ah, chicken parmigiana tonight with pasta and mixed vegetables:-). Oh, and I have whole wheat and honey bread in the breadmaker, too:-)
It is weird here - the temperature is unseasonally cold - freeze warnings out for last night, tonight and tomorrow - it is 45 degrees right now - and we are in the middle of a thunderstorm with teaming rain. This was definitely NOT in the forecast!
Oh, and any other Canucks in the area are more than welcome to join us when we meet. We were discussing having a local get together with other Canadians in the area last year and we renewed that discussion on Saturday night. There are actually a good number of us here! Then, we can expand out and welcome non-Canadian VJers as well - I have met some of those here too:-).

well, I was going to have leftover sgetti for din din tonight and was going to give hubby some canned chicken gumbo soup or canned clam chowder soup and make him some biscuits to go with it but he didn't want it and I even offered him the sgetti and he didn't want that either so we ordered in from the place down the street

he is having the chicken terakyi combo and I am having the cheeseburger combo...

I just put a small pork roast in the slow cooker with some orange juice/soy sauce I made up. Asparagus and rice will accompany it!

last night I made my version of Alice Springs Chicken from the Outback...
*Grilled chicken breast and bacon smothered in mushrooms, melted Monterey Jack and Cheddar cheeses, with honey mustard sauce*
... I have so many onions to use up...so sauteed onions, mushrooms, and bacon together...added a little beef stock to thicken it up.. grilled chicken breasts...put them in a dish topped with the onion, mushroom, bacon mixture..then topped that with cheese (also trying to use that up), baked in the oven until cheese was melted and bubbly... made some asparagus and a salad to go with it... mmmmmm...
my kitchen is now about 98% packed up... no plans to make dinner tonight... not sure if we will have anything..had a late lunch.. tomorrow we have my husbands sons and brother coming to help pack up our U-Pack so we will get pizza tomorrow...then we hit the road Thursday morning...exciting and scarey at the same time... have no idea what we will be eating on the road..we dont eat alot of fast food..so hoping to stick with places like Subway...we lose our computer tomorrow afternoon.. so will see you guys back online next week!

Savory Sweet Crock Pot Chicken
Ingredients
4 bone-in chicken breast halves
1/2 cup water
1/2 cup packed brown sugar
1/2 cup ketchup
4 tablespoons white vinegar
4 tablespoons lemon juice
4 tablespoons Worcestershire sauce
1 small onion
1 tablespoon mustard
2 teaspoons paprika
2 teaspoons chili powder
1/2 teaspoon salt
1/8 teaspoon pepper
1.Put all ingredients except for chicken in crock pot and stir.
2. Add chicken and spoon sauce over chicken.
3.Cook on low for 6 1/2 hours.

Well, we are in St Louis and we had Hardees! We get to the hotel and I am starving, so we find this nice menu and delivery service in the drawer and I call them and they say it will take about an hour and a half for delivery - so we drive up the street and grab a sandwich - which was ok.

it was pretty good....

i would reduce the vinegar a tad next time I make it though... and i am not a big paprika fan so I only added a dash or two of it... and the sauce was good over the rice.. it is a runny sauce so if you like a thicker sauce you might want to thicken it after you cook the chicken...

The low on my slow cooker is too high also. Note to manufacturer: Food does not bubble on low, thank you very much. Thank goodness there's a "warm" setting.
The painters will be doing the kitchen, living room and dining room today, so I'm pretty much thinking takeout. Or dinner out. Maybe the local Mexican. My husband likes Mexican food. I'm not crazy about it but I can probably find something on the menu so he can get his fix.

i would reduce the vinegar a tad next time I make it though... and i am not a big paprika fan so I only added a dash or two of it... and the sauce was good over the rice.. it is a runny sauce so if you like a thicker sauce you might want to thicken it after you cook the chicken...

Anyway, dinner tonight. I think we're roasting a whole chicken with potatoes, onions and carrots. My husband likes to add that Lipton onion soup mix, and it's very savory. Served with a salad: lettuce, strawberries, red onion, peanuts and cheese with balsamic vinaigrette.
I'm so excited about spring-hello fresh veggies!!

yeah pineapple would work good with it

and yeah my crock pot is messed up too.. I thought it was just my crock pot.. like the chicken I made yesterday.. I set it on low for 8 hours because I know it will be done in half that time but the chicken was done in about 3 hours

ok i found this recipe.. of course I am going to jazz it up a little, it is a little too plain...
Eggless Meatloaf
1 pound ground beef
3/4 cup cooked rice
1 tablespoon brown sugar
3/4 cup chopped onion
1 tablespoon ketchup
1/2 cup ketchup
--------------------------------------...
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine the beef, rice, brown sugar, onion and 1 tablespoon ketchup. Mix well and place in a 5x9 inch loaf pan.
Bake at 350 degrees F (175 degrees C) for 30 minutes. Spread remaining 1/2 cup ketchup over the top of the loaf. Bake for 15 more minutes.

