so.. Yes- I do make my own sauce. The same sauce my mom always made except I kick it up a little more- more spices. I get lots of compliments on it which makes me happy

Tonight we had chicken tacos.
Tomorrow we will have brisket- I have already trimmed it and rubbed it and it is sitting in the fridge to marinate. Mel will either put it in the oven tonight or early in the morning to cook long and slow. My sister brought the mesquite rub for me- it is a Kirkland brand from Costco and it smells awesome.

Proof you just can't depend on a man to clean up after dinner:
So last night I made Italian wedding soup, hoping that today I could just make left overs and all would be well. We're going to Canada tomorrow evening so I didn't want to make too many meals this week. As I was driving to work this morning I thought to myself: "Hmm I wonder if Mike put the soup in the freezer...I sure hope not...Nooo I don't think he'd do that"
Grr he put it in the freezer and now I am defrosting it in the microwave and I hate using the microwave.
Like we're having it the next night, I make food charts so everyone can see what we're having, I have made it clear that we're doing Italian wedding soup two nights in a row this week. DUH.
This could go under the vent thread too but oh well.
Luckily I have a glass of red wine to keep me company while the microwave kills my food.

dinner tonight was meatloaf which came out really good tonight... lately my meatloaf has been falling apart but today I used half turkey and half ground beef.. mm yum...

Last nights shells were out of this world. I had them covered in homemade marinara sauce. mmmmmm Today I've got a small pork roast that I'd like to put in the slow cooker. It's that time of year when it's lovely out, and all the windows are open, but between 2 pm and 6 pm it's dreadfully hot! So, in order to keep it cooler, I think I should be using my slow cooker more. I'm going to see if I can find a new recipe. Rice and some veggies will round this meal out I think.

I was watching Paula Deen yesterday and she did a stuffed beef tenderloin that looked so yummy. I would like to do it for tonight but I need to see if I can find the cut of meat I need. I know Whole Foods would have it and their meat is so beautiful but it would be quite costly to get it there.

I just found a recipe for making lasagna in the slow cooker.... you basically just layer everything in the slow cooker and cook for a few hours.. you don't even need to use the oven ready noodles...

Repeat process until all ingredients are used, ending with sauce.
Cover and cook on low 6-8 hours.

Speaking of oven ready noodles - I used them for the first time a couple of weeks ago when I made Lasagna - I found them to be a bit mushy....does anyone else find that?

I think I've found the opposite to be true in fact. I always find them tough when I make them. I find you have to play with the amount of liquid in the dish.. add a bit more for ovenready so they cook right.. but my secret of secrets with lasagna is to put all the ingredients for the sauce in a blender before you put it in the dish (if you are making your own sauce).. it gets everything all smooshed up and it works really well with oven ready noodles.

I went to my sister's for dinner and she made this amazing veggie meatloaf with these garlic-havarti mashed potatoes, they melted in my mouth and I had seconds, then thirds, I thought my stomach was about to burst!!

Garlic-havarti mashed potatoes? Mmmm do they sound good! Anything other than maybe minced garlic and shredded havarti in them? I'd be interested in knowing Jill if you can get the recipe, or ask your sister.
Our pork was very good last night. I just put it in the crockpot with soy, chili sauce, some spices, and water. I made some fried rice, with a ton of veggies and a scrambled egg in it.
Think I'll make some zuchinni sausage squares up tonight and a green salad.

I've been making recipes this week that include tomatoes. Hubby is away and he can't have tomatoes in anything I cook, so I've been cooking all week with them

tee hee.. Last night it was a cheese & tomato sandwich, the night before CHILI!
