I dont have a clue what supper will be either. I really dont feel like cooking but i know the kids will want real food not fend for yourselves food. Well the younger two would love it but not the older two.

sometimes dinner ideas will just hit me as I am lying in bed in the morning waiting for the alarm to go off and other days I have no clue and other days I don't feel like cooking at all tongue.gif

I do have my camping menu figured out...

Dinner Friday night will be BBQ chicken pizza.. (going to fry up the chicken, bell pepper and onion before we go)...

Dessert probably smores

Breakfast/Brunch Saturday.. egg mcmuffins and fruit salad (bunch of non-acidic fruit cut up and dressing is yogurt (I like to use raspberry) mixed with some cool whip)

Dinner Saturday - Hamburgers and corn on the cob and banana boats for dessert...

WOW Ideals come to you while lying in bed must be nice. I can start figuring out supper the night before and still be clueless at 4:00. Not sure how you can plan ahead for a camping trip. I just pack everything and figure it out later.

I wasnt always like that though and every now and then i can figure out a weeks worth of meals and make it all in one day even freeze it all then just take it out when i want it. But years with an ### of and ex who was never happy ruined my love of cooking. When i was finally free the kids and I had loads of fun making stuff we couldnt have before but the fun seems to have worn off. Well i better get back to thinking of supper cause its 3:30 and i'm still lost to what to make.

hey I didn't say that happened all the time... just once in a blue moon an idea will pop in my head but most of the time I have to hem and haw all day trying to figure out what I am going to make..lol

I just got back from grocery shopping for the camping trip and I thought maybe the grocery store might help me figure out dinner but nope... unsure.gif still have no clue...

I have to plan ahead for camping trips because I have limited storage space so I have to know what I am making and only bring that...

I once found some rhubarb in the local Kroger store - it was labeled Bok Choy! Seriously! So, I bought it - the price was right - and I enjoyed several days of stewed rhubarb. A local nursery had rhubarb bulbs on sale a few weeks ago so I picked one up and will plant it next fall. I have no idea if it will grow here or if it is too warm. We will see!

Dinner was teriyaki meat balls stir-fried in mixed oriental vegetables (frozen) supplemented by fresh zucchini, okra and eggplant from the garden, served with rice.

We spent part of the day in Atlanta at Scottish Rite Children's Hospital...so on the way home (after we also found a car for Joel) we stopped at The Varsity. This is heartburn heaven!!!! Their chili dogs are legendary. Then we topped it off at Sonic, treating Anna to an Oreo Blast (similar to a Dairy Queen Blizzard).

Hope everything is okay Karen, since you mentioned spending part of the day at the hospital! And Joel found a car eh? What did he find!?

We found an awesome deal...a 1987 Vovlo 240 DL for $700 cash. The guy just wanted to get rid of it. One owner too. We lucked out on this one, even if it has a lot of mileage. It's mainly to get from point A to point B but Joel is rather proud to have his own wheels...no more carpooling!

Thanks for asking Carla...things are looking up for our Anna. I'm hoping this is our last trip for a while to Scottish Rite (Children's Healthcare of Atlanta Hospital for Children). This was our third trip this month and it's a good hour and a half drive one way. Anna was recently diagnosed with epilepsy and her pediatric neurologist is in Atlanta across from the children's hospital. Anytime she needs tests run, this is where we have to go. This last one was a toughie...but the results were what we figured they would be. *sigh* Anywho, between the doctors, the staff, and us, she is getting the best medical care available in the U.S. CHOA is one of the top children's hospitals in the country and we are fortunate to live so close.

The NA version blends everything into the soup in one giant batch.... tomatoes, peppers, etc etc. The Spanish version came as a clear and perfectly flavoured broth, with different vegetables and something-else-that-I-can't-remember on the side that you added as you wish.

So..... last night we had Ma Po Tofu instead of Thai lettuce wraps. Guess what's for dinner this evening? laughing.gif

I don't know what's for dinner, as you guys know, we have grilled cheese when cooking is not interesting - which is good since I like them a lot.

Do you guys have a staple you use when no one is interested in cooking?

usually hotdogs or mac and cheese with hotdogs in it laughing.gif

but we got tired of hotdogs so we bought some frozen hamburger patties and we have those when I don't feel like cooking...

Dinner is anybody's guess tonight.. I have to drag hubby to Walmart today after he gets homes from work to get his sunglasses fixed.... so maybe we will just eat out.. who knows....

Hmmm. Can't really think of anything. Unless you count Mike's BBQ. But I can only be interested in not cooking on a Thursday Friday or Saturday because those are the only days he's there. laughing.gif

We ended up having Kraft dinner and hot dogs last night. And i didnt have too cook it.

