Well, we finally got our incentive cheque on Friday and went out today to buy a barbeque grill we have had our eye on for the last 2 years. We keep saying when we extend our patio out back we will buy the grill, but we still have to extend the patio (ok, phoning this week to get quotes!), so, we decided to bite the bullet and bought the thing. What was extra nice is that it is $60 cheaper this year than last year! It is not listed as being sold in our store but they had 3 in stock, so we're happy. It is a pedestal style so doesn't take up lots of room, and while we won't be able to feed a huge party it will do enough burgers, steak or chicken for the smaller parties we are likely to have.

well, we were supposed to go to a bbq at the brothers place but hubby decided he didn't want to go so I made the sweet and sour pork that I was planning on making....

Ok, here's the recipe:

Cream Cheese Danish Thingy
(makes two rather large danish, easily enough to feed 12 people, 15-18 if you make the pieces really small)

Take one package of puff pastry (I like Pepperidge Farms, you find it in the freezer section and comes in two pieces) and thaw. Usually takes about 45 minutes.

Line a baking sheet with parchment paper (two baking sheets if you think both pastries won't fit) and unfold the puff pastry. Pepperidge Farms fold theirs in thirds, which helps -- the centre will be covered in the filling, the two sides will be cut and folded over. Press the seams together if needed.

Take a sharp knife and begin cutting the pastry into one inch strips, starting from the outside edge and stopping about 1/4 of an inch from the fold line, as if you were cutting fringe on a blanket. Do this on both sides, along the length, not the width.

Filling:

8 oz (one package) cream cheese *
1/2 cup sugar
2 egg yolks
2 tsp grated lemon peel or orange peel **
2 tsp vanilla extract
1 cup blueberries ***

Beat the cream cheese and sugar together until smooth. Add the egg yolks, citrus peel or juice, and vanilla; mix well.

Spoon the cream cheese mixture equally down the centre of the two pastries. It will be a generous amount! Sprinkle with fruit if you are adding some. Fold alternating strips over the filling (at an angle if possible) to give a "faux" braid effect. If you can pinch the ends and tuck under to seal them, go for it, I usually can't.

Bake in a 400 degrees F oven for about 20 minutes, or until the puff pastry has puffed up a bit and it is golden brown. Remove to a wire rack. Refrigerate leftovers.

For an added touch, make a glaze of 1/2 cup icing sugar and 2 teaspoons of whatever citrus juice you used in the filling. Drizzle over the danish while they are still warm. Serious YUM.


*I use fat free, and it tastes great

**I usually use a small splash of orange or lemon juice -- not too much or the filling will be too runny

*** you could use other fruit I guess that matches well with the citrus, or make a fruit sauce or chop finely and spoon over the danish as opposed to cooking it in the filling


This seriously is really simple to put together, but it looks like you spent serious time, you know? wink.gif If it doesn't make sense the way I wrote it here, let me know. Enjoy! smile.gif

Tonight we are having steak on the barbie with my homemade bbq sauce. And corn from the farm down the road..... it's in season in Florida..... but not until August in Ontario. Have had to learn a whole new growing season moving here. laughing.gif Oranges in December; strawberries in March; watermelons in April; corn in May. I wonder what happens in June? unsure.gif

Anyway, we were also going to have roasted organic beets and mushrooms and onions and maybe a baked potato but now I'm thinking that's way too much since we've added corn to the mix. Hmm. Maybe just mushrooms and onions and parmesan garlic baked tomato? Or broccoli. Decisions decisions.

We should have a night where it is required that you take a picture of dinner, no matter if you get McDonalds, are having a hot dog or making sushi!!

I nominate this Wednesday night as dinner picture night.

Anyway, last night we picked up Boston Market, their chicken is good! Just had potatoes and stuffing with it, I don't like their stuffing much but their gravy is good!

Yep, it's Wednesday. Do you know I actually thought it was Monday? Or, at the very latest, Tuesday. Man. Those long weekends really screw with my head. blink.gif

Okay. Picture night it is. Absolutely no idea what supper will be, though. But I imagine it will involve corn, since we have a ton of them. My husband is going to think I've lost my mind when I insist on taking a picture before we eat. laughing.gif

Somehow I have misplaced our camera so no pics from me. My mom is making American chop suey ---- basically elbow macaroni with hamburger, celery, tomato sauce and some other things.

