Tonight we are going to Superior Grill on St Charles Ave. Awesome Mexican food!!

It will be a diet killer but I will put in extra time at the gym next week.
*Marilyn*
dinner tonight is anybody's guess..

we will probably go out to eat because that is what we usually do on Fridays but I really should make something and save us the money... but I really don't feel like making anything today...

I've been trying to to teach myself to cook real Asian food, so the other night we had Thai Drunken noodles. Tonight I made a pork stirfry with broccoli, sugar snap peas, carrots, and onions, served with brown rice. Mmmmm yummy!
Emancipation
we had grilled chicken, cottage cheese and salad smile.gif And a nice G&T for an after drink blush.gif
Carlawarla
I made Fajitas last night. Very good. Gene is going out for pizza for a going-away lunch for someone at his work, so he probably won't have much for supper. Maybe I'll just make up some BLT's for supper.

Since Laura is now cooking for two, she's going to join this thread now! smile.gif
*Marilyn*
our new stand by meal has turned into chili dogs.. that is what we are having tonight....

last night I made this Italian chicken thing and served it over sgetti.. it was good... equal amounts tomato sauce and Italian dressing (i did about 3/4 cups of each) and oregano and I added some onion and bell pepper , throw in some chopped up chicken breast (I used about 3 chicken breasts).. throw it all in a casserole dish and bake it until chicken is cooked... and then you can mix in some Parmesan cheese..

you could also use zucchini instead of bell pepper if you want...
Carlawarla
I'm doing a roasted beef in the slow cooker. Got some of that brocollini? Hmm, maybe it's not called that. Asperocolli? It's a cross between asparagus and broccoli.
trailmix
We had slow cooked beef last night, with garlic mashed potatoes and sweet potato.

I think tonight will be a grilled cheese night!!

It's really hot here at the moment - I mean hotter than usual 'Florida hot'. They were even talking about record temps yesterday, don't know if it actually reached a record temp - but it was hot hot hot.
MissStacey
I feel like doing something extra special for tonight. We don't have my stepson tonight and Mel is caught up on his work- he teaches a few online courses in the summer and has been spending most of his time locked up in the computer room recording lectures and getting exams ready,etc.

We have some crab legs in the freezer and I think I will run to WholeFoods to pick up a few steaks. They have a sparkling wine there that we both really like- it's only about 7 or 8 bucks a bottle. I'll see what kind of salads they already have made up in the deli.
*Marilyn*
I am making the crock pot garlic chicken thing I made a few weeks ago.. but I already messed up.. I was supposed to rub the spices on the chicken but I mixed them with the broth by mistake.. oh well, it is all going in the same place anyways tongue.gif

We're going to a friend's house for supper - best kinda Dinner there is - we don't have to cook!! YEAH!
KarenCee
BBQ Chicken in the oven, homemade Mac N Cheese and a veggie...not sure what yet.
BH45
I'm too tired to cook tonight. So I'll phone him as he gets off work and tell him to bring something home. It will be the first time I've asked him to do that since I've been here ( June 30th).

Way to show restraint with take out food BH!!

One thing I have noticed about U.S. take out food, they have thought of every possible yummy combination - now the food isn't always that good, but the marketing is excellent!!

We did have grilled cheese last night, included some deli meat.

Tonight my Husband is going to pick something up on the way home, not sure what yet....i'm really partial to Boston Market chicken now though.
Emancipation
We're grilling halibut on a cedar plank I picked up in BC when I was there - grilled veggies on the side mmmmmmmm (oh and a big 'ol bottle of wine) blush.gif
Kathryn41
oh grilled halibut on cedar - yummy yummy!

We had lasagna tonight with cucumber and tomato salad and watermelon for dessert - everything except the lasagna came from the garden. Our cucumber vine has finally bit the dust so we harvested the last cucumbers off of it today - along with the last zucchini - but it is a monster since it hid off in the corner. Our watermelons are now coming in fast and furious as well - I think next year I will plant cantaloupes instead - easier to eat lots of those than lots of watermelon! Being away for a week turned the garden into a jungle! Tomorrow, something with zucchini and tomatoes - maybe another stuffed zucchini . . . the okra are so big that we can't use them so we are drying the seeds for next year, and the left overs will go to re-enactor friends to grind in with their coffee (apparently something they did do during the Civil War when the blockade meant there was no coffee). So, tomorrow, conquer the rest of the jungle . . . I mean, garden . . . and try not to feed too many more mosquitoes.
MissStacey
Tonight my husband made beef stew. We invited a bunch of peeps over- lots of drinks and food and fun.

