trying out a new recipe today... throw a can of chicken broth and can of tomatoes (the recipe called for Rotel but I just used the Italian diced tomatoes) in a sauce pan stir in 1 cup of rice .. throw some chicken tenders on top and sprinkle with salt and pepper and garlic powder... and cover and cook for about 20 minutes...

We had homemade burgers and fries yesterday. They were yummy. Not quite sure what we're having this evening, but I think it may involve a Greek salad.

We had some 'normal' food, Pork Chops, potatoes, yams and salad. It was good, funny, nothing tastes the same as it does in Canada (think that might have been mentioned before

) - not bad, just not the same.
Even the yams are a different color (lighter orange) and a different texture. Now i'm sure there are a gazillion different varieties of yams, but they look the same on the outside!

I think I read somewhere that what Canadians think are yams are actually sweet potatoes in the States, or is it vice versa? Anywho.

Mmmm. Swiss Chalet.

You know what I discovered about the yams/sweet potato thing? Some of the stores label them incorrectly. And sometimes they call them something completely different. I think the small red or white potatoes are called 'creamers'.

Anyway, we checked out krystal's today, had those little burgers. They taste like pork. Anyway, they were ok but not something I would want often.
Not sure what's for dinner, we really need to go grocery shopping.

We had sausage on a bun with homemade fries. Or, at least, my husband had sausage on a bun with homemade fries. I got caught up in making his lunch for tomorrow (he's working), as well as homemade chicken soup for Monday (he's working late that day) so I never actually got around to eating. Maybe later.

We ended up ordering Chilis - Mike picked it up, I just had the grilled chicken with corn on the cob, it was pretty good.

Hmmm. Haven't had Chilis here yet. They just opened one up down the road. I've only eaten there, once, in Springfield, Missouri. Guess I should try it.

i've got to start getting organized for david's visit next weekend. i think we're going to have chilean marinated pork chops on saturday night... that's as far as i am with planning.

(come to think of it, maybe cleaning and doing laundry would be in order, too.)

I am queasy again (no surprise there!) so I will probably be having dry toast and ginger ale. Hubby will take advantage and eat hot dogs and potato chips, I'm sure ... without a veggie in sight.

enchilada casserole
fry up some ground turkey or ground beef, onion and garlic .... Throw in about 2 cups of salsa, a 10 ounce can of enchilada sauce*, and a 14 ounce can of refried beans.. Let that simmer for a few minutes..
then layer some corn tortillas in a sprayed baking dish... (I used about a 9x5 pan) then layer about a 1/3 of the meat sauce and then sprinkle some grated cheese and then another layer of tortillas, another 1/3 of the meat and some more cheese and then another layer of tortillas and the rest of the meat and some cheese... the amount of layers depends on the size of your pan.. the recipe said to use a 9 by 13 inch pan but I figured that would make to much.. I still made the same amount of the meat mixture and I really don't think that would have been enough for 2 layers in the bigger pan ...... I like it better the way I did it because you got more layers of tortilla ....
Cover and bake in the oven for about 20 minutes.. Remove cover and bake for about another 5 minutes...
* I used one of those packets of enchilada mix but silly me didn't read the back and didn't notice that I needed tomato paste to make the sauce.. so I just mixed the water and the spices in a pot and heated it up and then I added some cornstarch to thicken it up.. then I just put about 10 ounces of sauce into the meat mixture..... it actually turned out better this way... it wasn't so strong...

This sounds very good Desigal, and I'm going to try and make this later this week! I'm off for a couple of days to a conference and they're feeding us, so no cooking for me! On the weekend we had grilled chicken, salad and potatoes and last night homemade burgers and corn on the cob. Was yummy.

Well we went grocery shopping last night. We checked out Publix, kind of nice store, nothing too spectacular (except the prices!). A banana at Walmart/Albertson's/Publix is still a banana!
I did buy a few things there and then we headed over to Albertson's to continue shopping (even though I didn't really feel like shopping in the first place).
So for dinner it was a chicken, coleslaw and potato salad from the deli! We didn't get home until 8:30.

not sure what i am going to make for dinner.. we had the leftover enchilada casserole for lunch...
I am going to make an apple pie... I found this super easy recipe for pie crust that you just have to pat in the pan... hubby really liked it but I wasn't crazy about it...

this time I am doing an apple pie filling from scratch.... I found a recipe on recipezaar that looks good and then I just do and oatmeal, brown sugar type of crumble topping....

I am going to try my fav recipe Rosemary Roast chicken with potatoes:
1 onion, sliced
3 garlic cloves, minced
6 chicken legs, thighs or breasts
3 carrots, cut into large pieces
4 potatoes, cut into large pieces
2 yams, cut into large pieces
dried rosemary
dried dill (optional, or use all rosemary)
salt & pepper
water
Preheat oven to 350ºF.
Place onion and garlic in bottom of large roaster. Add chicken pieces. Add vegetables. Sprinkle generously with rosemary and dill. Add salt and pepper to taste.
Fill roaster about half full with water, just enough to cover the top of the chicken pieces. Cover and cook in preheated oven for approximately 2 hours. For crispier chicken, remove the lid for the last 30 minutes.

Easy As Pie No Roll Pie Crust
1 1/2 cups flour
1 teaspoon salt
2 tablespoons sugar
1/2 cup oil
2 tablespoons cold milk
1. Sift together flour, salt and sugar right into pie plate.
2. Beat together oil and milk and pour over the flour mixture.
3. Quickly mix with a fork just enough to moisten flour.
4. Press into pie plate, prick all over with a fork and bake at 425° for 15 minutes.

Apple Pie Filling
5 1/2 cups peeled, cored and sliced cooking apples
1 tablespoon lemon juice
1/4 cup white sugar
1/2 cup brown sugar
3 tablespoons flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Mix all together...
*if you use a sweet apple you might want to reduce the sugar....

Oatmeal Crumb Topping for Pies
1/2 cup butter
1 cup brown sugar
3/4 cup flour
3/4 cup oatmeal (any type but instant)
1/2 teaspoon cinnamon
1/4 teaspoon salt
1. In a large mixing bowl combine all the ingredients except the butter.
2. Cut butter into mixture with a pastry blender until mixture resembles coarse bread crumbs.
3. Spread crumbs over prepared fruit mixture of your favorite fruit pie.
4. Do NOT add top crust.
5. Bake as directed in your fruit pie recipe.
6. If crumbs become too dark while baking, cover loosely with foil, but remove foil the last few minutes of bakings so the topping will crisp.
7. Note: when using this topping there is no need to dot the fruit with butter, if your recipe calls for that.
* I did only half a recipe of the crumbs and it was plenty...

I bought potato and ham soup yesterday, so I boiled some potatoes and asparagus and added them to the soup - with some Italian bread, it was good.

I think it is called a Dutch Apple Pie when it has the crumb topping..... most of the crumb topping I saw didn't have the oatmeal though... but i like it with oatmeal....

We're flying to NC on Friday so I'm busy trying to use up the perishables in my fridge. I'm thinking something with green beans because they look like they'll go before the asparagus. Maybe pork chops in a mushroom gravy and parsley potatoes. Oh crap! I have fresh parsley to use up. Maybe I'll make Italian salad with parmesan to go with it. Sheesh.

I can barely manage to eat one course. Could you imagine 5?

My husband has a speaking engagement there. His parents and cousins live there, also, so we'll be spending time with them. His cousins are fun but his parents are very..... hmmm..... parenty.
