Usually some sort of sandwich...a couple days ago it was just way too hot to cook so I made tuna with dill pickle relish and red onions mixed in... mmmm

My husband is working late tonight, so we will be having Vietnamese soup when he gets in.


Ratatouille tonight - while we have lots and lots of cucumbers, the other vegetables are coming in strong too - so fresh eggplant, peppers, zucchini, yellow squash - and I'll see what else I find to throw in:-). Too bad cucumbers don't taste as good cooked - but I might just try adding one to give it a try.

wasnt feeling well for Canada Day or 4th of July...so we didnt do much...I was crampy, crabby, crappy, and cranky!...LOL

so for a Belated Canada Day celebration I think Im gonna roast a chicken and make one of those packets of Swiss Chalet dipping sauce for Barry, get him a can of Canada Dry Ginger Ale and attempt to make a Maple leaf cake (with strawberries)...will post a pic of the cake if it turns out well..LOL

also have to say that we found a pretty good substitute for Timmy's Ice Capp's (and weve tried alot of "iced cappuccino" products in the last few weeks)..its the "Original" Cappuccino Blast from Baskin Robbins...only problem is that they are double the price the Ice Capps were..so we only get them on Saturdays when were out going to yard sales...If you try them make sure you get them mixed with Vanilla ice cream..I dont get the whipped cream or cinnamon on mine... If you go to the Baskin Robbins websight and leave feedback for them you will get a $1 coupon you can print off..

dinner tonight is anybody's guess... I don't feel like making anything.. I just spent the last hour and half or so hobbling around at the laundromat tongue.gif

i am leaning towards mac and cheese but not sure what to serve with it.. hubby will want some kind of meat... unsure.gif oh, maybe those chicken finger things... yeah that might work good.gif oooh, and I just bought some Italian bread crumbs last week, so i don't have to fuss around making my own.. yeah that's it... mac and cheese and chicken fingers... good.gif

Quiche was good last night. Sent leftovers with Gene for lunch. No idea what we're having tonight.

Gosh, that sounds really good to me, too. Actually, it reminded me of cucumber water. Sometimes I will slice cucumbers into a pitcher of water and let it sit for a bit. It's really refreshing.

Last night we had potatoes, yes, just potatoes.

Mike hasn't been feeling good for a couple of days and not really eating much, so I decided potatoes are that bland food that someone might eat, which he did. I made regular and sweet potatoes and some oven fries.

Steak tonight since I took it out yesterday.

So, we have been busy little bees and have not had anything special since the meatloaf. We went to the Irish pub for burgers the other night. Best burgers I've had since I moved. Last night I finally got to sneak in the pizza I've been craving for the last few weeks. Hubby wasn't thrilled but I was happy as a clam. laughing.gif I am gradually using up everything in my fridge as we start counting down the days until we leave on our hols. We're going to be out and about this afternoon, so we'll probably just stop in to Pollo Tropical for our dinner.

I think they have a Pollo Tropical at the Seminole Mall? We drove by there a few weeks ago and I said to Mike ohhh that is the place that krikit said is good!

Yes! Well, almost. It's in the same area as the Seminole Town Center.... the next street over in the World Market plaza. It's a nice one. Their Caribbean fajitas are awesome. That's what I'm having. kicking.gif Actually, that's probably what both of us will have. You get an awful lot and I can't eat all of that. Unless he orders his own stuff, then he can have my leftovers for his lunch tomorrow. lol

we had the mac and cheese and chicken fingers.. and some steamed peas... mmm, it was yummy... I prefer that kind of meal to a 5 star fancy meal tongue.gif

Last night we had crunchy pea salad, smoked sausage, and garlic cheese sauced pasta shells. Tonight I might get something from Costco to heat up. Maybe pizza? We're going away tomorrow for a few days, so I don't want leftovers in my fridge for all that time, and we'll be eating out on our outting, so don't want to eat out tonight. I dunno, I'll figure something out! yes.gif

What puts the crunch in a crunchy pea salad?

I don't actually like peas - well that's not true, I like fresh peas - not canned or frozen or cooked good.gif

Pea salad is one of my Moms absolute favorite dishes.