Well tonight i wont get so lucky, My hubby (love that i can say that now) is working tonight. But at least I know what were having. Its taco tonight and I even know what i'm making tomorow, lasagna my daughters favorite. I havent told her yet.

I think chicken would be a staple in this house. But not really unless I count cereal cause its pretty much the only thing that wouldnt have to be cooked.

Well, I have a boneless chuck roast marinating in balsamic vinegar (only vinegar I have) with olive oil and salt. I suppose I'll roast it in the oven...slow cooked. Not sure what veggies I have in the freezer...homemade bread. This roast is big enough that we can have it tomorrow too, or I can pour some BBQ sauce on it once I've pulled it apart for tomorrow.

Tonight - southern barbeque over kaiser buns, with fresh cucumbers, tomatoes and feta cheese salad.

Our staple when we don't feel like cooking means that Joe puts hot dogs on a bun or bread, covers them with canned chili and then sauerkraut and sliced onions and pops it the microwave. If I don't want to cook I generally just make omelettes using whatever ingredients I have as a filling - quick, easy and nutritious.

Roast pork with gravy, carrots, and bowtie pasta with powdered white cheddar cheese (a homemade version of KD).

And since this is the food thread, let me say that my husband and I found the one BAD Tim Horton's sad.gif We took a trip to Maine over the weekend. On the way, hubby was super excited because we saw a Timmy's. So, he ordered a double double and the girl looked at him like he was nuts. After he explained what he wanted, he got his coffee and I got an iced coffee (caramel flavor). Both coffees were bad .... bitter, and bland at the same time. Such a sad day for us.

I have had the same experience with Tim Horton's in Michigan - the coffee didn't taste the same, nor did the sandwiches - or the soup, or anything! I am not sure why they are different - different suppliers, maybe - but yeah, they aren't nearly as good as the ones in Canada.

I bought some Salmon Burgers from Costco which I think are an excellent "staple" for those times when I'm not interested in cooking. I love cooking, so it's usually not a problem, but the few times I've been really busy during the day, and just didn't "plan" anything, Gene offers to order in pizza, or we go out to eat.

Sometimes I'll do like Kathryn, and make up an omelet, with whatever I might have on hand. Or I'll make up some quick vegetable soup, and make one of those spinach sandwich loafs. I always have puff pastry, and spinach around. So, that's one of my "staples". laughing.gif

Last night we had a rotissaire chicken I bought at Costco. I sliced up a breast from it. We had whole grain bread, olives, tomatoes, cheese, lettuce, pickles, condiments and tabouli salad. Nice light coooool supper.

No idea what I'm going to have tonight!

Yeah, definitely the Timmy's are different in the US. Kinda like Wendy's. In fact, they're owned by the same company aren't they? lol

OH! Speaking of Timmy's!! We have family emails back and forth to keep up because we're spread out all over the place... New Zealand, Vancouver, Ontario, England, US. Well, my cousin in Vancouver emailed about an incident at Timmy's and my cousin in England (who had moved back there from Vancouver about 5 years ago) replied "Who's Timmy?" My aunt (her Mom) replied:

"Oh Sandi. Please stop letting the family down so publicly...Timmy's aka Tim Horton's..Get it??LOL..LOL.. LOL How quickly you forget."

I thought that was really funny. laughing.gif

Anywhoooo..... back to topic. Our lettuce wraps were really good last night. We had them with soup because it was raining here. I do not have a plan for this evening. I'm still jonesing for a pizza and my husband is still saying he doesn't want one. So.... yeah. Maybe I'll make a pizza. tongue_ss.gif

All good non-cooking, kind of cooking, suggestions. What we ended up having last night was - pizza hut pasta! I had also made a cake, put cherries in it, it was rather good and this was also way too much food!!

what really sucks is that hubby got off early from work yesterday.. he was home by 3pm ... now watch he won't be home till 5 today... and it is about a 2+ hour drive to the campground.. I don't want to get there when it is dark..

Wednesday night I made linguini with clams and prawns in white wine. I still dreamt of it last night!

I can't cook for the life of me, but something came over me and I just winged it and cooked everything according to taste.

I can't believe I did it. Hubby gobbled it up which made me so happy!

pizza! Start with a frozen supreme pizza, then added banana peppers, mushrooms, zucchini, green chilies, tomatoes, lots of spices and lots more cheese! Good stuff:-).

We ended up having the lasagna that night. laughing.gif With caesar salad and garlic bread. Last night we had steak with broccoli, mushrooms and onions, and parmesan garlic tomatoes. I think tonight I am going to make pork chops with sweet potato and broccoli. And maybe some other veg that I can't think of right now.

