My husband is working late this evening so we will be having homemade soup for dinner. Last night we had bbq'd pork chops, cauliflower and broccoli with cheese sauce, and some brussell sprouts.

Golden Butternut Squash soup (Campbell's Select) is one of my Husbands very favorite soups, will be interested to know what you think of the Trader Joe's purchase!
Last night we had steak from Applebees - it was our 8th anniversary. We didn't actually go out, my Husband went and picked it up, it was very good

Wow, I didn't know Campbell's made one of those. I'll have to try it as well, and tell you which one was better. The Trader Joe's one was excellent, thick, creamy...I'd highly recommend it!

Congrats to your Dad Cassie! Mmmmmm it sounds lovely with the puff pastry on top. The Trader Joe's one was very nice! Creamy...not stringy. I would have preferred it more spicy myself, and there was a slight sweetness to it, but not too sweet. No sugar was added, it's very very natural, no additives, but some squashes are sweeter than others. I've never had pumpkin soup myself, but I might need to find a recipe for it and one for butternut squash one as well for the fall.

this is what i made for dinner last night...
Easy Enchilada Casserole Recipe
1 pound ground beef or turkey
1 small onion, chopped
2 cloves garlic, finely chopped
1 16-oz. Thick & Chunky Salsa
1 16-oz. can Refried Beans
1 10-oz. can Enchilada Sauce
1 2.25-oz. can sliced ripe olives
10 6-inch corn tortillas, sliced in half
2 cups shredded mild cheddar cheese, divided
Preheat oven to 375 degrees F.
Cook beef, onion and garlic in large skillet until beef is browned; drain. Stir in salsa, beans, enchilada sauce and olives. Bring to a boil. Reduce heat to low; cook, stirring frequently, for 5 to 6 minutes.
Layer half of corn tortillas on bottom of greased 13x9-inch baking dish. Cover with half of meat sauce; sprinkle with 1 cup cheese. Repeat layers. Bake, covered, for 20 minutes. Remove cover; bake for additional 5 minutes or until bubbly and cheese is melted. Garnish with green onions before serving, if desired.
*I have made this recipe twice already. I found it on the back of a grated cheese bag. I don't add the olives though, and I use ground beef instead of turkey and I layer it in a smaller pan, more layers of tortillas that way. Also per my husband's suggestion, we put some shredded lettuce and tomatoes on top (after it is baked of course) and served it with some sour cream.. mmm yummy!!

ive been following your recipes and i also did this one last night, used smalled pan and had 3 layers

oh, have i posted this one before or did you find it somewhere else? ...lol
my hubby is Mexican and he loves this recipe.... i told him that it all tastes the same no matter if you roll them up separately or layer it in a pan..
i am going to have the leftovers for lunch today.. it doesn't taste quite the same as fresh but it is still pretty good...

I like doing simple recipes... I hate doing those big complicated recipes...

oh and I was trying out something new for hubby's lunch yesterday... I took a flour tortilla and spread it with some cream cheese and then put some deli meat, lettuce, grated cheese and a bit of salsa and then rolled it up.. hubby said he really liked it.. I made it again for him today but I think I put too much lettuce on it because it didn't want to roll up right

I think I'm just going to make a Cobb salad. Or I might try the recipe I found on the back of a can called Arroz Con Gandules. That sounds kinda good. Hmmm. But I do have a bit of a craving for the
Ma Po Tofu again. But that would entail going to the store for some tofu. bleh. I picked it up then put it back down yesterday.

I like trying the recipes on the back of products. I find that they usually turn out pretty good and are quite good.. I am assuming they probably try out the recipe to make sure it is good before they slap it on their product...

That sounds like the ticket. I was hoping this thread would give me lazy ideas for tonight! Frozen meatballs are a godsend.

an 'easy' night here as well . . . roasted red pepper and tomato soup with fresh basil from the garden, salmon salad sandwiches and a tossed salad with lettuce from the garden - and of course, iced tea.

Well, tonight will be Cobb salad night. We didn't have supper last night because my husband was extra delayed at work. So at 11:45pm we were eating cheese on toast with slices of fresh tomatoes from my neighbour's garden. You know.... where you put the cheese on the bread then broil it in the oven. And, no, I wasn't sneaking around the neighbourhood stealing vegetables.

*sigh* I am down to boneless skinless chicken breast in the freezer and a bone in chuck roast. I will be scouring the recipe sites for some ideas...something different, y'know? I did find some really neat sites.... www.copykat.com and www.razzledazzlerecipes.com. These are good for restaurant clone recipes. I've found some really good ones!
BTW, for anyone with children you might like to check on this: Our local movie theatre shows kids movies in the mornings each Wednesday for free. Of course, they more than make up for it with popcorn and snacks which are pretty expensive, but the movies are recent ones and we're going this morning to see Bee Movie (the one that Jerry Seinfeld does a voice over in) and we might get a popcorn for the two of us to share. Just thought this might be something others could check on in their area, to see if their theatres do this too. Anna is so excited that she was up at 5:30, ready to go! LOL, the movie doesn't start til 10am.

lol at the peanut butter caper krikit - I think I read that originally, but it is still funny!
I actually took out rib eye steak yesterday, but due to having a nap we decided on the pizza hut offerings.
Really we need to go shopping, might have a fresh vegetable in there somewhere.
Actually, this is weird, I made potato salad the day before yesterday, normally I mix everything up, the eggs, mayo, mustard, onions etc and then add the potatoes. I tried the base stuff after mixing and it was rather mustard tangy - but good.
So we eat some for dinner - which was a few hours after I made it and it's - blah, very little flavour at all. I have never had that happen before. Anyway, simple fix, when we finish it - which will probably be with dinner tonight, I will add some more mustard, I just thought it was very strange.

Our slow cooker has been so handy....
We'll be eating the leftovers from a recipe I concocted....hubby likes it and so do I! =) The joys of using what's in the fridge! he he he
3-4 beef brisket (fat and membrane removed)
1 16 ounce can of stout beer (hubby had it in the fridge)
1 packet of onion soup
1/4 cup of A1 Steak Sauce
1/4 cup of Worcestershire sauce
salt and pepper to taste
We marinaded it over night in the fridge and cooked it on slow for about 8 hours and then 2 hours on high. Yummy!
We added veggies on the side!

OK...this turned out pretty good, except I didn't add enough salt, and for boneless skinless chicken breast it turned out tender and juicy! I fixed corn and field peas from the freezer. Even my very finicky 9 year old ate this...I am impressed!

I tried a Kasha frozen dinner (well, 2 actually) that were on sale 2 for $3.00 - lemongrass coconut chicken. Wow, we both enjoyed them - very flavourful and decent sized portions. Unfortunately, they are usually much more expensive than that but I will certainly get them again if I see them on sale.

We had oven bbq chicken last night, hash brown casserole, and a broccoli, cauliflower salad that was wonderful with shredded carrots and sunflower seeds.

Well, we didn't have the Cobb salad AGAIN last night.

My hubby wanted to celebrate something so he scooped me out of the kitchen and took me to dinner at an Icelandic restaurant here in town....
The Frosty Mug. The guys at the bottom of the page on that link were playing..... they were really good. And so was the food. I had the soup of the day - an Icelandic version of clam chowder.... very yummy.... - and we shared the fish & chips and caesar salad. I was STUFFED.

Tonight we are having Cobb salad. Seriously.
