My husband has a speaking engagement there. His parents and cousins live there, also, so we'll be spending time with them. His cousins are fun but his parents are very..... hmmm..... parenty. laughing.gif

I made this last night for din din... they were really good... kind of crispy on the outside and nice and juicy in the inside... good.gif Served it with some Kraft Dinner mac&cheese and some steamed carrots... mmm, what a yummy meal.. smile.gif

Easy Mustard Chicken

1 lb boneless skinless chicken breast, cut into 4 pieces
1/4 cup French's mustard
1/2 cup soft breadcrumbs
salt and pepper

Dry Chicken on a paper towel. Paint the chicken on both side with mustard. Roll in the bread crumbs that have been seasoned with salt& pepper. Gently shake off surplus crumbs. Place on sprayed baking sheet. Bake for 20 min in 400F degrees oven.

*instead of salt I used seasoning salt and I also added some garlic powder... oh and i used chicken tenders... so instead of 1/2 cup bread crumbs I used about 1 cup of bread crumbs....

I got home late from my training yesterday, so I just had a salad. With lovely toasted sesame stick sprinkles and Vadalia onion dressing. blush.gif

Think tonight I'll warm up some leftover chicken. We had some more corn on the cob and potato casserole to finish up.

Gene will be baching it next week when I'm in Saskatoon. I'm trying to decide if he's going to miss ME more than my cooking??? blink.gif sad.gif crying.gif

Last night we had roasted garlic honey dijon chicken with a black bean and corn salsa, and steamed broccoli and cauliflower with fresh garlic butter. It was YUMMY, and I sure did love it when he came home from work and raved about how good it smelled in here! After eating nothing but take out and microwave dinners he was happy to have real food and went on about how gourmet it was!

Now I've got tons of leftover chicken, and I'm thinking I might turn that black bean and corn salsa into a chicken chili. Maybe. tongue.gif

Well when Mike got home from the Social Security office, I had decided we would head over to Applebees in Sanford, we both like Applebees - soooo we google the address and head out! We neglected to put the street number in, so we did have a really nice drive through Sylvan Lake, a community near here, beautiful houses, brand new equestrian centre etc. - after much driving we didn't find Applebees but we did find Cracker Barrel, so that is where we ended up eating.

I ordered grilled chicken, mashed potatoes, coleslaw and turnip greens (because everyone offers turnip greens and I wanted to check it out basically).

Hmm, well, I didn't know it had ham in it (don't get me wrong, I like ham) but my stomach wasn't feeling all that good so I didn't even try them, Mike did and he said I had made a good choice in not trying it!

Didn't like the chicken either - I think it had some kind of mushroom sauce on it (I don't eat mushrooms).

Anyway, by the time we got home Mike's was feeling not so good either. Need to get used to the food here.

Blech. The turnip greens at CB are horrible. Actually, the only time I like CB is for breffrus. And caramel corn. Their pecan pancakes are good. And so is their smoked ham. But I mainly just like the caramel corn. laughing.gif

We're having hamburger helper for the kids(hubby too cause hes picky) stuffed green peppers, country fried chicken, mashed potatoes, black eyed peas, green beans and corn bread.

I think we're going out for dinner tonight. We'll probably go to the Big Bun which is a great little drive thru burger place here! YUM! Soon to be hubby doesn't want to eat chicken three meals in a row. I don't really blame him, but I could eat chicken every day and be just fine with it. I just suppose this means I'm going to have to get uber creative now aren't I? It's not just me to cook for anymore!

I will go with Mel to his class tonight- I have never seen him teach. On the way back we will stop somewhere to eat.

for the mustard part of the recipe I didn't really measure out the mustard I just brushed it on... put a lot on but don't overdue it.... I was reading a review on the recipe on the site where I found it and this one lady said she totally drenched the chicken in mustard and then complained that the chicken wasn't crispy enough tongue.gif

I did and it was really good! Mel loved it, it reminded him of a pork chop recipe he likes- similar sauce.

I'm going to mix a little creole mustard in with the regular and add some Tony C's seasoning.

we had marinated chicken breast and rice and steamed carrots for lunch... hubby barbequed the chicken breast.....

