burrrrp...oops..excuse me.... We just had dinner, The pork steak really taste good hubby likes it...

Bitter melon is a local vagetable in Philippines (we call it Ampalaya) it has a bitter taste but when you know how to cook it it wont really come out bitter, I usually saute it with small chucnk of pork, onion,garlic and tomato. Thanks God for another hearty meal we have.

Well, I was out all day so did a quick standby tonight - took a frozen spinach and cheese pizza, added more spinach, cubed ham, fresh garden sliced tomatoes, lots of basil and more cheese. tasted great. I was out for lunch today to a German bakery so we have fruit custard tarts for dessert - getting ready to serve them now!

Mephys, so glad that you are finally back on real food. Sounds like getting the right meds - which you had already prescribed for yourself - did the trick.

We went to The Frosty Mug for dinner. I had the mixed seafood and hubby had the fish n chips. It was comme si, comme sa.

Got a great rate at only $99/night - they were even nice enough to give me a late check-out tomorrow to 3pm, since my flight doesn't leave until 6. I ask for a lot for $99 tongue.gif

Last night I made a huge cesear salad. I put in crunchy baked popcorn shrimp and cheese tortillini. I saw this recipe in a magazine about 6 months ago, and always wanted to make it. We had some garlic bread with it. It was a very lovely meal. For tonight, I have some pork chops. Maybe a grill is in order.

Shepherds Pie is on the menu for this evening. Mike did mini shopping last night, strangely he didn't feel like picking up a gazillion things on his way home from work.

It's because you mentioned it earlier in the week that i'm making it. I would have done it sooner but didn't have enough sugar - but I do now woot woot!!

So I made bran muffins earlier this week and I'm trying to be healthier, so I found an awesome recipe that uses yogurt instead of all of the oil in the recipe. I've made them a couple of times and hubby always eats them, but yesterday when we were in the grocery store he drops a bombshell! I've always known that he thinks they should be sweeter, so I try to accommodate, but yesterday he tells me that they're like bricks! It was terrible! I never realized he felt that way about my muffins! He then proceeded to say that they taste pretty good but they're dense. So I say "like a rock means you can't even eat it." So then he says "fine, they're like dirt clods then!" OMG can you believe it?! I was really hurt at the time, but now I just find it quite funny. My dirt clod muffins! ~giggles~ tongue.gif

So, I've realized that from now on, I am not going to try to fool him with anything "healthier". It'll be full fat for him from now on!

my hubby does that to me a lot too.. I will make something and he eats it and I think he likes it so I make it a few more times and then one day he will tell me that he doesn't really like it tongue.gif

I use yoghurt a lot as a substitute for eggs, not because I don't like eggs - I do, but sometimes I don't have any or in the case of something like those self-saucing puddings, I find the egg flavour overtakes the flavour of - whatever it is supposed to be - butterscotch etc.

I just used brown sugar in my banana bread, which is in the oven - and I used 2 tubs of vanilla yoghurt good.gif

Oh and I find the yoghurt makes things denser too...but I like that - dirt clod muffins laughing.gif

I guess I like the denseness and he doesn't! I told him I'd only make dirt clod muffins for myself from now on since I like them, thank you very much! ~giggles~ tongue.gif

If a recipe (like my carrot cake or muffins) calls for a lot of oil, I substitute half the amount with applesauce. Cuts the fat and calories, makes them moister, yet still keeps some of the oil's effects on the end result.

Bran muffins are supposed to be dense! I much prefer them that way. Not like the cakey muffins you get here. I can't eat those. My husband had a hard time warming up to my bran muffins also. But I just told him how good they are for him and he changed his tune. He's an easy sell when it comes to fitness. laughing.gif

Well here is le banana bread, I just ate that first piece that is cut there...it is very good!! As a bonus you get to see the Trailmix command center in the background!! Excitement abounds!!

The recipe...with my substitutions, I know they always say that baking is more of a science than 'cooking' and therefore the measurements and ingredients should be pretty much exact etc etc - but who cares laughing.gif :

2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter (no way was i using a whole stick of butter, half of one was fine)
3/4 cup brown sugar
2 eggs, beaten (two small tubs of vanilla yoghurt)
2 1/3 cups mashed overripe bananas (two bananas)

Krikit- Well, that's one thing hubby says, at least these ones are good for his digestive system! tongue.gif Which he likes.