Going to warm up the slow cooker pork I have and hope that I can tenderize it some more. We'll have pulled pork sandwiches I think. I'm trying to clean out my fridge because we'll be away for 10 days or so, so I don't want to be looking at anything moldy when I get back!

We had chicken pot pie and veg last night. It was delicious. The painters left in record time so I just pulled it out of the freezer. I had made it out of leftovers the last time we had roast chicken and had frozen it, so that came in handy. Not too sure what we'll be having this evening yet. Will wait and see what everyone else is having. lol

I never got to do the crock pot chicken recipe that Marilyn put up. I had the chicken defrosting in the fridge- but it took the entire day to get my drivers license. We have people coming tomorrow for margaritas and chicken tacos so I can use the chicken then.
Mel went to shoot some golf balls tonight, I was invited but wanted to stay home. I may run to Subway in a bit.

That sounds really good. We had a big mac and fries, I can't remember the last time I ate McDonalds. I was really hungry though and it tasted good!

I went grocery shopping today and spent entirely too much money.. I felt so bad

but now our cupboards and fridge are all full again....
I think tonight we are going to have hotdogs and ramen noodles.... too tired to cook...

We are in Calhoun, Georgia now and yes, there is a McDonalds in the parking lot! However there is also a Ruby Tuesdays, we have never eaten there so we popped over and got take out and it was delicious.
I had a Turkey burger with fries and green beans, my Husband had ribs, steak, fries, broccoli and mashed potatoes, which were all delicious!

mmmm, it was good...
Creamy Chicken Chow Mein1 (16 ounce) bag of frozen chow mein stir-fry
2 cups diced cooked chicken
1 can condensed cream of mushroom soup
1/4 cup water
1/4 mayo
1 clove garlic, minced
1 tablespoon soy sauce (i used a little less then a tablespoon)
1/4 teaspoon black pepper
Stir fry vegetables according to package directions
In a separate bowl, mix the remaining ingredients except the chicken together and add to the vegetables.
Stir in Chicken.
Heat throughly and serve over cooked rice, noodles or chow mein noodles.

That sounds delicious Cassie. So which town were you living in near Calhoun autumnchik? Krystal's is right across the street from where we were staying. We are in Tifton now. Not sure what's for dinner but there is a Cracker Barrel right next door.

Cracker Barrel is pretty good:-).Well, you must have driven right by our place today - at least within 2 miles of us if you were on I-75.
It sure is nice having company:-). We went out to dinner tonight in Morrow to try a French restaurant we saw when we drove by a few weeks ago. It is called Peche and it was wonderful! Full marks for superb service and the food was great. A nice jazz duo was playing sax and a mellow trumpet as we ate. I had trout almondine with a mango lime sauce, fresh green beans and sauteed potato sllices; Joe had the pepper steak with scalloped potatoes, and my friend had pecan coated chicken breast with peach chutney, sweet potato casserole and fresh green beans. We split a raisin and peach bread pudding with ice cream, whipped cream and this wonderful burnt brown sugar sauce. Yum!

That sounds more New Orleans/Southern than French. But it sounds really lovely with the live jazz and the superb service. Sure wish I could find something like that here. I'll keep looking.

Last night we had salad and chicken pita pockets with roasted peppers and onions and homemade tzatziki sauce. We have leftovers so I'm thinking I'll make another salad and that's what we'll have again tonight. However my husband hates leftovers, so I'm not quite sure if I'll do that or not. Perhaps I'll keep them for tomorrow and make something more traditional today.

Everyone's dinners have sounded so yummy lately. Tonight, hubby and I are having Sloppy Joes. We realized that we both have not had them since grade school and they just sounded fun. We'll have a salad too.

Yesterday for dinner we sampled the cuisine of Florida! On our first trip to Walmart we stopped at Wendys and I had the grilled chicken burger also had a coke with ice which tasted funny to me and which I now realize contained ice cubes made with the very distinctive Florida water!
Then, after our second trip to Walmart we split a sausage on a stick, stuck in to buns I have had in the car for like 3 days, with some mustard only as I can't find the ketchup we brought from Calgary - might be in the relocube

I love sloppy joe's!! I make them often. I make them with a mix of ground turkey breast and extra lean beef. I also add chopped onion and peppers and serve with whole wheat buns. I try to find ways to make all recipes a little leaner and healthier.
Tonight I am making the Sweet and Savory crock pot chicken recipe that Marilyn posted. I will serve it with whole wheat quinoa. roasted asparagus, cauliflower and a salad.

Ohmygosh, the Renaissance Festival!!! I went to the one in Ontario and we had a blast! I distinctly remember doing the pub crawl where we all had to have a full glass of beer or grog (or whatever it's called) at all times and hang onto a rope as we wended our way through the village. Every time we saw a wench or something we'd stop and yell "A wench! Drink to the wench!" (or somesuch nonsense) and have a swig of our beer. We also had to sing this song to the tune of Doe-A-Deer:
