Well, shamefully, we had a big mac on Tuesday night and pizza last night haha.

We were actually going to have Thai food last night - but they have gone on holiday so closed the restaurant until next week laughing.gif

Tonight - normal food!!

We had turkey burgers last night with tater tots.
Tonight we're having crab cakes, an asian salad, and corn on the cob

and I think it would be good to brown the meat a little before throwing it in the crock pot...

But tonight going old school, as my gran would say. Had a main meal for lunch so a simple corned beef, mustard and cheese s/w for dinner with some fruit.

UGH...stop with the pictures...they make me SO hungry!! I LOVE them with sour cream. I make my own when I have the time. Make about 10 doz. at a time. I haven't made them since I came to the US though. Mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm

yeah I am not a big fan of cottage cheese either.. but you can put almost anything in them.. I prefer the ones that are filled with mashed potaotes and cheese..

I grew up with the cottage cheese ones, so they are my FAVORITE! But I can make do with the potato ones! Mmmm... I really think I need to try my hand at making them from scratch. I've made them with my Mom and Grandma several times, but never all by myself!

Gene came home from work very queasy and he was sick all evening, and all night. I didn't make up what I was going to. I'm not a big fan of fussing for myself, so I just had a bowl of cream of wheat, with brown sugar and milk. mmmmmmmmmm We'll see how he feels when he wakes up today, he's sleeping in as he didn't sleep much of the night. There is a flu bug going around his workplace..they call it the creepy-crawlys? ick! tongue_ss.gif

Blah! Well I hope Gene is feeling better today Carla.

We made stew for dinner last night - it was really good. Also had Pillsbury italian bread - it's the only Pillsbury thing I have purchased since living here is ze USA - because I don't really like their stuff generally - however - and again, I have only tried the one thing so far - it tastes good.

I found the rolls or whatever of theirs, purchased in Canada, always tasted like baking soda.

we were bad last night we ordered pizza from the deli down the street.... we never tried it before and we will never again tongue.gif it was ok and better then most places but the pepperoni was almost inedible... the crust was good though..

this is basic one.. haven't tried this recipe but it looks similar to the one I have used in the past... this is for a big batch.. you might want to half or quarter the recipe...

Pierogi (Or Perogy) Cheese and Potato Filling

SERVES 70 -80

* 8 medium potatoes (my favourite to use are Yukon Gold)
* 1 large onion, chopped
* 2 tablespoons butter
* 1-1 1/2 cup mild cheddar cheese, shredded
* salt
* pepper

1. Peel and cut up potatoes, boil until tender.
2. While potatoes are cooking, sauté onion in butter on medium heat until translucent and slightly browned.
3. Drain potatoes, slightly mash them, then add sautéed onions, mash slightly more.
4. Add cheese 1/2 cup a time and salt and pepper, mixing thoroughly while mashing potatoes.
5. Depending on your tastes, you may want to add more or less cheese, as well as salt and pepper.
6. You don't want to over-mash the potatoes, they are easier to work with when they are "roughly" mashed rather than whipped or creamy, although that may just be a preference among my family.
7. I usually can fill between 70 - 80 perogies with this recipes depending on size of perogies.

this dough recipe looks good....

Pierogi Dough Recipe

43 pierogies (approx)

* 1 cup flour
* 3/4 cup cake flour
* 2 large eggs
* 3/4 teaspoon salt (can use 1 teaspoon)
* 1/4 cup water
* all-purpose flour (or as needed)

1. In a large bowl stir together both flours.
2. Make a well in the middle flour and add in the eggs, salt and water, then stir together with a fork without touching the flour.
3. Continue stirring gradually incorporating the flour into the well until a soft dough forms.
4. Transfer the dough to a lightly floured work surface, and knead for about 7-8 minutes until smooth and elastic (adding ONLY as much additional all purpose flour as needed to keep the dough from sticking, the dough will be soft!).
5. Place the dough into a shallow bowl or on a lightly floured plate and cover with plastic wrap for no less than 30 minutes up to 3 hours (you may refrigerate overnight but bring the dough to room temperature before using this is important or the dough will be tough!).
6. Roll out and cut into circles.


# Cut each round into 8 (3") circles (using a glass works well).
# Place about 2 tsp filling on each dough circle.
# Moisten outer edges with water and fold dough over to close.
# Seal edges by pressing gently with the back of a fork or pinching together with your fingers.
# In large pot, bring salted water to boil.
# Cook 12 pierogi at a time, reducing heat to a gentle boil; boil until pierogi float to the surface (about 5 minutes).
# Remove with a slotted spoon, drain on paper towel and transfer to serving dish.
# Repeat with remaining pierogi.
# At this point you can serve them warm, freeze them for later use or fry them in butter over medium heat, lightly browning both sides before serving.

yeah , making them is a lot of work.. so i don't make them very often.. I think the last time was a few years ago....

sometimes you can buy them already made and frozen at the grocery store..

These pierogies were frozen - potato and cheese kind- but they are quite good. You can also boil them if you don't want to pan-fry them and are worried about extra fat.

Last night I did stuffed zucchini again - had another 18" monster zucchini:-). Browned ground beef with onions, added the chopped zucchini innards scooped from the shell, added garlic chopped and then the rest of the left over vodka cream spaghetti sauce from the night before and threw in a small package of corn bread mix, hehehe. Spread it in the scooped out zucchini, topped them with sliced fresh tomatoes, then baked them at 350 for an hour. Joe and I had left overs for lunch and there is still half a zucchini half for later:-).

Tonight I'm doing something simple - salad plates (ok, took a quick break from writing this message to put the potatoes on for potato salad). So, Blue Cheese Potato Salad, devilled eggs, sliced cucumbers and tomatoes with cottage cheese salad, cold ham and fresh pumpernickel bread.

I don't do measurements well so I will approximate - here is the Blue Cheese Potato Salad:

4 potatoes cubed, boiled until soft,
add in 1 tbsp balsamic vinegar, 2 Tbsp parsley; 1 tabspoon Mrs. Dash's spicy blend; 1/2 tsp celery seed; 1/4 tsp fresh black pepper;
add 1 small can sliced water chestnuts; 1/2 cup diced celery; 1/2 cup chopped green onion or chives,
Add Blue Cheese salad dressing - enough to blend everything together nicely without being too wet
Stir together
Sprinkle with paprika to serve.
Makes 4 servings; can be served warm or chilled.

we had chicken drizzled with olive oil & Montreal (YEAH) steak spice and then b'bqued, corn on the cob, chibatta bread and chevre cheese.. mmmmmm

Joel grilled pork chops last night and I made a homemade mac n cheese dish. We had mixed veggies to round off the meal. It was the first time since Wednesday that I felt like being off the sofa and actually doing anything! Just because outpatient surgery is quick doesn't mean the recovery time is. smile.gif However, it has been nice being sofa bound...I've been pampered and treated like a princess. As for supper tonight...no idea. Joel and Anna are going to the supermarket later...we'll see what they bring home. biggrin.gif

Thanks for asking Carla. smile.gif I had a laparoscopy on my ovaries and uterus and he went through my tummy/belly button area. The dr found cysts and endometriosis. I knew about the cysts but the endometriosis was a surprise. I have Polycystic Ovarian Syndrome and I've had this surgery twice now. I'm feeling better, enough to get up and move around and do a little cooking. Can't do any shopping though...too much walking.

OOOOH Karen.. i had the same procedure same results.. I have POS as well.. It hurt A LOT that little incision and did for quite some time. It is because they go through so many layers when they make that incision.. it's amazing how much that little cut hurt (and did hurt for quite some time).. Thoughts go with you as you heal my friend.. keep that pillow close (I hugged a pillow for quite some time- the stability of the pillow helped me a great deal).. star_smile.gif

smile.gif Thanks E...believe me, I'm staying as immobile as I can and hugging that pillow close. Thank goodness school doesn't start back for another two weeks. Whew! It IS amazing how these three little cuts can hurt so bloody bad! The worst one is the one in my belly button. The other two are healing nice and barely hurt at all...just itches. Oh well, I am loving all the pampering! biggrin.gif

I KNOW!!! Crazy huh?? I didn't expect that.. but thankfully it is less intrusive than a lot of surgeries. I once had "exploratory" surgery done on my belly (they thought I had cancer at 21) and i had 20 some staples in my belly for that incision.. THAT took a looongggg time to heal for sure!! UGH.. hang in there girl!

Well for dinner tonight I decided to make chicken with dumplings.

Basically I cooked some chicken, green onions, green pepper and potatoes, added a can of Asparagus soup. That's in the baking pan in the fridge now so that when we are ready to eat I will just make up some bisquick mix, drop that on top and voila'!

Ok, voila'! it did not.

I have made this recipe before (granted it was in Canada but stilllllll).

The bisquick didn't cook through and was a bit doughy on the bottom - yuck.

Funny thing is, my Husband really liked it, he even had a second helping laughing.gif

Our beef brisket was good last night, but was done a little too long on the grill. I had bought one of those smoker bags. It seemed to work okay, but not enough smoke flavour for me. It was 100 degrees yesterday, and I think this affected the grill as well, screwing up the temperature gauge, so it was hard to determine when we turned it down, how hot it actually was.

Isn't it funny when it is SO hot outside that it messes up your grill thermostat!!!! Not funny haha!

prolly some kind of chicken here today...

yesterday we had chili dogs and curly fires.. yum... i had been cleaning out my cupboards all day and just wanted to make something simple...

Au gratin potatoes (out of a box) and will use my foreman to grill some turkey polska kielbasa....don't feel like really cooking tonight. Maybe make a quick salad to go w/ dinner.... but if I won't be so inclined, its not the end of the world. We're East European, we'll eat pickles. tongue.gif

ok we are going to have marinated chicken drumsticks.. I marinated them in this mustard, honey, lemon juice concoction and then I am hoping to drill them.. our big grill is still out of gas but I am thinking of using our little portable grill.. these drums taste so good when they are grilled...

Have to deliver supper to friends tonite. The wife is suffering from an auto immune disease and is unable to really cook etc., so we've made supper for them for tonite. THEY are having chicken, rice & salad smile.gif

Sure, Marilyn - we have a surfeit of cucumbers and tomatoes - so the more the merrier! I sent Karen and Joel home with a watermelon, some okra, some cucumbers and some herbs in addition to the cat and her belongings - and I still have about 5 quarts of cucumbers on the counter . We haven''t harvested yet today, either - big thunderstorm going on right now.
