We had some leftover brisket. I heated it up for about 3 hours in the slow cooker after I sliced it. Mixed up a concoction of KC bbq sauce, soy sauce, chili sauce and spices. It was sooooooo tender after being in the slow cooker. We had that on buns and finished up the potato salad and a rice vegetable salad I had made another day. I like cleaning out my fridge!
Tonight I have no idea what I'm having. Gene confessed last night that he was feeling a bit icky again. He said he's still not 100% from that flu like symptoms he had about 5 days ago. Poor dear!
Maybe some chicken parmesean tonight?

We had chicken parmesean last night. I made banquet potatoes and stir fried zuchinni and squash. The veggies were quite nice. Stir fried for just a short time in olive oil, with grated fontina and parmesean cheese on them. Yummy. Chicken and potato leftovers tonight, with a nice salad.

I have homemade chicken noodle soup cooking and the kids just have to have egg salad sandwiches to go with it but I think the hubby may want a little more to go with it and I just can't seem to think of anything other then a salad.

We had company last night so I made a pasta primavera with everything I could think of from the garden in it - and some extras not from the garden like mushrooms, green chillies and storebought onions and celery - all served over bowtie pasta. Well, I had lots of the primavera sauce left over, so I added some turkey meatballs to it, some more tomatoes and mushrooms then cooked a 5 grain rice mixture in chicken broth, and served that together with a cucumber/tomato/yogurt and basil salad. And, there is one serving of each left over that Joe can have for lunch tomorrow so my work is done - dah dah!

I am making chicken stir fry.. it is a new recipe using, Italian dressing, honey, garlic, ginger.. and then I have a bag of frozen stir fry vegies... will serve it over white rice..

fry up about a pound of chicken, add about 3 cups of frozen vegetables, 1/2 cup italian dressing (I like to use the Light Zesty Italian dressing), 2 tablespoons honey, 3/4 teaspoons ginger, and 2 to 4 cloves of garlic, minced. heat for about 5 minutes. serve over rice...

We have company again tonight (same company as from Wednesday but on the way back). So, after going for a swim we decided to check out a new restaurant that is at the entrance to our subdivision - Caribbean Jerk Cuisine. Wasn't sure what to expect but it turned out to be fantastic. The owners and cooks are from the Caribbean and they use original ingredients and recipes. Our guest had Chicken Curry roti, (large biscuity type shell with curried chicken and a sliced cabbagey type of salad in it), Joe had straight chicken curry with rice and peas cooked together in this delicious gravy with carrots and potatoes, and I had goat curry with the same rice and peas and potatoes and carrots. We had sorrel juice (they also have Ting - an old re-enactor favourite!). The food was wonderful - true Caribbean. I am definitely going to go back or stop there for goodies on a regular basis. I am still stuffed but satisfyingly so. Yum!

so we decided on the fish and chip place around the corner.. mmm, the deep fried zucchini and onion rings were so good.. their batter is no nice and light and not overly greasy.. the cole slaw was yummy and the fish was good

We had a small Caribbean restaurant in Saskatoon if you can believe it. Was wonderful! I've made a few good Caribbean jerk marinades as well.
We did some grocery shopping yesterday, and Gene's mouth was watering for some ribs. I prefer baby back ribs, but the prices are way too high, so we bought some rib tips and some bbq ribs, and I boiled them up, to grill later. Well, our mouths are STILL watering, because they were the worst ribs I have ever tasted. It was like eating shoe leather! WAY too much fat. I think I'll just stick to bbq chops when we have a hankering for pork on the grill. We did buy what looks to be a nice pork loin roast though...we'll probably have that next weekend on the rotissairre. Now I have to think of what to have for supper tonight. Maybe your ghoulash Marilyn? Have to think about this one!

We have pretty much been eating at home lately - which is a good thing, however we did stop at steak and shake last night after looking at a house and I had their grilled chicken salad - which I quite like.
Other than that it has been pretty much meat and potatoes!
Did make a pseudo philly cheese steak the other night (used bread as we didn't have buns) - it was rather good!

Fried Zucchini
7/30/2008
3 Cups shredded Unpeeled Zucchini
1/2 Cups shredded cheddar cheese
3 tsp. snipped parsley
1 large clove garlic (finely chopped-or just a little garlic powder)
1 egg
1 tsp salt
dash of pepper
1 Cup biscuit mix (Bisquick or Pioneer Mix)
Heat oil in a skillet. Mix all ingredients together. Drop by tablespoon into skillet. Fry until golden brown, approximately one minute on each side. Serves 5 - 8.

Did you usually buy Tuna in Canada that was packed in oil? That might make the difference between the calories. I love making tuna salad sandwiches. Like chicken salad, I'm always looking for new things to put in my tuna for a sandwich? What do you guys put in your tuna?
Ooops, edited to add what I usually put in...since I asked, I should probably go first! I usually put in mayo...NOT miracle whip...MAYO. haha Then I put some pickle relish in it, maybe some shredded cheese, very finely diced celery. I used to make toasted tuna cups, they were delicious. Had the same ingredients, but I'd cut the slices off of whole wheat bread, and put them in a muffin cup, the inside buttered, mound my tuna salad in there, and put in the oven until toasty. Mmmmmmmmmmm

I usually mix 2 or 3 cans because I do find the cans smaller here.
I mix in celery, chopped pickles, pimentos, onions, TonyC's creole seasoning, Paul Prudhommes seafood blend, lots of pepper and light mayo.

