We went to Wendy's last night...it was good. Not sure about tonight though. We really need to go food shopping as my creativity is being stretched mighty thin these days! What I thought about doing was creating a menu and shopping for what we need to cook each meal. *sigh* Trying to find ways of cutting expenses is also a creative process too!

Nota bad idea at all - when it was just me and my daughter, we kind of flew by the seatof our pants. I planned ahead, but not always for a specific meal. It actually got pretty boring - basically I made the same 10 things with like frozen pizza and KD thrown in every so often
My mum has always been the one to sit down down each Weds night to look at the grocery flyers and plans a week's worth of meals based on what's on special. She's a great cook and has a variety of yummy things. She makes her list and even posts the dinner list so that if you want to know what's coming up she points you to it! I guess at some point she got sick of us asking

Pizza for dinner tonight, Pizza Hut, stuff your crust for free! So that is what we are having, have never had the stuffed crust before - but I'm going for the cheese this time. Since I had the pizza with no cheese that one time and this one will have extra cheese - it balances out....right?

I think we are just going to have appys tonight .... have to go to the store and pick up some ingredients for appetizers I am making for Super Bowl tomorrow .... tonight, I think I might try a couple other recipes just to see if I should add them to my recipe list.
For tomorrow:
7 Layer dip and tortilla chips
salami and roast beef roll-ups (for the salami, I mix cream cheese with chopped pepperocini peppers. For the roast beef, cream cheese with horseradish, then I stuff the meats with the filling, roll up and cut into bite size pieces.) ... I LOVE these and it SUCKS I can't eat them now, but am making them for hubby.
Tonight, I think we will have veggies and dip (maybe a dill dip), clam dip (with veggies for me and of course chips for the guys) and a hot Mexican cheese dip with ground beef. Notice a theme here ... I am trying out lots of dip recipes

It should read:
Going to make a slow cooked dinner tonight, I'll be prepping all the garden vegetables this morning to make sure they are ready to go in, once that is done i'll pick out some spices to add.
Need to get together the wet ingredients after that. After i've browned the roast etc etc etc.
It does sound too easy, you need to work on that
Oh and the pizza hut pizza last night was just awful. We ordered 2 medium, first was hawaiian, I did eat a piece after scraping off most of the topping and the second was the stuffed crust pepperoni, which wasn't quite as bad.

Ok, good idea, we are going to have spaghetti with garlic bread for dinner.
When I make spaghetti I just use a jar of sauce - will probably add some peppers and onions - but no meat. It's the 'vegetarian' meal. I used to put ground beef in it, but I don't anymore.

last night we had a huge plate of nachos, with red peppers, onions and jalapenos and 3 kinds of cheeses... soo good, but definetly a meal for special occasions only.. tonight Im making steak sandwiches...Tyler Florence recipe
The Ultimate Steak Sandwich
Tyler Florence
Gruyere bechamel:
1/2 stick unsalted butter
3 heaping tablespoons all-purpose flour
2 cups whole milk
2 cups grated Gruyere
Kosher salt and freshly ground black pepper
1 tablespoon prepared horseradish
Arugula mayonnaise:
1 bunch baby arugula
1/2 lemon, juiced
Kosher salt and freshly ground black pepper
1/2 cup mayonnaise
Steak sandwich:
2 soft hoagie rolls
Extra-virgin olive oil
1/2 pound rib-eye, finely sliced
Kosher salt and freshly ground black pepper
1 recipe Fennel Slaw, recipe follows
Make the bechamel cheese sauce: Melt the butter in a saucepan over medium heat. Add the flour and stir constantly to incorporate - you do not want any color. Gradually pour in the milk as you stir, and whisk out any lumps. As the mixture thickens up continue to stir until it reaches a boil - this ensures the flour is cooked completely. Dump in the cheese and stir for another minute until the cheese is completely melted. Stir in the horseradish and season with salt and pepper, then set aside to keep warm.
Make arugula mayonnaise: Put arugula in a food processor with the lemon juice and salt and pepper. Top with mayonnaise and process until well combined. Give it a taste and adjust seasoning if required.
Prepare the steak: Take the finely sliced steak and shingle it out into 2 portions on a clean cutting board lined with parchment. Put the shingled meat between 2 pieces of plastic wrap and pound out using either a saute pan or a meat mallet. After first pounding, remove the plastic wrap, fold in the edges, replace plastic and pound the meat some more. Store wrapped in plastic in the refrigerator. Now the meat is ready when you want to cook it.
Heat a large, flat grill-pan over medium heat. Split hoagie rolls in half, drizzle with olive oil and place onto griddle.
Take the meat out of the refrigerator. Peel off 1 side of the plastic wrap and season with salt and pepper. Put this side down in the pan and then quickly peel off the other side of the plastic wrap and season again. Cook slowly in the pan until juicy and tender and just past pink in color. Turn the meat over and then fold with some of the cheese sauce.
To serve, smear each half of the roll with arugula mayonnaise. Top the bottom with the steak and cheese, then lay a scoop of fennel slaw over the top.
Fennel Slaw:
1 large fennel bulb, fronds removed and halved
1/2 lemon, juiced
1/2 cup mayonnaise
3 heaping tablespoons sour cream
1 bag coleslaw mix
2 tablespoons chopped fresh tarragon leaves
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
Finely slice fennel using a mandoline, or the grater attachment on your food processor. In a large mixing bowl combine the lemon juice, mayonnaise, and sour cream and stir to combine. Add the finely sliced fennel and coleslaw mix, herbs, and olive oil and fold together. Season with salt and pepper.

Zuchinni Sausage Squares
1 pound (or less if I have it) pork sausage, breaking up like you would for hamburger. (I use a spicy sausage)
Drain and wipe out pan.
Fry up in a little olive oil (or whatever the heck you have!) :
3 medium sized zuchinni (or more if you'd like) sliced thin (like for scalloped potatoes)
1 small onion cut up
1/2 tsp. basil
1/2 tsp. oregeno
salt and pepper to taste
Prepare 9x13 inch pan. Roll out one can of Pillsbury Crescent Rolls, pinching together seams. Line the pan, and up sides a little. Spread a tablespoon of Djon (I've used regular mustard) on top of the crescents in pan.
Pull zuchinni mixture on top of crescents. Scatter cooked sausage on top of zuchinni mixture. Shake 1 1/2 cup of shredded cheese over top. (I use Sharp Cheddar).
Pour 3 beaten eggs over top.
Bake in 350 degree oven for about 18-20 min.
Cut in large, or small squares and enjoy!
Just wanted to say that when I read this recipe it made my mouth water...so I made it the other night. It was yummy delicious!

I definitely will make this again.....may even try it w/ turkey sausage.