The steak and rice for dinner last night was just awful, took the wrong steak out tongue_ss.gif

Heres one Marilyn its got mexican, cheese, and easy as opening cans. Ill have ya all eating mexican yet good.gif

Mexi "CAN" casserole



Brown 1 to 2 pounds of ground beef in a deep skillet. Salt and pepper to taste and if you like onion in your receipe add onion at this time also. Drain thoroughly then add:

1 can Cream of Mushroom Soup
1 can Cream of Chicken Soup
1 can Mild Enchilada Sauce
1 small can chopped green chillies
1 can Milnot

Mix well and bring to a simmer . . . . .

Add:
11/2 pounds of velveeta cubed for easy melting.

Bring back to a simmer . . . .

Prepare a 9 X 13 baking dish by placing broken Dorito=s (or your favorite brand) chips in the bottom of the dish. Pour the above mixture on the broken chips. Top with a nice layer of chips on top and garnish with shredded cheddar cheese. Bake at 350 until cheese on top is melted and all is bubbly.

Note: This can be made ahead and refrigerated or frozen. If you are going to do so - wait to put the last layer of chips and cheese on until you have heated the casserole thoroughly in the oven at 350. From the fridge it usually needs to bake about 45 minutes, then add chips and cheese and bake another 15 minutes. Just make sure its heated through out

Just as I'd predicted, we ate at Pollo Tropical last night and had the chicken fajitas. Yummy. I'm not too sure what we're having this evening. Something quick and easy because we are heading straight out as soon as my husband gets home. I'm thinking hotdogs and mac and cheese? Or maybe baked ravioli and caesar salad. I dunno.

Milnot is a canned evaporated milk ha awwwww try it u might like it good.gif pea salad to us (in Okla) is canned peas, boiled eggs, small chunks of cheese, onions if u perfer blended with mayo, kept cold

here at work the girls make similar to this

PEA SALAD - FIFTIES PEA SALAD

Serves 3 or 4
2 cups of canned peas, drained, or thawed frozen peas
3 to 4 tablespoons finely minced onion
3 or 4 tablespoons mayonnaise
1 to 2 teaspoons sugar
2 tablespoons milk
1/4 to 1/2 cup grated Cheddar* or Cheddar in tiny cubes

Thawed frozen peas will taste better than the canned peas, but then almost anything tastes better than canned peas.

You do not need to cook the frozen peas; they will taste better if you don't. Believe me.

Mix sugar and milk into the mayonnaise.

Stir in the minced onion, thereby permeating the mayonnaise with those delicious onion juices.

Mix the mayonnaise with the peas, stir in the cheese, and serve.

I don't really eat it a lot... when I do buy it usually use it to make corn chowder... but I sometimes grab a spoonful of it before I put it in the chowder whistling.gif

I like creamed corn (though I do the same with it as Marilyn... and sometimes even put it in my chili) and I like tinned peas!!! kicking.gif In fact, we had them the other night with our meatloaf. LOL

Brnidokie, there is no way you will get me to try that recipe. As my mum would say "It sounds like a dog's breakfast." laughing.gif And evap just makes me shudder. But I am interested..... what recipes do your co-workers think are weird? LOL

maybe its not that are so weird, but does make it sound like you eat more (healthy) than we do, of course we fry alot, throw on the potato and gravey, baked beans etc, then there is a large population of the mexican community here so we definatly get that influnce, and that one with all the cucumbers omg they would become pickles for us and noooooo way would one of us be able to eat so many so many different ways. Of course we do the beans and cornbread, the pea salad is a norm, roasts, chicken (but not so many ways) fried or Churches is good ha pork chops, latest road kill we can scrape up (definately kidding here) most of us dont make alllllllll those soups. Next time they comment i will take note and let you know. good.gif But they do definately enjoy shareing, most here with the corns, will combine the whole and the creamy, corn on the cob is a standard also. But that latest one i posted from our radio show this morning allllllllll stated oh good that looks great ha so you see the differences... and i doubt anyone here has every made chowder, for sure not put it in chili ha but its all good this way we learn. So i will try one of yours if you do one of ours ha

My pea salad is a little different than brnindokiegirl's. A lot of the crunch comes from the celery.