That's pretty similar to what we are having - macaroni with ground beef, diced onions and zucchini, tomatoes, herbs and spices; green beans fresh from the garden, a tossed salad with lettuce also from the garden, and a lemon loaf cake for dessert. Sorry - no picture either:-(.

Actually after reading about what Autumn was having, I would have liked pasta! We were just discussing that we need to have more pasta dishes (no argument from my Husband on that one seeing as pasta is like his favorite thing to eat).

Okay, here is what we had. I would like to enter a disclaimer, here, in that my husband disrupted my plans entirely. But we will not get into that. mad.gif

First course.... husband wanted a cocktail when he got home, so here we have a Coconut Rum Mojito, per his Highness's request. I forgot to leave the stupid limes in the drink. dry.gif

Since his Majesty had decided to hit the gym before dinner, he requested an appie to tide him over. Here we have a shrimp cocktail with baby spinach leaves and homemade cocktail sauce.

For the main course we had T.O_to_FL's Curried Tilapia with Mango Salsa. It will be a longtime favourite in our household for years to come.

Here is the Curried Tilapia. We had green beans and corn with it because they were wilting in the fridge. dry.gif Oh. We also had it on a bed of spinach because that was also nearing the self-destruct date on its shelf life. tongue_ss.gif




This is the mango salsa. It goes on the Tilapia. Please forgive the inclusion of the stupid cord in the pic. Obviously, I had way too many wines. tongue_ss.gif

One thing that some of you may not have noticed in my pics is that I took extra care in my accoutrements. I applied makeup, upswept my hair, and wore a snazzy little red ensemble that accentuated the rosy red flush in my cheeks from the heat of the kitchen. I stopped short of putting on the little white gloves. They are, after all, for checking the top ledge of the windowsills. tongue_ss.gif

today I am making this...

Slow Cooker Lemon Garlic Chicken


1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper

2 pounds skinless, boneless chicken breast halves

2 tablespoons butter

1/4 cup water
3 tablespoons fresh lemon juice
2 cloves garlic, minced
1 teaspoon chicken bouillon granules
1 teaspoon chopped fresh parsley


1. In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker.

2. In the same skillet, mix the water, lemon juice, garlic, and bouillon. Bring the mixture to boil. Pour over the chicken in the slow cooker.

3. Cover, and cook on High for 3 hours, or Low for 6 hours. Add the parsley to the slow cooker 15 to 30 minutes before the end of the cook time.

Tonight is my last night in Edmonton. I am thinking Swiss Chalet because I haven't had it in a while.

Tomorrow at the airport I will stop to have a Harvey's burger- haven't had one of those in a while too.

And Trailmix - thanks for finding the pic of my dinner .... yeah, I don't seem to do much anymore except feed the bambino, change him, grab something quick for me, feed the bambino again, change him .... LOL!!!

Well, I didn't think about taking a picture of our picnic supper tonight...it was just sammiches and chips at a state park in the mountains, Black Rock State Park. Ham and turkey, homemade bread, swiss cheese, chips, drinks. The Eastern Continental Divide goes through Black Rock SP. Just as we were leaving, the fog began to settle in making an eerie atmosphere. Way cool!

Chicken Fajitas with Crunchy Lime Red Cabbage and Avocado.

No pics, alas.

I'm marinating the cabbage right now with lime juice, light olive oil, rice vinegar, agave syrup, lime zest, salt and pepper.

The chicken will be made with garlic, chili powder and red onion, and then I'll warm the tortillas, put in the chicken and top it with avocado and the lime cabbage.

I'm going to make a puff pastry spinach/feta/swiss cheese sandwich and I bought a container of Butternut Squash soup at Trader Joe's on the weekend. I've only ever had butternut squash soup once and it was SO good. I've thought about making it myself, but it slipped my mind, and then when I saw this, it reminded me of it. I'm going to go look for a recipe if this is good.

Golden Butternut Squash soup (Campbell's Select) is one of my Husbands very favorite soups, will be interested to know what you think of the Trader Joe's purchase!

Last night we had steak from Applebees - it was our 8th anniversary. We didn't actually go out, my Husband went and picked it up, it was very good good.gif
