Tried to edit my last post to say what I was going to make for dinner, but this site has been hanging for me all morning so I was just about to give up! I'm going to make this recipe that I found in the paper a few weeks ago called Chupacabra Chicken. I'm going to substitute that tough beef I had on the weekend though, and it should be tender after being in the crock-pot. Here's the recipe if anyone's interested.
1 to 2 tbsp. ground cumin, to taste
1 cup all purpose flour, divided
3 to 4 pounds skinless chicken thighs
2 (16ounce) jars salsa or picante sauce, divided (mild, med, or hot)
1 (8 ounce) package frozen corn, thawed
1 (15 ounce) can chili beans
1 (15 ounce) can black beans, undrained
1 cup quick cooking brown rice
Mix cumin into flour.
Place half the chicken into a large plastic bag. Add half of the flour mixture and shake to coat. Transfer chicken to plate then repeat with remaining chicken and flour.
Empty one jar of salsa into slow cooker. Add chicken, then a layer of corn. Make a layer of chili beans and black beans.
Pour remaining salsa over the beans.
Cover and cook on high for 7 hours. Add rice, stir, and cook 1 hour longer or until rice is tender.
Variation: To make chupacabra Beef, substitute cubed chuck or stew meat for the chicken thighs.
Because my beef is already cooked, I'm going to forgo the flouring of the beef and just add some cumin and flour to the salsa in the crock-pot. I'm also thinking of increasing the rice to 2 cups at the end.
Last night we had a rotini sausage bake with spicy tomotoes. It was delicious.

Last night we had an olive, artichoke, and mushroom thin-crust pizza. It was unremarkable. Won't buy that again.
Tonight? Hmm. *thinking* Okay, I'm done thinking. We are going into Orlando this evening to the Mall at Millennia, so I've decided that we will eat there. (Gosh, it's tough making executive decisions like that. Good thing it pays well.

there are some days when only processed cheese will do, seriously.
I confess to taking a piece of processed cheese, putting a big dollop of BBQ sauce on it, and eating it.
there is nothing better on a hot Oklahoma day than a Cherry Limeade from Sonic. Word.
Today I will be having some pizza that my friend brought over for me to eat while recuperating, it looks very tasty.

ok I had great plans to make my husband all his favorites for his bday last week and then he asked if we could get Chinese..another fave for him...so we did..probaly our last "Canadian Chinese" meal.. so tonight were having steak, roasted asparagus, roasted broccoli, salad, and bruschetta.. today was my last day of work so we will call it an unemployment celebration..LOL ...now with both of us not working the real packing can begin...woo hoo
also have to say that we are also enjoying Ice Capps from Timmies again..2nd time this week.. sounds corny but Im saving the Ice Capp cups..gonna try some of the copycat recipes when we move and use the cups to trick us into thinking its a Timmies..LOL

i made Italian Mac And cheese...
just fry up some ground beef and onions and add a can of Italian diced tomatoes and a bit of extra basil and oregano.. meanwhile prepare mac and cheese like you normally would... when done mix all together... then you can either eat it like that or throw it into a casserole dish and top with some grated cheese and bake it until cheese is melted...
if you want to change it up, add a jar of salsa instead of the canned tomatoes...

I am so torn between food options .... hubby has offered to cook burgers on the grill (always wonderful when hubster cooks), but ....
yesterday at the grocery store, they had nitrate free lunchmeat FOR THE FIRST TIME EVER!!! Such a great thing for this preggo to see .... so now I can have a nice ham and cheese sandwich (of course, after thoroughly heating the ham) and I have tomato rice soup, my favorite canned soup ever.
Oh the choices, what WILL I do???

I made that dish I posted yesterday in the crockpot. I used the leftover beef, and it was wonderful. Very tasty. Between the corn and beans though....