A few of us are going to sneak off downtown and go to Harrah's.

Super jealous - sounds like a great way to spend an evening! smile.gif

Well, tonight will be the first night in a month that I will have a homecooked meal. I can't wait! kicking.gif I have no idea what it will be, yet, though. lol
Krikit
I've had bad news from home so my husband has volunteered to bring home salad from Crispers. (He's back at work.) I'll make our first homecooked meal tomorrow, I guess.

I made pop up pancakes for breakfast this morning and served them with syrup.. mmm they were yummy... they are somehwat similar to yorkshire puddings..
QUOTE
Pop Up Pancake Recipe - makes 24 muffins or fills a 9×13 baking pan

* 1 cup milk
* 1 cup flour
* 6 eggs
* 1/4 cup melted butter
* dash salt

Preheat oven at 400*

I like to blend all the ingredients in my blender. I have tried to whisk it or even use the electic mixer, but it seems to get the most smooth with a blender. Then grease your muffin tins or baking pan. My mom likes to bake these in a jelly roll pan.

Bake them for 15 minutes, or until puffy and golden on top. Use a knife to pry them out, hopefully they were greased well enough and should pop right out.

Now they are ready for toppings. I love syrup, powdered sugar, and fruit. We usually load it all on and dive in. What do you use to top your pancakes with? Maybe peanut butter or honey?

I read this and thought...hmmm, yorkshire pudding? I'd have to get my head around eating them for breakfast and associating them to something sweet. laughing.gif
As always, thanks for the recipe Marilyn! We can always count on your to provide recipes, and provide feedback to those you try!
I'm going to take out some chicken breasts. Don't know how I'm going to prepare them though.

Def Yorkshire pudding - just more egg and not 'fried'! They do look good!

We had steak, potatoes and corn last night, we are now officially out of most food laughing.gif

My Husband is going to stop on the way home from work and pick up some groceries...sooooo he is also going to pick up fried chicken, potato salad and coleslaw from Albertsons....which is so good.

*Marilyn*
I think another name for those pop-up pancakes is German pancakes.... although they just throw it all into a big baking dish and it puffs up..

seriously they were good with the syrup... .. hubby was asking for more...

my mom sometiems made something like this but she called them popovers..

QUOTE
A Dutch baby pancake, sometimes called a German pancake, is a sweet breakfast dish similar to Yorkshire pudding and derived from the German Apfelpfannkuchen. It is made with eggs, flour and milk, and usually seasoned with vanilla and cinnamon, although occasionally sugar is also added. It is baked in a metal pan and falls soon after being removed from the oven. It is generally served with fresh squeezed lemon, butter, and powdered sugar or fruit toppings or syrup.

It is thought by some that the "Dutch" moniker refers to the group of German-American immigrants known as the Pennsylvania Dutch, where "Dutch" is a corruption of the German autonym "deutsch".

I love Yorkshire pudding!!! We always ate ours sprinkled with sugar.

I do NOT have good success making Yorkshire Puddings. My husband had never had them and so I tried to make them. Yeah....not good. So, I guess he still really hasn't had them! tongue.gif

I have used this recipe and they turn out great.. they aren't quite traditional Yorkshire puddings because you don't dump in all the fat in the pans but they were really good and hubby loved them and he even ate them cold...

Yorkshire Pudding Recipe

12 Yorkshire Puddings

* 1 cup milk
* 3 tablespoons melted butter
* 3 eggs
* 1 cup all-purpose flour
* 1/2 teaspoon salt
* Pam cooking spray

1. Pre-heat oven to 375.

2. Heat a clean, ungreased, empty muffin-pan in the oven while you mix together the milk, melted butter, eggs, flour, and salt. (I usually do this in a blender and then I let the mixture sit at room temperature for about 30 minutes to an hour before pouring into the hot pans.)

