All this talk of Yorkshire pudding reminded me of a recipe I saw not that long ago (or maybe i made it up in my head, hard to say) - ie: making a larger YP and serving the stew in the middle of it. Hmm, I could do that and I might!

Oh and I realllyyyyy dislike the packaged bread here - even when you just open the bag it has that sugary whatever smell - it's just pretty darn awful and always sweet!!

I do like the french bread we get at the Albertson's bakery though, it's 'normal'. When we get a house i'm absolutely buying a bread maker.



Stew in YP sounds yummy! But not in the summer. wacko.gif Something that I'll try and remember when it's cooler. It DOES sound delicious.

Joel fired up the grill tonight...decided to try a chuck roast on the grill, marinated all day. Dunno how this is gonna turn out but it's worth a shot. That and corn on the cob on the grill too. :0)

I am making smothered chicken in the crock pot.. basically just cooking the chicken in mushroom soup....

Yum. Sliced meats in gravy or guinness stew in a yorkshire pud is all the rage in pubs in England and Ontario. I've had them on both continents. smile.gif

I've just come in from grocery shopping. It's raining here so I think I'm going to make either a crabmeat soup or a potato and bacon soup.... with buttermilk biscuits.... for dinner. So, with that, I'm off to pour a glass of wine and get cooking.

The secret to finding decent tasting bread is to read the label. All of that 'sweetness' comes from adding the HFCS. Check to make sure that HFCS or sugar or molasses or some other sweetner isn't listed in the first ingredients - it should only be listed near the end of the ingredients as the starter for the yeast.

We had barbequed beef with pasta in a cheese sauce, fresh green garlic beans (from the garden) and cherry tomatoes (from the garden). More watermelon for dessert.

We are having friends in.. having brats, burgers, pasta salad, & regular salad.. and maybe some smoked salmon pate?.. for dessert.. strawberry salad smile.gif

I made a really awesome red lentil coconut curry with brown rice and roasted veggies the other day. It was FANTASTIC especially for my first time making lentils ever! That will definitely be a "make every week" dish.

Last night I made a spicy sausage and zucchini casserole. I really wanted to make Carla's zucchini squares but I'm intolerant to wheat and white bread dough is the worst for me. So I kinda improvised! It was yummy with layers of zucchini, sausage, tomato sauce, and basil with bread crumbs on top.

Tonight is going to be tacos I think. I have some leftover sausage and I think I'm going to add it to my taco beef mixture. It should be yummy!

Tonight I am going to attempt crab cakes. I have never made them- I got a recipe from Barefoot Contessa. I'll spruce it up my way though and see how it goes.

I'm off to get the stuff I need and get myself ready.

We had grilled turkey burgers last night. I must have overdone the spices. I just threw in a bunch of "stuff", and I usually LOVE spicy stuff, and it's okay with me, however this time, something didn't agree with me. wacko.gif I wasn't feeling well most of the night. Oh well...

Tonight, I have no clue what I"m going to make. Maybe a spinach loaf, or ham and cheese and corn on the cob.

Pita pizzas are great and can be made very healthy. I found these great pitas here, the brand name is "the alternative bagel" yes they also make bagels smile.gif They are only 1 point in Weight Watchers. If you can't find these, any whole wheat pita is good. Put on some pizza sauce, any veggies you like, I like the Hormel turkey pepperoni- less fat and calories. And Kraft now makes a fat free shredded mozza cheese, or 2% is good if you don't like fat free products. I bake them in the oven at 350 for about 10 minutes or until they are nice and hot.

My Husband had to work until 9 last night and then one of his fellow workers decided to keep him chatting for an hour. My Husband said he did the twirling keys thing, then the open the car door and lean on it thing and then actually sat down in the car as in 'i am leaving now' and still the guy talked on and on laughing.gif

Anyway, I had a frozen pizza, which was really good smile.gif

I think a burger tonight. I had Swiss Chalet only twice last week when I went to visit. Miss that chicken.

I am making honey baked chicken in the crock pot tongue.gif was simple enough.. just throw in the chicken then mix together some melted butter, honey, mustard and a little salt and throw that over the chicken.. i really hope I started it in time though.. I have a job interview at 6 tonight... unsure.gif

tried something different tonight - it seemed to work - did a tomato, mushroom artichoke heart, basil and cheese quiche with sliced tomatoes and cucumbers on the side.

Crab cakes were awesome!! Mel loved them and told all his coworkers and they want the recipe too. I didn't follow her recipe exactly- I read several of the reviews people had made about that recipe and made adjustments to suit. I will sit down tomorrow and re write it to what I did- and then post it. I served them with an avocado dressing from Paula Deens recipes (a suggestion from one of the reviews)

Tonight was a great dinner- another Ina recipe smile.gif Tequila lime chicken. Mel made some fresh pico de gallo, I made guacamole. We also had some Uncle Bens spanish rice- those 90 second microwave pouches are awesome.

Friday night I made chicken using a spinach pesto I brought back from Europe..... it's the most amazingly delicious stuff. I also used it to flavour an Italian wedding soup I made for tomorrow night since my husband will be working late. (Used it in the meatballs too.) Last night my husband brought home chicken and ribs and collards from the BBQ down the street. Tonight we are having steak and mushrooms with a salad of cucumber, tomato, and peppers. I'll probably pick up a russet or sweet potato to go along with it.

