Well, I've changed my mind since this morning. My neighbour was going to Costco this morning and asked if I'd like to come. She would buy me what I'd like to get if I saw something. I don't have a Costco membership, and will never get one myself...as I don't believe in paying anyone for the privilage to shop at their store and spend MY money!

So, I brought home some delightful things and we're going to have one of my favourite suppers! How does, fresh baked whole grain artisian bread sound...with various cheeses (including goat..my fav!), an assortment of italian salami, wheatberry fruit salad, hummus (this is my homemade stuff, not from Costco), an assortment of coloured mini peppers and tomatoes, leftover broccoli cauliflower salad, lentils and rice. Perhaps a nice bottle of wine and candles as well?
Mmmmmmmm sounds yummy to me!

Tonight I am trying a few things from my Wild Rose detox cookbook. I am making chickpea and squash patties with a lemon tahini dressing to go on top, Mediterranean salad, baked sweet potatoes and steamed artichoke.

I haven't tried wheatberry yet but is is acceptable on my cleanse.
Any tips on cooking it?

it's so hard for us to find the time to make stuff during the week with work and all....
tonight we are just grilling some chicken breast that has been marinated along with veggies and rice.

Cool- they were out of it a Whole Foods a few days ago. I'll run back there and see if they have more. I'll make Mediterranean wheatberry salad!

I think hubby is skipping his class tonight, he has a project due today that he hasn't even started yet

says if he is not there he doesn't have to hand it in...lol anyways not sure what that has to do with dinner

I love Costco's whole wheat Artisan bread! We always pick up a few loaves when we go - but then we eat it all right away and we don't always get back there for a few more weeks:-(. Ah, well. Tonight is going to be one of my favourites - ratatouille - lots of good fresh vegetables simmered together in herbs and served over noodles- yum!

Wheat berry Salad
1 cup wheat berries, soaked overnight
1/2 cup raw wild rice
2/3 cup toasted chopped pecans
1 cup dried cranberries
1/2 cup chopped fresh parsley
1/2 cup chopped green onions
3 tbs fresh lemon or lime juice
1 tbs honey
1 tbs dijon mustard
1 tsp salt
1/2 tsp ground black pepper
Preparation:
Soak the wheat berries overnight in cold water, covering them 3 inches. Drain the water in the morning.
Boil the wheat berries in 6 cups of water for about 50 to 60 minutes, or until tender. Add more water as necessary to keep wheat berries covered during cooking. Drain excess water from the wheat berries when done.
In another small pot, boil 2 cups of water. Add the wild rice and simmer for about 45 minutes, or until the rice begins to split. I prefer to undercook the wild rice slightly so that it retains some structure. Drain excess water.
Combine the cooked wheat berries and wild rice in a large bowl.
Whisk the lime juice, honey, mustard, salt, and pepper to make the dressing. Add the dressing to the wheat berries and wild rice, mix thoroughly.
Now add the cranberries, pecans, parsley, and green onions and combine well.
What's nice about this salad is that you can add whatever you want in it. You can make it with wheat berries alone, or with the rice, or some type of pilaf or coucous even. Add cucumber, tomatoes, whatever vegetable you'd like.
If you don't like the lime juice vinaigrette dressing, you could make orange if you'd like.
ORANGE VINAIGRETTE:
1/4 c. fresh orange juice
1 tsp. Dijon mustard
1 tbsp. red wine vinegar

I have decided to make Chicken Mac for dinner..
Make a box of regular mac and cheese according to the directions on the box (you could also use deluxe mac and cheese) and then stir in some cooked chicken, a can of diced or stewed tomatoes (i like using the Italian diced tomatoes) and some basil and oregano.... you can eat it like that or you can throw it in a baking dish and sprinkle some grated cheese on it and bake it in the oven till cheese is melted...
you can also do this recipe with ground beef.... and I also have throw in a jar of salsa instead of the tomatoes.. that is good too...

I can vouch for Kathryn's ratatouille...it is fabulous!

We bought a 50lb bag of wheat berries about a month ago...for $32. Now this same bag is running $49. Need to look for other ways of using wheat berries for something other than just milling. That wheatberry salad thingie sounded good...might have to try it.