Just put on roast for later this evening

TO DIE FOR CROCK POT ROAST

1 beef roast, any kind
1 pkg dried brown gravy mix
1 pkg dried italian salad dressing mix
1 pkg dried ranch dressing mix
1/2 cup water (no salt needed here in fact you may wish to use half the Ranch dressing mix to cut back on the saltiness)

Place roast in crock pot
mix the dried mixes together and sprinkle over the roast
pour the water around the roast
cook 7-9 hour

I also added the potato and carrots so will let you know later how it comes out, seems easy enough and thats what i look for ha

good.gif I just wrapped up a roast for dinner tonight too. I added some stew spice mix, bok choy, garlic and onion to it, wrapped it all up for cooking later. Also chopped up some green and red peppers and squash and will get some potatoes ready later and roast all them them as well.

Cucumbers. What's for lunch . . cucumbers. What's for breakfast, lunch and dinner tomorrow - more cucumbers! Oh, and some zucchini and tomatoes thrown in. I am running out of cucumber recipes and neither of us really care for pickles - still have 4 jars that I made last summer left! So, cucumber soup, cucumber salads, cucumber sandwiches, cucumber snacks - we've done them all, but does anyone want to share some of their favourite cucumber recipes? Thank goodness they are not fattening because of the number that we have to eat!!! and thank heavens the zucchini plant isn't as prolific as this one cucumber plant! tongue.gif

(Oh, in case anyone was wondering - drying cucumbers doesn't work - I tried it last year- they taste horrible!)

I like my cucumbers straight up and uncomplicated. Salted, peppered, miracle whipped and placed in between two toasted pieces of bread. or sliced up with onions and marinated in red cider vinegar. So good as a side dish to grilled steak. Or blended up as part of a gazpacho soup. that's all I can tell you. smile.gif

Well I had it easy all weekend I made enough lasagna that we ate it last night and finished it off tonight. Now as for Tomorow I guess i better start figuring that out.

Can't help you with the cuccumbers the only way I eat em is sliced with a bit a salt.

Speaking of cucumbers... I am having cucumbers with Australian Murray River flake salt. Also a couple of beers. Tonight's sorry excuse for dinner is unfortunately pretty typical and perfect evidence that I should NOT be living alone tongue.gif

In contrast, dinner with my baby is generally quite involved... we often get pretty carried away with hours of complex prep work and come up with some really impressive stuff!

hehehe, well, I did break out some tinned ham, some left over chicken legs from last night, some cheese and some sliced tomatoes to go with those sliced cucumbers:-). Sigh - 1 down - 29 more to go from today - and more on the vine outside. Who knew one cucumber plant would be so prolific!?

my grandma made the best pickles.. people would come and buy her pickles from all over the place.... they would even try making them and they just wouldn't come out the same.. so they figured it was the well water she used so they would come and get the water but it still didn't work... lol I remember once I almost at a whole jar in one sitting blush.gif

yesterday was kind of crazy meal wise because we just got back from our trip and stuff..

but for dinner I made myself this yummy thing I kind of invented ... I took a gordita ( a kind of thick tortilla) and put some process cheese slices and tomato slices on it and threw it under the broiler for a bit and then I sprinkled with some salt and pepper and ate it with some ranch dressing on the side.. mmmm yummy.. might make myself another one today...

Sounds addictive!

We had roast for dinner - I have to say it may be one of the best roasts I have ever had - then some roasted squash, potatoes and peppers.

that reminds me I need to take out some chicken.. I think I am going to make Ugly naked chicken (one of hubby's favourites) and some white rice....

Mmmmm cucumbers. You've probably already had/thought of these, Kathryn, but here's what came off the top of my head:
  • Tzatziki
  • Greek salad
  • Sliced cucumbers in a sweet vinaigrette (water, vinegar, sugar) with dill
  • Sliced cucumbers and onion in sour cream with salt & pepper or tzatziki
  • Cucumber sandwiches where the cucumbers are lightly marinated in a mint sauce. If you can't find mint sauce you can make it by sprinkling sugar over the mint, chopping it, then adding it to a mix of vinegar and water.
  • Hollow out core of cucumber and stuff with seasoned cream cheese. You can also stuff them with julienned carrots and/or avocado or shrimp salad or crab or things like that. Kind of like a veggie roll.
  • Vegetable lasagna where you slice the cucumber in lengths and use them in place of the noodles.
There was something else I thought of but my mind went completely blank just now. blink.gif

My husband is working late tonight, so we will be having Vietnamese soup when he gets in.