I marinated the breast over night.. I couldn't make the one marinade I wanted to because my Italian dressing was old tongue.gif so I made a terakyi marinade but it made the chicken too salty because either there was too much soy sauce in it or I marinated it to long tongue.gif


when hubby gets home from school I think we are just going to have hot dogs....

It's supposed to be 80 here today so I definitely don't want the oven on! I'm thinking steak fijita's, rice with red beans, and maybe I'll make Gene some lemon tarts this morning before it gets too warm.

I bought a cooked chicken at the grocery store yesterday, a rosemary and garlic one, mmmmmmmm. Going to make up a large potato salad to have with this...with EGGS. Green beans to accompany.

I'm also going to cook up a lasagna this weekend, some squares or cake, and maybe a meatloaf for Gene to eat during the week. Poor dear will alone next week while I'm whooping it up in Saskatoon. wink.gif

I'm always trying new meatloaf recipes. This is a little different, and I've made it several times now, and we both enjoy the change. I use chicken stuffing. It's that stove top stuffing mix you can buy at the grocery. I use italian spices as well and not just the thyme. I also get two loaves out of this recipe. This recipe calls for chili sauce on top. I prefer a spicy tomato based sauce with shredded mozarella cheese on top. You could also use instead a mixture of ketchup, worchestshire sauce, and brown sugar.
What I love about meatloaf is making it with what I have on hand and whatever spices I feel like throwing in.


1 1/2 lbs extra lean ground beef
1 pkg (6 oz) STOVE TOP Stuffing Mix for Chicken
1 egg lightly beaten
1 onion chopped
1 tsp dried thyme leaves
1/4 cup chili sauce
Preheat oven to 350 degrees F.
Mix meat, stuffing mix, egg, onion and thyme.
Press evenly into 6 x 4 inch loaf pan sprayed with cooking spray. Bake 55 min. Heat chili sauce in small saucepan.
Spoon over meatloaf just before serving.

I am back!

And have a whole long run down of the wonderful food we had in Hawaii!

The best by far was this shrimp farm on the side of the road, they literally scooped out the shrimp beheaded them and then cooked them there. OMG! It was like 20 large shrimp fried with garlic and some sauce (that they made there) with rice. it had the peel on, but that was the highlight of the food ....

Oh and the last day we went to Chinatown in Honolulu and went into the fish market. There was the best layout of food for next to nothing. I had this whole fish that was almost blackened on Charcoal with a bunch of other Filipino food mixed in. All for $6.50!!! That is it...

Ok so tonight I have having a warm spinach salad with pine nuts and fried tilapia bites on top. With a lemon vinagrette.

Last night, hubby ended up going to the grocery store for one thing and came home with dinner fixins! He grilled chicken that he been seasoned at the store with a mix of cayenne pepper, salf, sugar, paprika. It was yummy! We also had baked beans and a salad. The only problem was that hubby beat me to the leftovers this morning and took them for his work lunch sad.gif Oh well, I guess the guy deserves them. Not sure about tonight. I think I might just make grilled cheese sandwiches and tomato rice soup, maybe a salad too. Not feeling too energetic right now.

Carla, this sounds fantastic and I want to try it! I do have one question -- is the stuffing mix prepared beforehand or just put into the meatloaf as is?

I just throw it in uncooked. If it's too dry when you mix things up, maybe put a bit of ketchup, or a 1/4 of water in it. Usually the egg makes it moist enough. I know it sounds weird, the chicken stuffing, but the recipe that I found used it. The stuffing mix also has some herbs and spices in it as well, so it's extra yummy I think. Again, throw whatever you want in there with it too...chopped onions, chives, chunked or shredded cheese, green peppers... let me know if you enjoyed it!

ok I made a lazy man chicken cacciatore...

coated the chicken with a mixture of flour, Parmesan cheese, garlic powder, oregano, thyme, salt and pepper and then fried it just until lightly browned and then threw that along with some chopped onions and a jar of sgetti sauce into the crock pot.... I would have added some bell pepper too but I don't have any at the moment.... i will serve it over angel hair pasta.. (my hubby's favourite type of pasta) and i will probably make some garlic toast too...

The hotdogs and beans were good!

I got the Bush's maple beans and they were awesome!!

Now for dessert- I think I will run to TCBY- the fat free sugar free soft serve is amazing!!