Carla your dinner does sound delicious!
So we had steak, artichokes (frozen, but I cooked them haha) and potato salad. All very good, the steak was HUGE - so we just shared it.
Krikit I hope you haven't eaten the salad yet as we are awaiting the film

Actually, we're going to have to have it again tonight. I made so much of it that we decided to eat only one of them between us and I put the other in the fridge.

But it was really good so that's alright.

haven't made this in awhile but just wanted to share this recipe.. it is really good...
this is a family favourite...
Rhubarb Crumb Crust Cake with Meringue
Crumbs:
3/4 cup margarine
2 tablespoons white sugar
2 cups flour
Rub above ingredients into crumbs and press into a greased pan. Bake at 350 degrees for about 10 minutes.
Filling:
2 cups sugar
6 eggs yolks (save egg whites)
3/4 cup milk or cream
4 tablespoons flour
1/8 teaspoon salt
Mix above ingredients and pour over 6 cups of cut up rhubarb. Pour over crust and bake for bout 45 minutes.
Beat the 6 egg whites just stiff. The add 3/4 cup white sugar and 1 teaspoon vanilla. Spread over rhubarb. Brown in oven. Watch Closely!

I made one of my hubby's faves -- marinated chicken dredged in panko bread crumbs and baked, and saffron rice, and corn
I made lots of chicken, so I am heating some up and slicing it on top of a salad -- nothing nearly as fancy and pretty as what I will now call

Hmm that rhubarb crumb cake sounds good! I just bought some rhubarb bulbs to plant next Spring - don't know if it is too warm for it to grow here or not, but I love rhubarb. My Dad has it coming out of his ears back home and no one to share it with - sure wish he could ship it to me!
Tonight - left over ratatouille - it is just as good the second day around. Yum - lots of veggies in this one -eggplant, yellow squash, zucchini, tomatoes, onions (2 kinds), carrots, parsnips, bok choy, green peppers, celery, fresh garlic, fresh basil, fresh oregano, fresh thyme, fresh chervil - all herbs from our garden - pepper, and served over vegetable pasta with romano and parmesan cheese. Yum!

it is soo good.. our whole family loves it and it doesn't last very long ....lol

That sounds amazing. And so does the rhubarb. I'll have to give it a go.

yay we are off to Applebees.. going to share the appetizer platter and I am going to have a frozen strawberry margarita and hubby will probably have a beer and then we might try some dessert shooters for dessert.. they aren't alcoholic just desserts served in over sized shooter glasses... have not tried them before...

well, just got back from a most wonderful meal, mainly because I got to hang out with my darling hubby who i adore

.. the food was pretty darn good too...
we shared a ultimate trio platter... we chose the mini bacon cheeseburgers, the spinach and artichoke dip and citrus terayki boneless chicken wings.. mmmm everything was yummy.. and for dessert hubby had the hot fudge sundae shooter and I had the apple caramel supreme shooter.. mine was soo good.. hubby liked his but he said they didn't put enough chocolate syrup in it..

oh and I had a strawberry mango frozen margarita.. mmm that was really good too....

hehehe, no you're not an oddball - you're a Southern gal and rhubarb is a cool weather crop. Unfortunately, no there isn't anything else that tastes quite like rhubarb. On it's own it is very sour so it is always prepared with some sort of sweetner. It still has that nice touch of tartness mixed in with the sweet though - and that goes oh, so well with strawberries! Strawberry and rhubarb pie! Yum! I just love a bowl of stewed rhubarb with vanilla ice cream - also yum.
So, if my rhubarb bulb takes and we successfully produce rhubarb - in another year or so I can probably offer you a taste:-).

Ive been looking for Panko bread crumbs forever..and finally found them.. breaded some chicken tenders and pan fried them..and made chicken sandwhiches with them last night..they were so crispy.. love Panko will never go back to regular crumbs..

Last night we just had a sausage on a piece of bread
I'm thinking tonight I shall whip up a stir fry, which reminds me, I should go and take out some meat for said stir fry.
