Crab Bisque, Sourdough bread, and Green Salad

We went out for dinner tonight - yum! Had an appetizer of an aragula, slivered asparagus, sliced onion and toasted almonds in a lemon vinagrette salad, then broiled lamb (done perfectly!) served with couscous in a chickpea/lemon vinagrette with mint, plus fresh homemade French bread. For desert I had the triple chocolate pleasure of a pot au chocolate (like a milk chocolate pudding), a double chocolate tart and a small piece of chocolate icecream between two pieces of chocolate cake. Yum! Joe had grilled halibut with grilled asparagus and the same salad as me. He had homemade sugared donuts with a coffee cream pudding for desert. It was expensive but a special treat. The symphony afterwards was really good - the Golijov piece was enjoyable, although the guest clarinetist was too much of a ham and kept upstaging his own music with these 'look at me!' type of gestures. Stravinsky's "Firebird" was excellent! A nice way to celebrate both our 4th Anniversary (on the 19th) and my birthday (20th).

I had a craving for a Thanksgiving/Christmas dinner with all the trimmings this weekend so that's what we had last night. And then I made chocolate lava cakes with raspberries and whipped cream. OMG, it was fabulous.

I made chicken soup with the bones so that's what we'll have for dinner this evening.... with some fresh baked biscuits. *slurp*

Fresh baked bread is out of the oven...smelling the whole house up. We're having cubed steaks, pan seared with sauteed Vidalia onions, smashed taters, green beans and a salad...along with that homemade bread. biggrin.gif

Tonight is kind of a hodge podge - potatoe salad, meatballs, corn on the cob and stirfried garden fresh zucchini, eggplant, peppers and tomatoes (fresh from our garden, that is!). Chocolate cake for dessert.

we have a tonne of BBQ'd chicken from yesterday so I will probably make some kind of stir fry with it..

I used a pre-packaged mix I found at the Fresh Market. It's called The King's Cupboard Rich & Dreamy Molten Chocolate Cake Mix. I had some frozen raspberries so I sprinkled them with sugar to bring out their juices and put that on top. Then I whipped some cream and added that as well. It was fabulous. luv.gif

Well we had the pasta last night, quite good. The previous night I opened the vegetable drawer to reveal vegetables I had forgotten about, so we had corn, artichoke, squash and would have had steak and asparagus too except:

1. I didn't realize the bag I took out with steak in it only had 1 small steak! (so had chicken bites instead).

2. The asparagus had gone off after only a few days, that is like the second time I have had to throw the asparagus out.

tonight is BBQ chicken again... I might make pizzas....

last night hubby told me that I didn't have to anything fancy with the meat.. he said just give me the chicken and some tortillas and I am set... so that is what he got... I had the same but I added some sour cream and lettuce and cheese to mine...

tomorrow I am making chicken salad with the rest of the leftover chicken.. going to give hubby a pita stuffed with chicken salad for his lunch...

Well, the vegetables are starting to come in with the garden! Yum! Tonight I did a crab quiche with fresh eggplant, zucchini, red peppers and chives from the garden and had a side of fresh corn on the cob with more chocolate cake for dessert. We will have our first tomatoes and cucumbers tomorrow along with more green beans.

i wish I could have a vegetable garden.. I love fresh vegies from the garden.. only problem is i hate taking care of a garden ....lol

Mmmmmmmmmm Kathyrn! That sounds delicious. Did you use canned crab meat or fresh lump crab? Did you fry up your eggplant and zucchini before you put it in the quiche? How small did you cut up your eggplant?

We're having sausage squares and a tossed salad for supper tonight.

I made a rhubarb/strawberry pie yesterday that was delicious. I got the rhubarb from my MIL. Can't grow it here...it's too hot.

Well, my husband decided he wanted to go suit shopping last night but I didn't feel like going with him Click to view attachment so I stayed home and had baked beans. He came home with Japanese takeout. I think mine was better. tongue.gif

Tonight.... I don't know. Maybe salmon, garlic herb rice, and asparagus with hollandaise.

i have been watching and trying some of your recipes here and all sound so good so how about a okie special you can try. Seems there isnt much Mexican you guys try so how about this one i got off the radio this morning few of us are GOING to try havent yet