My recipe is:

1/2 bag of frozen peas (I use the petite baby peas - Bird's Eye...very tender and fresh!) thawed
1 cup of chopped celery, chopped small
1 cup of chopped green onions
1 can of sliced waterchesnuts ( I use this to make it crunchier)
salt and pepper to taste. I throw in some dill weed as well.
1/3 to 1/2 depending on taste sour cream (I use lite or fat free)

This is very much a cold salad that you want to have the flavours mix in the fridge for a bit. You can throw anything into it as well. It's a cool refreshing summer salad. If you have shelled fresh peas, it would be the ultimate!

I make a salad called overnight salad or 7 layer salad that uses frozen peas.. mmm, I love that stuff...

Hmmm. I have some celery, green onions, and sour cream in the fridge I need to get rid of. Maybe I'll try that. I think I'll throw in some chopped fresh mint as well. And maybe a squeeze of lime, because I have some of those in the fridge also. Though I could always make mojitos. laughing.gif

HERES THE ONE FOR YOU TO TRY

Possum Stew
One possum, skinned, pieced
Couple of onions, potatos, other veggies yer
choice ..chop or slice em ....however
1 can of mushroom soup
2 cans of beef gravy
1 can of water
Tbsp each of pepper, garlic salt

Boil the possum meat in a large pot of water
with a half cup of salt for about half a day.
Pour the water out and add all the stuff to it.
Bring to a boil, then simmer covered 4 to 8 hrs.

Serves 8 (or 1 for a week).
Gravy is good sopped up with week-old bread.
You can eat other stuff with it too.
Drink beer
(TIP: 3 day old roadkill is more tender and
easier to skin)

Possum Stew
One possum, skinned, pieced
Couple of onions, potatos, other veggies yer
choice ..chop or slice em ....however
1 can of mushroom soup
2 cans of beef gravy
1 can of water
Tbsp each of pepper, garlic salt

Boil the possum meat in a large pot of water
with a half cup of salt for about half a day.
Pour the water out and add all the stuff to it.
Bring to a boil, then simmer covered 4 to 8 hrs.

Serves 8 (or 1 for a week).
Gravy is good sopped up with week-old bread.
You can eat other stuff with it too.
Drink beer
(TIP: 3 day old roadkill is more tender and
easier to skin)

ORRRRRRRR someone was wanting Moroccan meals maybe you would like this one:

BROILED STUFFED CAMEL

1 Whole camel (medium size) 2 kg pine nuts
1 Whole lamb (large size) 2 kg almonds
20 Whole chickens (medium size) 1 kg pistachio nuts
60 eggs 110 gal water
12 kg rice 5lb black pepper

Skin, trim and clean camel (once you get over the hump). Boil until tender. Cook rice until fluffy, Fry nuts until brown and mix with rice. Hard-boil eggs and peel. Stuff cooked chickens with hard boiled eggs and rice. Stuff cooked lamb with chickens. Add more rice. Stuff the camel with the stuffed lamb and add rest of rice. Broil over large charcoal pit until brown. Spread any remaining rice on large tray and place camel on top of rice. Decorate with boiled eggs and nuts. Serves friendly crowd of 80 - 100

How much does it serve an unfriendly crowd? laughing.gif Oh, and when I read "Fry nuts until brown" I had to go back and make sure it wasn't referring to camel parts. laughing.gif

We ended up eating at my favourite restaurant, Sushi Katana, because we were right by there picking something up. I had the same thing that I have every single time.... little appetizer portions of seaweed salad, shumai (shrimp dumplings) and salmon sashimi. My husband had the shrimp and scallops. Delicious, as always.

Tonight, I have no clue. Still working on getting rid of whatever's in the fridge. Plus, my husband will probably end up working late because the poor thing is trying to wrap things up so he can go on vacation, and I know how hard that can be. Can't wait to get him out of there for some rest and rejuvenation. They're killing him.

Hey jodee,

We did something similar - I made omelettes with zucchini (no surprise there), okra, red peppers all from the garden and cheese, with toast, and a cucumber, tomato, feta cheese and balsamic vinegrette salad. Kind of like breakfast for dinner here too:-).

I am hoping the hubby isn't too tired when he gets home because I want to go to Applebees.... if he is tired we will just have the chili dogs we were going to have yesterday...



oh and by the way the Chinese food we had yesterday was so yummy.. hubby got me beef and broccoli and sweet and sour chicken...