3. This dough should be thin/runny.

4. When ingredients are mixed together,remove your muffin-pan from the oven, and spray each cup with Pam cooking spray (This step removes the messy'beef-fat method' used in traditional Yorkshire Puddings, and your Yorkshire Puddings will not spill the beef fat over into your oven as they puff up).

5. Once the pan is sprayed, fill each muffin-cup only 2/3 full of the Yorkshire pudding mixture, (they REALLY puff up).

6. Bake in your pre-heated oven for 40 minutes or until golden in colour and puffed up. (avoid peeking before the time is up).

7. Serve while still warm, best served with beef gravy.

8. These form a hollow centre as they bake.

9. These shrink as they cool, so enjoy them while still warm

*Marilyn*
ugh someone earlier mentioned tacos and now I want tacos for dinner... but that means I have to go out and get some salsa, lettuce maybe tomatoes etc.. but I really don't feel like going out and besides it is kind of late to go out because i have to shower and stuff and by that time the hubster will be home unsure.gif
MissStacey
Haha- I am making tacos too. We just got back from the grocery store- I had to get the stuff we needed.

Thanks for the recipe Marilyn! I'll try those the next time I do a roast beef. My husband LOVES tacos. He could eat them for lunch and dinner every day for DAYS! I love tacos too but not that much! tongue.gif
*Marilyn*
that recipe is really quite simple.. I had never made Yorkshire puddings before because I was scared it was to complicated with the oil and what not...

I have decided on making tacos but i am just going to make do with what I have.. I do have a small can of salsa, I have cheese and onion and ground beef, and some corn tortillas...

hubby won't care.. he would be happy if I just fried up the ground beef and served it with bread tongue.gif laughing.gif
Kathryn41
I've saved the recipe too, Marilyn - I used to make Popovers quite regularly - they really are good!

Tonight I am splurging! Aldi's had bacon-wrapped beef fillet's on sale so I picked up two and we'll have baked potatoes, spinach and cucumber/tomato salad to go with it, with the cucumbers and tomatoes from the garden. Watermelon for dessert - also from the garden.

I also have some honey wheat bread in the breadmaker too - made some caraway rye yesterday and there is only one piece left now, VBG!

OH YES!!!! I remember having this at a friends house many years ago...and omg was it good. She made it with a lemon drizzle. Methinks I will have to get the stuff for that this week as well as other good recipes I've seen floating around here too. Thank the gods that this weekend is our major supermarket trip.

Tonight Joel cooked. Baked chicken breast in cream of celery sauce, rice, creamed corn, and watermelon. I can either take this for lunch tomorrow or have the salad bar at school...which we are all SOOOO excited about! A real salad bar! 'Bout time! Teachers pay $2.50 for their lunches and this will be the price of the salad bar as well. Hehehe...I'm so happy!
Carlawarla
Last night we had lime chicken and a potato/onion/tomato/zuchinni/yellow squash layered casserole and garlic bread. Tonight we'll have leftover mostacolli and garlic bread and a garden salad.

Yum. That sounds good, Carla. So do those popovers. My husband worked late last night so there was no prepared meal, per se..... just some soup and/or chicken strips. Tonight I will make something..... I'm thinking spaghetti with clams. The pasta was so fabulous in Italy that I have a craving for it. Even brought some back with me.... in my carry-on because they're so precious. lol. Found a wonderful little deli and pasta shop by the Trevi Fountain, in Rome, and my daughter and I went wild. Also brought back a couple of cookbooks from Florence. I heart.gif cooking. luv.gif

All this talk of Yorkshire pudding reminded me of a recipe I saw not that long ago (or maybe i made it up in my head, hard to say) - ie: making a larger YP and serving the stew in the middle of it. Hmm, I could do that and I might!

Oh and I realllyyyyy dislike the packaged bread here - even when you just open the bag it has that sugary whatever smell - it's just pretty darn awful and always sweet!!

I do like the french bread we get at the Albertson's bakery though, it's 'normal'. When we get a house i'm absolutely buying a bread maker.