Okie's Beefy Fiesta Cheesecake

Serves 8

Pam Spray
1 Packages Cream Cheese softened
1/2 Cup Sour Cream
1 Pkg. Taco Seasoning (Williams brand used)
2 Eggs
5 Corn tortilia's
1 Cup grated sharp cheddar cheese
2 Cups cooked shredded beef ( Can use precooked roast or beef tips)
1 Small 4 oz. can chopped green chilies( do not drain)
1 T. Chopped Jalapeno Peppers (from a jar pickled)
1/2 Cup chopped green onions

Garnish and topping
1/2 Cup Nacho flavored Dorito's crushed
1 Package Pre-packaged Guacamole or make fresh
Remaining 1/4 chopped green onions

Preheat oven to 350 degrees.
Spray the bottom and sides of a 9 inch pan. I used a 9 in spring form round pan, but any 9 in. pan will work
Tear the corn tortilia's into pieces covering the bottom of the pan. Give the tortilia's a spray of Pam, to give a light coating.
Mix the cream cheese, 2 eggs, sour cream and package of taco seasoning until well blended and smooth.
Stir in 1/2 of the grated cheddar cheese reserving the remaining for the topping, shredded beef, chopped green chilies, and jalapeno peppers. Only use 1/2 of the green onions into this mixture. You are reserving the remaining for the garnish. Do not mix this step with the mixer. Stir until well blended.

Bake for 45 min. to 50 min. Mixutre will not giggle when done.
Remove cheesecake and while hot, sprinkle remaining cheddar cheese over the top to melt. Sprinkle remaining green onions over the top. Followed by desired garnish. I serve ours with the Crushed Dorito's and 1 to 2 T. Guacamole.

Let stand 15 min before cutting and serving.
Sprinkle crushed Dorito's over the top, followed by 1 or 2 T. of Guacamole.
The chips will soften if left on for a length of time, so I recommend putting them on before serving, as with the Guacamole.

Thanks for the recipe! I make "Mexican" food about twice a month. We eat mexican food outside the home at only authentic Mexican restaurants, and I've yet to duplicate that at home! Always looking for good Mexican recipes.

Yes this does sound very gooooooooood! We love Mexican, but it's so hard to find authentic restaurants. Methinks we'll try this one soon. Thanks so much for sharing this!! biggrin.gif

actually Mexican is a OKIE staple ha i can go few blocks to the Mexican market and get the meat already merinated etc etc but anyway also here we have a morning radio station that does a cooking segment once a week and posts whats been cooked so go to:

go down to MAGIC CHEF and they have tons of recipes im sure all will find something you will like to fit your tastes

Moroccan i dont or cant do ha guess im going to be in big trouble but in the MENA group there is a link for all that they have posted, luckily i introduced him to tacos so he loved them.....also that link to the radio has everything imaginable in it deserts, main dishes, vegetable dishes everthing just from what people have sent in no certain one area dishes

Ok if your in Okla then and dont want Mexican we also have many cowboys (boss made this and had for lunch looked great)

Cowboy Casserole

Servings: 5 servings
Prep. Time: :25
Total Time: :45

Ingredients:

1 lb. ground beef
1 sm. onion
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder
3 cups mashed potatoes
1 can cream corn
6 slices American cheese (or grated of choice)

Directions:
Preheat oven to 350°F. Brown ground beef with onion, salt, pepper and garlic powder. While browning make your mash potatoes, set aside. Drain fat from ground beef. Grease a casserole dish (9X9-inch) and spoon a cup of mash potatoes on the bottom. Spread the ground beef over mashed potatoes. Pour the can of cream corn over meat. Spoon the rest of your mashed potatoes over cream corn, then lay your 6 slices of cheese over mashed potatoes. Bake for 20 minutes and serve!

Cream corn is no one's favorite, but try this and you will love it!

Salad tonight since Publix had salad for buy one get one free!

Spring Greens with corn, black beens, avocado, tomatoes, black olive slices and boiled egg cut up.

i decided against beef goulash and instead we are going to have hamburgers and curly fries and corn on the cob...

I'm not fussy about Mexican food either although we have it fairly often because Joe likes it. "Real" Mexican food is definitely better than the Tex-Mex often served. Indian and Thai seem to be my favourites right now:-).

Tonight we are having sirloin beef tips over wide noodles, corn on the cob and a tomato/cucumber salad made from our own tomatoes and cucumbers - fresh picked!

I just found this recipe on another site... it looks good.. they say you can use apple pie filling instead of cherry if you want..


Fastest Cake In The West!