I like mine tuna with a bit of relish , a dash of mustard and sometimes some grated cheese oh and of course mayo... sometimes I add some bell pepper and onion too
my hubby just likes his with mayo and onion...
my mom always added grated carrots when she made tuna... I do that sometimes but not often

I could imagine easily swapping another fruit or berry for the blueberries–I’m especially thinking something tart like sour cherries or cranberries in the fall (I’d use orange instead of lemon with cranberries). But if you have blueberries on hand, do not miss a chance to make these.
These are easiest to cut once chilled, and store even better in the fridge than they do at room temperature–something unusual for cookies!
Yield: I cut these into 36 smallish rectangles
1 cup white sugar
1 teaspoon baking powder
3 cups all-purpose flour
1 cup cold butter (2 sticks or 8 ounces)
1 egg
1/4 teaspoon salt
Zest and juice of one lemon
4 cups fresh blueberries
1/2 cup white sugar
4 teaspoons cornstarch
1. Preheat the oven to 375 degrees F (190 degrees C). Grease a 9×13 inch pan.
2. In a medium bowl, stir together 1 cup sugar, 3 cups flour, and baking powder. Mix in salt and lemon zest. Use a fork or pastry cutter to blend in the butter and egg. Dough will be crumbly. Pat half of dough into the prepared pan.
3. In another bowl, stir together the sugar, cornstarch and lemon juice. Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust. Crumble remaining dough over the berry layer.
4. Bake in preheated oven for 45 minutes, or until top is slightly brown. (This took an extra 10 to 15 minutes in my oven.) Cool completely before cutting into squares.

I normally just add mayo or miracle whip and onions or green onion - however I also like celery and especially chopped pickle (yum yum).

Oh Marilyn...those look SO good. I have some raspberries in my fridge that need to be used ASAP. I'm sure that would be awesome with raspberries instead of blueberries. I wish I didn't have such an intolerance to wheat though! ~sighs~ Oh well. If you make them, let us know how they turn out!

I made a dutch apple pie today.. tried a different recipe then I usually use.. I like the filling on this one better.. well, I haven't tasted it yet ...
you boil up, the sugar and cornstarch and water and then you add the apples..

* 1/2 cup quick-cooking oat
* 2/3 cup sugar

* 1 1/4 cups water
* 3 cups tart apples, peeled and sliced (I use Granny Smith)
* 1 teaspoon vanilla extract
1. Combine flour, brown sugar, butter/margarine and oats; set aside 1 cup for the topping.
2. Press remaining crumb mixture into an ungreased 9 inch pie plate; set aside.
3. For the pie filling: combine sugar, cornstarch and water in a saucepan until smooth, bring to a boil.
4. Cook and stir for 1 minute or until thickened.
5. Remove from heat and stir in apples and vanilla.
6. Pour filling mixture into crust and top with the 1 cup crumb mixture.
7. Bake at 350 degrees for 45 minutes or until crust is golden brown.

that sucks... I was tempted to make this today with the apples but decided to make pie instead.. but I definitely will be making this one soon...

the pie was good.. a tad sweet but still good... I wanted to mention that I reduced the flour to 1 3/4 cup flour and increased the oatmeal to 3/4 cup

Sounds like an apple crisp. I make it in a glass casserole dish I have. It's a favourite of mine. I use less flour as well, and more oats. AND I make more crumbs for the top. There is little that's healthy about this, so why not go all out? Warmed up with vanilla ice cream....Mmmmmmmmmmm
We had some chicken chili I took out from the freezer. Was nice to free up another plastic container and make room in my freezer! I don't know what I'm going to make for supper. Maybe my idea from yesterday which was a quiche. Maybe a spinach quiche.

Okies, rare contribution. My beloved mamma in law (who is actually a lovely woman and dear friend) bought us some "fake chorizo" from Safeway. It's vegan, and I had almost thrown it away thinking it would taste like sh1t; but oh surprise, it is the yums. So, if y'all like spicy sausages [insert Mexican sarcasm here] but don't like meat, go get some of these babies. Good as grilled sausage; even better when crumbled and added to pizza or pasta sauce.

hmmm not sure exactly what dinner is going to be yet.. I am leaning towards italian chicken..
just throw some chicken (breast, thigh etc) and onion in a baking dish and then mix together some tomato sauce, italian dressing and oregano and throw that over the chicken, you can add zucchini if you want too and then you bake that in the oven till chicken is cooked and then you serve it over pasta.. oh and you can add Parmesan cheese to the chicken stuff after it is baked..

Today is one year since my husband arrived.

I baked a pumkin cake w/ cream chese icing last night. (Yummy, not too sweet, not too moist...I'll post recipe too.) I'll 'decorate' it today, but here's a pic.

Pumkin Cake
2 cups sugar
1 1/2 cups oil
4 eggs
3 cups sifted flour
1 cup chopped nuts (I use 1/2 pecans-1/2 walnuts)
2 tsp baking soda
2 tsp salt
3 tsp cinnamon
2 tsp nutmeg
1/2 cup milk
1 can pumpkin
Combine sugar, oil & eggs; beat well. Sift dry ingredients and add to first mixture, continue mixing. Add milk, nuts and pumkin mixing well. Bake at 300 for one our in 4-9" pans.
Icing:
10 oz cream cheese
1 stick margarine
2 1/2 cups powdered (confectioner's) sugar
3 tsp vanilla
1 tsp cinnamon (optional)
Soften cream cheese and margarine, add vanilla & sugar, beat until blended.
