We ended up having frozen pizza .... I added veggies to my boring cheese variety (artichoke hearts, tomato, zucchini, olives, spinach) in a sad attempt to give the baby SOME nutrition. Hubby had sausage and pepperoni pizza.

I don't know it had a strange texture or something but the funny thing is hubby raved about it.. unsure.gif said it was really good.... we didn't eat at the same time and I hadn't told him my opinion of it...

it wasn't horrible or anything....

maybe it will taste different today...

Joe enjoyed perogies:-). He said we can have them again anytime.

Not sure what will be for dinner tonight . . .it is a big cultural weekend for us - we have symphony tickets for tonight and opera tickets for tomorrow. We are going to head out early tomorrow and have lunch before the performance at this fantastic Indian restaurant in north Atlanta called Swapna. It has an absolutely wonderful Sunday buffet and the restaurant is always full of people of Indian background, so it must be pretty good. We will probably just have a soup and salad tonight - something quick - then have coffee and dessert at symphony hall before the performance. We always leave early because traffic can be such a nightmare at times.

ok it tasted better today... I did add a little water to the rest yesterday after I ate because it was a little too thick so maybe that made a difference... today i am making beef stroganof in the crock pot...

I felt like making cookies so I just made a batch of chocolate chip oatmeal cookies... I had one still warm and the chocolate still melted.. oh my goodness, soo yummy.. might have to hide them all from hubby and not tell him that I made cookies whistling.gif

Ooh, those look really yum. I don't think parchment paper makes cookies bite size though, it just helps them not stick to the pan. Right?

yeah but they don't spread out as much when you use parchment paper compared to if you would grease the pan......

i am making citrus marinated chicken thighs today and hubby is going to barbecue them when he gets home.. although he doesn't know it yet whistling.gif

I have no idea what I'm having for supper tonight. I'm meeting the future in laws for the first time sometime today so I'm nervous. We have no idea when they'll all be here, so Andrew expects us to go out to eat. In fact, he said the whole time they're here we should be expecting to go out to eat. That's kind of good, less work for me, but also not so much fun! I like to cook, although I'm already intimidated by what he's told me about how good of a cook his mom is!

Tonight we are having pork chops, garlic bread and some eggplant parmigiana, it's packaged actually. While i'm not crazy about pre packaged food, it was something new, so decided we will try it.

Tonight we had barbecue chicken cooked on the grill, baked beans, potato salad and asparagus. The asparagus was something new .... I saw it on a cooking show. Put some oil on the aspragus (I use a minimal amount of olive oil and it worked fine), then roll them in sugar (the show said white sugar, I used brown sugar). Then grill them until the sugar carmelizes. Mmmmm, they were yummy. Hubby even ate them and he is not a huge aspragus fan.

I ended up barbecuing the chicken because it was getting late and hubby wasn't home yet... but I was smart and I cooked the chicken almost done in the oven and just finished it off on the barbecue .. both hubby and I really liked the chicken good.gif

I marinated the chicken in a mixture of lemon juice, lime juice, vinegar, vegie oil, cumin, chili powder, oregano, garlic powder and paprika oh and some brown sugar....

Yeah, I think I will have to put sugar and butter on every veggie from now on!!!

Hubby and I went out to dinner at a local Mexican place in celebration of Cinco de Mayo. I had a pulled pork burrito with salsa verde, hubby had a steak and veggie burrito.

It was yummy, but dang do I miss the amazing Mexican food I had when I lived in California. I especially miss the times the little old ladies would come around to my office, selling plates of chile verde. MMMMMM!

I have basically been stuck at home for the last couple weeks.. the only times I have gotten out where to do laundry or go grocery shopping..

so is it wrong if I want to go out to eat tonight??

Well, we had the fried chicken from Albertson's again last night. Of all the foods I have eaten since we have been here, that is the only thing that has really caught my attention. laughing.gif

We ate at Cracker Barrel last night. It was food. Tonight my husband is working late so we will have something light.... my version of shrimp cocktail. Large tiger shrimp (16-20) on a bed of baby spinach leaves with homemade cocktail sauce.

You know it's really weird. Our first experience with CB food was in Nashville, as - yes, it within walking distance from the La Quinta!

Anyway, it was really good that night.

Having now eaten there two more times, in Tifton and here - it just wasn't as good! However, we will go there again - this time I will order the breakfast.

I took Marilyn's easy mustard chicken recipe and used catfish instead of chicken. I added some creole seasoning, creole mustard and some Paul P. seafood blend. It was awesome!!

Had steamed carrots and cauliflower and brown rice and salad with it.

I was hoping my parents were going to drive down here this month and then I was going to get them to bring along a bunch of stuff.. but plans changed....

We had eggs scrambled with peppers, onions, yellow squash and cheese, and home fries. I also had cucumber drizzled with balsamic vinegar, but hubby opted not to eat that.

Much less salt too. Apparently in the US, flavour means more salt and/or sugar. crying.gif

It's funny you mention that IR5 - I find stuff here not salty! Sweet yes, but not salty! Even the salt doesn't seem salty!?

When we had the KD last night, it's the first salty thing i've eaten since moving, it's very strange!

We're having a beef roast that I've had sitting in the crock pot since 9am. It'll be really tender. Also, mashed potatoes, gravy, pinto beans, rolls and corn bread. I can't wait lol.

Good choice. good.gif I was going to make roast today, even turned on the oven, then looked in the freezer, there is no roast in there, i'm was sure I bought one - guess I changed my mind.

So anyway, tonight, steak, salad, potatoes. smile.gif

Tonight is Pita Pizza's again. I made them the other night and Mel and Max loved them.

I made them super healthy too. The alternative bagel makes great pitas- 110 cals and 8 grams of fiber. Hormel turkey pepperoni (I like the vegan pepperoni too but the one store I went to didn't have any) Lots of veggies- onions, green and red peppers, mushrooms. And I found kraft fat free shredded mozza cheese!! Woo Hoo!!

And a bag of light ceasar salad to go with them.

Miss Stacey, we are sharing a similar menu tonight!

I'm starting with a frozen Freschetta Four Cheese pizza then added more spices, more tomato sauce, mushrooms, hot banana pepper rings, artichokes, spinach and more cheese. It's in the oven baking now. And, we will have a Caesar salad to go with it as well- and iced tea (a staple here in the South although I don't make it sweet:-)). Oh, and fresh strawberries for dessert.

Mary, your roast sounds wonderful btw - if I didn't have the pizza already on the go I would drive to your place - I could make it in half an hour:-).
