hubby has been sick these last couple of days and tonight he wanted menudo, so that is what he had and I had macaroni and cheese....

Menudo? Isn't that some boy band that Ricky somebody-or-other used to belong to?

Egads. I just googled it. It's also a soup made with tripe. Equally horrific. laughing.gif

hubby likes it... tongue.gif I don't make it though we had a can of it in the cupboard....
*Marilyn*
ok i think I am going to make grilled ham and cheese and something.. maybe soup....

i was going to make chicken something but it is still frozen and hubby has school at 3:30 so thats out tongue.gif

i was going to make this pizza casserole thing at first but everything is frozen for that too but maybe I will make that for when he gets home from school.. we will see unsure.gif

*Marilyn*
ok we had grilled ham and cheese and some leftover mac and cheese from yesterday.. holy cheese overload tongue.gif hubby only ate his grilled cheese though....

tonight I a think I am going to make that pizza casserole.. It is a new recipe but it looks good...

Delicious Ground Beef Pizza Casserole

# 1 lb lean ground beef
# 1 large onion, chopped
# 1 medium green pepper, chopped
# 1 tablespoon fresh minced garlic
# salt or seasoning salt and pepper
# 3-4 tablespoons grated parmesan cheese
# 1 lb pepperoni, divided
# 1 (4 ounce) can sliced mushroom, drained
# 4 cups pasta sauce
# 3-4 cups rigatoni pasta (cooked to firm-tender and drained, do not overcook the pasta)
# 4 cups mozzarella cheese, divided
Grease a 13x9-inch baking dish.

Cook the gound beef in a medium skillet with the onions, green peppers, garlic, salt pepper until meat is browned and veggies are tender; drain fat, and mix in the Parmesan cheese.

Stir in the 1/2-pound pepperoni (chop this pepperoni to add to the mixture, leave the remaining half pound pepperoni sliced), mushrooms, pasta sauce; stir well until combined; simmer for 20-25 minutes on top of stove.

Set oven to 350 degrees.

Place the cooked rigatoni pasta on the bottom of the greased baking dish.

Sprinkle with 2 cups mozzarella cheese over the pasta.

Layer with pepperoni slices evenly over the cheese.

Top with the ground beef/pasta sauce mixture.

Bake uncovered for 30 minutes.

Remove from oven, sprinkle with the remaining 2 cups mozzarella cheese.

Return to oven and bake for 10 minutes longer, or until bubbly.

Let stand for 10-15 minutes before serving.
Krikit
OMG, that sounds good. I am STARVING. laughing.gif
*Marilyn*
I think I am going to mix the sauce and pasta together or put the sauce on top of the pasta and then the pepperoni and cheese... if you put the pasta and then the pepperoni and cheese and then the sauce the pasta doesn't really get the sauce.... hmmmm
*Marilyn*
I am making Chicken Hurry tonight... one of my favourites...

1/2 cup ketchup
1/4 cup brown sugar
1/4 cup water
1 package onion soup mix

mix all together and pur over about 2 pounds of chicken parts...

I thawed some sirloin chunks that I'd cut up to make shiskebabs before I knew that my husband was working late tonight. So I guess I'll make that anyway, even though he doesn't like a real meal when he wanders in at 11:00pm. I/we'll have that with rice.

Anyhoo, I still remember how to cook, just having garlic mashed potatoes, asparagus and steak good.gif

Hubby bought Lunchables - mini burgers and mini hot dogs - in an attempt to recreate Krystals at home. The Lunchables are honestly the cutest things imaginable ... but teeny tiny since they are made for 5 year olds. My pregnant belly will need a little more food, so hubby is cooking regular burgers too!

Well, last night I got carried away at the Walmart (hey.... it was virtually empty of trailer park types so I took advantage) and didn't get back in time to make shiskebabs. Instead we had chicken wings and french fries. Total copout. laughing.gif

Tonight we will have shiskebabs with rice. tongue_ss.gif

I love Chicken Hurry. Tonight is going to be a roast cooked in the rotissirie and rice I think, perhaps some stir fry veggies.
MissStacey
Mel was teaching last night so me and my stepson had grilled cheese and tomato soup. Mel had some leftover chicken taco's when he got in.

I am on my own tonight- Mel is teaching again and my stepson is with his mom. I think I will just make some tuna salad for sandwiches and leave some tuna for Mel when he comes home.

Yay for grilled cheese! We had one for lunch yesterday.

So we sat down to eat our steak last night and about 5 mins later the guy shows up with a dryer (the one in the place we are renting wasn't working). So my Husband nicely stands there and I go in to the bedroom and finish eating.

Tonight, not sure, maybe pork chops andddd beans!

Oh wait. I take that back! I'd like to change it to .....

Damn you, going out for Indian! What's wrong with you? Why can't you eat at Cracker Barrel like the rest of us losers?!!! headbonk.gif

Shame!

And good on you krikit for bringing some of the hostility from the lunch thread to the dinner thread. Hey, what if we eat at a buffet, should we have a buffet thread?

I was thinking of making pork chops, but after having the super duper fried piece of chicken from Albertsons, I'm not really hungry. There is an Indian restaurant around the corner from here, will have to check that out, also a Thai restaurant.

I know! I asked our next-door neighbour (who is Indian) where a good Indian restaurant was and he didn't know! ohmy.gif (And he owns a freaking hotel, too! laughing.gif ) So then I asked him where an Indian grocer was and he told me. I went there and it was total CRAP. I was so bummed. crying.gif

Ohhh I just discovered this thread! It's so nice and friendly in here!

It's kind of like walking around in a busy mall on a Saturday, lots of people and kids screaming and running around (clearly that is OT) and you just walk into a department store to get away from the traffic, and suddenly you can hear the easy listening music play and people are relaxed and friendly and the air smells good and it's all very lovely. laughing.gif

Yes...or even better chocolate cake...the bread like texture leaves the impression that it could be bread and therefor totally suitable for brekkie!

The other day I had guacamole for breakfast. That was really good too - maybe the onion breath was not so much appreciated in the office at 9am, but it was really yum. laughing.gif

FINE. Since my aggression was not returned in an equally devious manner (you amateurs sleep.gif ), here goes my contribution for tonights' Indian dinner chez Liz.

Spiced Rice according to Len

4 cups'o H2O
2 cups brown basmati rice
3 cinnamon sticks
5 green cardamom pods
cloves to taste
cayenne
cumin
garam masala
vegetable oil (say 1 spoonful)
mustard seeds (a bunch)
curry powder

OK. Now boil the water blah blah blah. while water is boiling, heat the oil and add mustard seeds til they pop pop pop. Then add all other spices to oil and stir (ABSOLUTELY ESSENTIAL TO SHAKE YOUR OWN BOOTY WHILE ADDING SPICES) to a nice rhythm. when water boils, add rice and spice mixture. Low heat yada yada yada. Voila.

Sh1t. I forgot Chicken Biryani has spiced rice as part of the recipe rofl.gif