Cassie- I've tried applesauce, and it's like he's a bloodhound or something, he knows! ~giggles~ I even tried making him healthy brownies once with applesauce which I thought were awesome and he'd hardly touch!

Oh well...I'll keep working at it!

Having dinner across the border tonight so I'm not sure what the deal is but I am going to sweet talk him into taking me to that fabulous Italian spot we found.

Last time I had penne with chicken and mushrooms in a garlic cream sauce! DEEEEElicious!

Tonight's dinner was a big salad and a small serving of whole wheat pasta with marinara sauce. I figured I would eat healthy tonight since tomorrow is the junk food binge at the fair!!!!

We had seafood pasta. But we had it really late because my husband decided to stop at some car dealerships on his way home with the clams. headbonk.gif Needless to say.... it wasn't the romantic evening I had planned. dry.gif

We had the shephard's pie I made, very good if I do say so myself - lots left over so it will probably be lunch or dinner again today.

we are possibly going to a 25th wedding anniversary tonight for some people we don't know.. all my hubby knows is that they are from his mom's side of the family.. we would just be going for the free food ... laughing.gif

I am eating chicken sausage and popup pancakes for brunch. I'll definitely make those again. good.gif Think I'll just pick up bbq chicken and collard greens from Mike's BBQ for dinner.

Well, I tried the pop up pancakes and they didn't work. Even though I generously oiled the muffin tin, they still stuck, and they didn't puff up or get golden. They were like little hockey pucks. Hubby says it has something to do with elevation. I dunno! So, I ended up eating a chocolate bar for breakfast! Not the best breakfast in the world, but I do love Three Musketeers!

Where are you located? I treated them like I do my yorkshire puds. Have the milk and eggs at room temperature.... don't overwork the batter (eggs will get rubbery if you mess with them too much).... let the mixture rest for at least 15 minutes before baking. Plus I use a lot of oil in the tin. The only thing I didn't do.... which I shall next time... is heat the tin with the oil in it. All in all, I thought they were pretty good. Very eggy, so there's no need to have eggs with it. At least for me, anyway.

I always mix the batter in the blender.. and then let it sit at room temperature for awhile and while this is going on I heat up the oven with the muffin tins in it... and then when I am ready I take the pans out and spray them nice and good with cooking spray and then pour the batter into them and bake... they come out perfect every time... good.gif

It's 2pm here and we just had breakfast not long ago so I'm guessing we'll probably have a much later dinner.

We had Japanese last night and it was expensive and not that great. I'm spoiled in Vancouver for all the great, cheap sushi available to me. Bellingham doesn't hold a candle. Paid $12 for three tiny pieces of tuna sashimi! mad.gif

Tonight I'm going to suggest we have burgers. I feel like something grilled. good.gif

Haha husband got a roasted stuffed tomato recipe out of my vegetarian cookbook (no I'm not a veg, I just like the food) and he's making it with a beef roast.

We had some mac & cheese with Broccoli and ground beef in it, simple and fast and the kids love it.

We had an old friend drop by so the three of us went out for dinner at a Chinese/Japanese restaurant - yum! Now I'm stuffed - and we have left overs for lunch tomorrow.

Just got back from spending the whole day at the fair. I am stuffed full of junk food smile.gif I had a chicken fajita wrap when we first arrived (which actually had grilled chicken and fresh veggies in it so it was not total junk food) ... I figured I should eat something that was not fried!!! Then hubby and I shared onion rings. I got my fried dough. I like it with tomato sauce and grated cheese on top. I had to go to 3 or 4 stands before I found one who could prepare it like that. At each stand, I was asked if I was from Connecticut .... apparently, according to the concessionaires, it is only in CT that people top fried dough with sauce.

I also nabbed bites of hubby's food: bbq pulled pork sandwich, fried Twinkie and a fried Milky Way. Personally, I thought the fried Twinkie was gross. The Milky Way was good, but I would only want one bite, not the whole thing.

Oh yeah, and we had freshly made lemonade too!!!

We had..... Mike's bbq. Tonight I think we shall have hotpot. It's a British thing..... basically meat (usually lamb or pork) onions and potatoes in a broth, slow-cooked in the oven. Very yummy. I need to use up some things in my fridge before I leave because I know my husband won't cook a thing while I'm gone.