2 cups all-purpose flour

1 & 1/2 cups white sugar

1 teaspoon salt

1 & 1/2 tsp. baking soda

1 teaspoon cinnamon

1 can cherry pie filling

2 beaten eggs

3/4 cup vegetable oil

1/2 cup chopped pecans/optional

Mix all ingredients and put in a 9 x 13 pan.

DO NOT GREASE the Pan!

Bake at 350' for approximately 35 minutes.

Very moist cake.

Serve with HUGE dollop of whipped cream!

I'm taking my neighbour out to lunch this afternoon as she was out of town yesterday and it was her birthday. We might try a new deli near by, or a grill also near by. Depending on what I have, I might not have room for supper! I'm going to put some country ribs in the crock pot however, and Gene can have them if I'm not hungry. Maybe I'll pull the pork and we can have pulled pork sandwiches tonight, and then leftovers tomorrow night. Don't know yet what I'll make to accompany it. Rice and red beans I'm thinking and maybe some mixed vegetables.

Last night we had chicken curry with brown basmati rice instead of salmon. I have some fresh corn in the fridge so I guess I should make something to go with that this evening. Maybe corn on the cob and burgers-sans-the-bun with portabello mushrooms and tomatoes and swiss cheese? unsure.gif

not sure what dinner is going to be tonight yet...

the burgers were good last night.. they were just frozen burgers but I did them under the broiler (would have BBQ's them but our BBQ is out of propane or gas or whatever tongue.gif)

then I put some Ken's steakhouse Sweet Vidalia onion dressing on the bun along with some ketchup and mustard and then a slice of cheese, some lettuce and pickles... mm mm mm

and then for the corn on the cob.. I melted some butter and added some granulated onion and brown sugar.. and then brushed that on the cobs and sprinkled with salt and pepper and then wrapped them in foil and baked them in the oven... yum...

Can't beat that! Grilled cheese sandwiches is one of those can't go wrong type of suppers! Particularly when it's hot.

Well, my neighbour got back home from an overnight trip too late for lunch yesterday, so we're going to go out today. I had country pork ribs in the slow cooker yesterday, so we had pulled pork sandwiches on onion buns, potato salad and Bush's cooked beans. I've had a lot of beans and I like Bush's best. I pick them up when they're on sale as they are usually a bit more than the other brands.

I have NO idea what we're going to have tonight. There are plenty of leftovers from last night, but I gave Gene some of that for his lunch, so I'll have to think of something else. wacko.gif

I was over to Costco last week, again with my neighbour since I don't have a card...and picked up some Salmon Burgers. Frozen. There was twelve burgers in this bag, for like 5.99 and they were excellent. good.gif Cook up on the grill with a nice char at 3 to 4 minutes per side.

Last night we had chicken parmigiana, baked potatoes with sour cream, stir-fried herbed zucchini (from the garden), seasoned pinto beans (because they are my husband's favourite) and a tomato and cucumber salad (also from the garden). It was our 4th anniversary so I wanted something nice. No idea what we are having tonight, but friends are treating me to lunch today for my birthday. We are going to Mellow Mushroom as I haven't been there yet and want to give it a try. Tomorrow, one of Joe's colleagues from work who is also a friend, is taking us out for dinner in honour of our anniversary and my birthday so it should be nice.

Costco, I was trying to think of where we should go shopping today, maybe it should be costco!! Then again, we have a freezer the size of double shoe box, so maybe costco isn't such a good idea just yet.

Last night we had pork chops, rice and stuffing. I bought some lawry's ginger sauce and put a dab on the pork chops, I couldn't really taste it but Mike said it was good (he's not a huge fan of pork chops anyway so anything added for flavor would probably make him happy).

We are lacking food here, so shopping is in order, will probably just make a quick trip to Albertsons tongue_ss.gif

That cake sounds good Marilyn, I might just give that a try - just need some vegetable oil, cinnamon and pie filling - might even try it with fresh cherries, I love cherries good.gif

Oooooo Mellow Mushroom! If I remember correctly they have excellent pizza! When I worked in downtown Athens, GA I had lots of places like this to choose from for lunch. Of course, Athens is a college town and some of those college kids are pretty good at making pizzas. Hope you have a great lunch and a wonderful dinner this weekend with your friends. smile.gif

I took some steaks out of the freezer. I'm deciding if I will grill the steaks or use them in a stir fry.

I made your easy mustard chicken a few nights ago- it was awesome. I mixed together yellow mustard, creole mustard and dijon. I added lots of creole spice and used italian whole grain bread crumbs that I found.