2 tablespoons unsalted butter
2 tablespoons olive oil
3/4 cup small diced red onion (1 small onion)
1 1/2 cups small diced celery (4 stalks)
1/2 cup small diced red bell pepper (1 small pepper)
1/2 cup small diced yellow bell pepper (1 small pepper)
1/4 cup minced fresh flat-leaf parsley
1 tablespoon capers, drained
1/4 teaspoon hot pepper sauce (recommended: Tabasco)
1/2 teaspoon Worcestershire sauce
1 1/2 teaspoons crab boil seasoning (recommended: Old Bay)
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 pound lump crabmeat, drained and picked to remove shells
1/2 cup plain dry bread crumbs
1/2 cup good mayonnaise
2 teaspoons Dijon mustard
2 extra-large eggs, lightly beaten for frying
4 tablespoons unsalted butter
1/4 cup olive oil

Place the 2 tablespoons butter, 2 tablespoons oil, onion, celery, red and yellow bell peppers, parsley, capers, hot pepper sauce, Worcestershire sauce, crab boil seasoning, salt, and pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 15 to 20 minutes. Cool to room temperature. In a large bowl, break the lump crabmeat into small pieces and toss with the bread crumbs, mayonnaise, mustard, and eggs. Add the cooked mixture and mix well. Cover and chill in the refrigerator for 30 minutes. Shape into bite-sized crab cakes.

Heat the butter and olive oil for frying over medium heat in a large saute pan. Add the crab cakes and fry for 4 to 5 minutes on each side, until browned. Drain on paper towels; keep them warm in a 250 degree oven and serve hot.

The few things I did different after reading the reviews- I used more crab, less veggies, less mayo, only 1 egg and a lot more bread crumbs. There were a few reviews that said the mix was too wet and not crabby enough. I bought capers but Mel said he wasn't fond of them so I didn't add any. I also spiced mine up a bit more- more Tabasco and some creole seasoning. I dipped them in more bread crumbs right before frying them- which gave them a nice crust.

We both really loved the avocado dressing with them- I mashed up 1 avocado, added a little mayo, some worchestershire, lemon juice, salt, pepper, and creole seasoning.

oh man, i had baked beans last night - talk about not a good thing to eat. I have IBS so I was up half the night.. every time I eat them the same thing happens.. you'd think I'd learn after a while.. But I LOVE beans on toast so!!!

Oh my! I'm sorry...I'm trying not to laugh here, but I do know where you're coming from. I did want to mention that I was telling Gene about baked beans and buttered toast and I guess I was speaking passionately about the combo and I looked over, and he was looking at me with a very...blank expression? haha He said baked beans and buttered toast??? I said yes... laughing.gif I said, it's like toast and canned speghetti. He just shook his head. The strange things you Canadians eat!

I think tonight I will do Sumac chicken. So yummy. We also call it purple chicken.

Cut strip of chicken and marinade them in olive oil, lemon juice, salt pepper and LOTS of sumac (sumac is very mild) Throw them on the grill for a few minutes and then eat it in a pita with red onions that have marinated in the same ingredients.

Joel grilled chicken tonight witha balsamic glaze. OH YUM! We had yellow squash and fettucini with sour cream and butter with it. Oh my...I am stuffed!

I love beans.

We had beans last night and I don't want to diss the canned U.S. beans, but they are sweet.

Sooo my Husband bought a couple of cans of Heinz beans from the U.K. - had one last night - they were good, not sweet AT ALL - however I found them to be a bit firmer than I am used to - but I like them. As I was opening the can I was thinking, they have perfectly good beans in Canada, why do we have to eat beans imported from the U.K. laughing.gif

With pork chops and rice..that was dinner!

Should get some ingredients and make my own beans.

NNNNNNOOOOOOOOO... it took me more than 24 hrs to get those beans outta my system.. no more beans for me.. no more prunes either (separate incident - same issue).. UGH.. I hate my tummy.

Bean story #1: We were up at the cottage one weekend and I made home-made beans before going to bed one night. I'd done it before where you put them in the oven on a low temp for 8 hours and you wake up to yummy goodness. But not this time. The thermometer in the oven went awol and we woke up to blackened pellets.

Bean story #2: My girlfriend and I were in the same home-ec class back in highschool and had to do a project together. We decided to make baked beans and went to her foster mother to ask how she made hers. (She made the best beans ever.) So we'd ask her a question and she'd show us how to do it. Then we'd ask her another question and she showed us how to do that too. Then another. Then another. Pretty soon she'd made the whole thing for us.... we took it to school, claimed it as our own, and got marked on it. I think she got 90%. laughing.gif

trailmix...try making your own...they're WAY better than from the can. You can control the sugar and salt then as well.

Your bean story Krikit reminded me of a friend from work, who said that her first job from HS was at a bank. The first month they were there, they had a pot luck lunch. She got to work that day, and realized she'd forgotten about it, and was freaking, wondering what the heck she was going to do. So, she faked it, and said, "oh no! I forgot my salad at home! I'll just run home and pick it up before lunch...I don't live that far". So, just before lunch, she gets in her car, and stops at KFC and gets a couple of large coleslaws. Remember the coleslaws from KFC in Canada? Very spicy, green...haha Anyway, she takes them home, empties them into a bowl, covers it with Saran and drives back to work. Everyone RAVES about her salad. They MUST have the recipe! She tells them that it's her Aunt's recipe and her Aunt has made her promise she will NEVER give it away! laughing.gif She said she worked at the branch for another two years, and some people who were still there still raved about her salad and were still begging her to get her Aunt to give them the recipe.

Oh yes, I was originally going to post my supper plans. We had chicken enchilada's last night. Mmmmmmmmmmmm I've made them before, never with a recipe, and these were better than the last time!

I remember that salad. It always scared me because it was fluorescent. laughing.gif

We were having something with ground beef. I made chili last night in the slow cooker, but I think I put too many smoked habaneros into it. I'm trying to save it, now, but I may have to trash the whole lot and go to Plan B. laughing.gif
