Naaah - in all seriousness, I am making baby steps in Indian food still. toniteeee and to lift the redhead's spirits (drum roll, please) we will have Iranian rice with cashews and Chettinad chicken --- bring on the spices people~~~~ wooohoooooo kicking.gif kicking.gif kicking.gif

this looks good...

Easy Alfredo Sauce


1/2 cup butter
8 ounces cream cheese (best room temp)
2 tablespoons flour
2 cups whole milk (cream or half and half)
1/2 cup parmesan cheese
salt and pepper (lower fat version)
1/2 cup butter (margarine just doesn't work)
8 ounces low-fat cream cheese
2 cups skim milk
4 tablespoons flour
1/2 cup parmesan cheese
salt and pepper

1. Melt butter over low heat (do not burn or sauce will take on nutty flavor).
2. With a whisk, mix in the cream cheese and whisk until completely combined. (At first it will seem like it won't combine, but keep stirring until it does).
3. Add milk and flour and continue to whisk.
4. Once it heats up and is smooth add parmesan cheese and salt and pepper and stir to combine.
5. Let it sit for a few minute to thicken.
6. Lower fat recipe. Follow directions above--it will be slightly thinner, but will thicken upon standing.

well, hubby ended up making himself dinner tonight while I was trying to figure out what to make for us wacko.gif I got mad and said I wasn't going to eat then... tongue.gif

I broke down though and made myself a pasta salad with chicken... it actually was quite good...

Since I work at night on Wednesday...I will cook before I leave..something very easy and quick..Salsa Chicken one of our faves..

4 skinless, boneless chicken breasts
4 teaspoons taco seasoning mix
1 1/2 cups salsa
1 cup shredded cheese
2 tablespoons sour cream

Preheat oven to 375...Spread about 1/2 cup of the salsa on the bottom of a baking dish..Sprinkle taco seasoning on both sides of chicken breasts and pour remaining salsa over all..Bake for 30 to 35 minutes, or until chicken is tender and juicy and its juices run clear...Sprinkle evenly with cheese and bake for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve...usually serve it with a nice salad and warm tortillas..mmmmm

Last night's pancakes and sausages were yummy in my tummy. Tonight's meal will consist of pork marinated in lemon and herbs then bbq'd, with a greek salad and garlic rice. I used to have to shovel my way to the bbq in winter. Memories are a wonderful thing.

Pour 3 beaten eggs over top.

Bake in 350 degree oven for about 18-20 min.

Cut in large, or small squares and enjoy!


Just wanted to say that when I read this recipe it made my mouth water...so I made it the other night. It was yummy delicious! smile.gif I definitely will make this again.....may even try it w/ turkey sausage.

oooooo so glad you enjoyed it! smile.gif One of my favourites as well. It got rave reviews in the local newspaper here. We heat leftovers up for breakfast the next morning. blush.gif

Gene's tummy hasn't been well the last few days. I made a big pot of beef barley vegetable soup. Went down well. He was back at work today, but don't know how he'll be feeling tonight, so I'm waiting on word to see what I'll make.

That salsa chicken sounds delicious!

Tonight we will have steak, salad and twice baked potatoes. Not much to say about those three things really.

ok, I have the meatloaf all made and waiting in the fridge.... and I think I have decided on rice... now I just have to figure out if I just want to make white rice or a packet of Lipton sides... unsure.gif

Hubby working again tonight...so it's just me and the princess. She wants to be Queen but I have claimed that honour. As for supper, not sure yet. She will be happy with Kraft Dinner. I do have a pasta salad box on the shelf. Or hotdogs. Maybe ham and swiss sammich. *sigh* decisions, decisions...

Oh! You just reminded me! I have one of these sandwich machines! They make the most awesome hot sandwiches. You can do that with your ham and swiss sammidge. Make it like french toast (without the cinnamon). Yummy. I want one now too. LOL

Mmmmmmmmmm! We have this about once a month. While traditionally it has shrimp in it, you can substitue...maybe chicken? I love making Jambalaya because it's a good way of cleaning out my fridge!

We had pork chops last night. They were really lean and I baked them in the oven with one of my concoctions. laughing.gif Soy sauce, lemon juice, chili powder, garlic. Then we had lemon butter brussel sprouts with almonds. Lastly perogies. I know perogies probably doesn't go with this dish, but they've been sitting in my freezer for awhile and I had a hankering for them.

Tonight it's leftovers! Yummy!

Hey Carla, your pork chop concoction sounds really good, I'm going to try that the next time I make pork chops.

I still have the chicken breasts in the freezer, waiting to try Mr. Ho's chicken.

Anyway, definately grilled cheese tonight - made with the sandwich maker since krikit reminded me! Husband is off to watch the flames vs Chicago tonight so he will be eating saddledome fare.

It's funny how you forget about that thing yet it makes such great sandwiches! laughing.gif Mmmm. Grilled cheese with ketchup and Campbell's Tomato Soup. Yummy.

Grilled cheese with ketchup??!! smile.gif Wow, I thought I was the only one that did that. You make a little puddle on the plate...and dip your corners in! haha

Kind of reminds me of the toast and egg scenerios...when we were little, my Mom always made boiled eggs for us, and put them in an egg cup. She would slice off the top "cap" of the egg, and our toast would be cut up into little triangles or slices so that we could "dip" our toast in our eggs. Once all the yolk was gone, we'd eat the whites. We had little "egg spoons" for this as well.

I've told Gene about the boiled egg in an egg cup, and the ketchup with Grilled cheese and he doesn't understand... *sigh*

Last night we were watching Corner Gas. Davis was going to go camping with Brent and Oscar. He brought...what he called his "waffle maker". I yelled out... "hey! A bush pie maker!!". Gene has this shocked look on his face and says..." a bush pie maker??!!" and laughs and laughs. Does anyone here know what I'm talking about? We used them ALL the time. And I'm not talking about when I was a child either! laughing.gif I LOVE bush pies!

We didn't call them bush pie makers but I know what you're talking about. We put them in the campfires and they made scrumptious yummy sammidges. Lemme see if I can remember..... I'll have to set it aside and wait for my brain to rebuild the connections to that memory. blush.gif

My Mom never did the boiled egg thing, I think it's because she is not overly fond of eggs. We almost always have ketchup with our grilled cheese. My latest favorite grilled cheese - cheese - is sundried tomato havarti.

I don't think I've ever had a grilled cheese with out a big blob of ketchup on my plate to dip it in. You mean there's another way to eat a grilled cheese without ketchup? Kind of defeats the purpose of having one then I would think...

I have never seen or heard of these - and we used to go camping a lot when we were kids. My Dad liked it, my Mom not so much. They got divorced later. tongue_ss.gif

Wow I didn't even know it wasn't an American thing. I don't make them too often but the first time I did I gave it to my wife and asked if she wanted any ketchup with it. She said yes so I poured it on the plate and ate it. Didn't even say a word. However, I did realize that if I didn't say the word ketchup she would just eat it plain. Me I need the ketchup on it. In fact it's about the only thing I do have ketcup on other then burgers and hotdogs and rarely fries...

we bought some of those and used them the last time we went camping... it is cool because the pie irons we bought converted into hot dog sticks... good.gif

I bought some of those biscuits in those cans ... you take one and put in the pie iron and then put some pizza sauce and cheese and whatever else and then you put another biscuit on top.... and put in the fire and voila .. you have a pizza pop... I also tried the biscuits with a little cinnamon sugar and marshmallows... yum yum!!!!

I got it from a friend who was from England.. she also taught me to put ketchup on my Kraft Dinner...

oh, we also used English muffins, we did the same thing.. the pizza sauce etc..... hubby liked those better..

he thought the biscuits were a little salty... they were a little but i still liked them... good.gif (I did buy the cheapest biscuits tongue.gif)... they did taste better with the cinnamon sugar though.. I guess the sweet offset the salt....

hmmm, maybe... I just thought it might be Sandra Lee because she does stuff like that.. takes a store bought product and fancifies it....

Yes, you're right. Paula's more likely to make it herself with lots of heavy cream and scads of butter. laughing.gif

I made a meatloaf a week or so ago, and cooked them both. One we ate, the other I froze. It was an Italian meatloaf and it was great! Along with the "usual" ingredients, it had a box of chicken stove top stuffing in it. Melted cheese and tomoto sauce on top. Very yummy. So, I'll take this out of the freezer, maybe some mashed potatoes and finish up the brussel sprouts, and a salad. I'm trying to get rid of stuff in the fridge otherwise it'll be rotten when we return.

I am very excited because my dad is coming to visit from CT and I asked him to pick me up a pizza. Nothing like good ol' CT pizza ... YUM!!!! And just for as little pizza history ... first pizza place in U.S. was in New Haven.

This is truly the highlight of my day, I swear!!!!