Cricketers Arms Pub for dinner. It's touted as Orlando's "Premiere Authentic English Pub". Well, as a Brit, I can tell you that it is not authentic and far from "premiere". We had the fish & chips. Ugh. They were just as bad as the service. I am soooooooo looking forward to being in England this summer so I can have real pub food. bleh. *shakes off memory* The Guinness was good, though.

today I am attempting a recipe I found for El Pollo loco Chicken.. I found a couple of different recipes so I kind of combined a bunch of them ... they do this citrus marinade thing before they grill them... and then I am going to serve the leftover mac and cheese from yesterday with the chicken...

Well...I've never posted over here before, but I love food and I'm always looking for good ideas on food. It's just me still...hopefully there will be two of us to cook for by the beginning of Fall.

Tonight I think I'm going to have leftover pizza from California Pizza Kitchen. Some Thai Pizza and some Mushroom Pizza. Yum!

That's funny, we went to the Aussie pub in Calgary and it had nothing to do with Australia really, few aussie banners on the walls.
I had a McDonalds chicken burger at like 9:30 last night, that was dinner. Had pizza for lunch. We went to Hyvee yesterday and picked them up, after we picked up my Nephew from school.

Well, I know what I'm having for dinner this evening. I was at the hair salon this morning and was browsing through their Gourmet magazines. Ended up asking the hairdresser to photocopy me 3 recipes! Decided to switch to People magazine before I found another.

Tonight's dish will be.... drum roll please.... Chicken in Riesling. yum

My Sister and Brother in Law have gone to the casino, they drive an hour to one in Iowa. Anyhoo before they left they BBQ'd some sausages and steak and pork chops, and there is asparagus cooking now and potatoes in the oven, dinner!
I'm going to wait a little while to eat but my Husband is eating his steak now - says it is very good!

We had chicken cooked in the crockpot. I used a seasoning packet I saw at the store yesterday for Italian herb chicken. Very easy ... put 2.5 pounds chicken pieces and 1 package mushrooms in the crockpot. Make a sauce by mixing 1 can tomato paste, the seasoning packet and 2 cans stewed tomatoes. Pour the sauce over the chicken and then cook all day. Hubby liked it a lot. I served it over whole wheat penne, but if I did it again, would probably serve it over rice. The sauce was a bit watery and I think would be better with rice.

We're going to have hamburgers tonight. On the outside grill if it's not raining, but if it's raining on my George Foreman. We'll have corn on the cob to accompany it. Just started seeing it in the stores, and it looked yummy. You never know though with corn on the cob!

Hey, another Canadian in the Atlanta area! Nice to meet you Steph. Whereabouts are you located? (We're about 22 miles south of Atlanta).
Tonight was a stir fry/saute with the left over roast chicken, broccoli, cauliflower, carrots, corn, peas in a garlic ginger sauce and spiral noodles, a salad and ice tea. We got into the 80s ehre today and are currently under a dark threatening sky with thunderstorms in the forecast. Right now it is that pause before the storm and it goes along very well with sitting back after dinner and just relaxing:-).

What's for dinner changes drastically depending on whether or not my wife and I are together at the moment. When we're together, we eat "real meals" cooked and prepared by her. I attempt to help, mostly by keeping her company and staying out of the way. When we're apart, I instantly become the "Microwave Gourmet" which my wife says is an oxymoron.
Something my wife finds interesting -- and perhaps a little disturbing -- is that she'll ask me what I ate for dinner and I'll respond with, "I don't know; some sort of meat (or chicken) thing." She can't seem to understand how I could eat something and not know what it is... but I could watch the trailer to the new
Iron Man movie and identify the types/models of cars that Tony Stark has in his garage (including the one he apparently crashes onto while testing out his armor).
I've tried telling her that most of the time, I just don't care what I eat. So long as it's not moving or attempting to harm me, it's fair game. This does not include pets. I do not eat dog or cat. Most other things... sure, why not?

I posted this on another thread but I figured i would post it here too...
this is so easy to make and so yummy!!!!
Adel's no-Bake Cheesecake
1/2 cup melted margarine
2 1/4 cups graham crumbs
1/2 cup brown sugar
1 envelope Dream Whip (follow directions)
1 - 8 ounce cream cheese, softened
1/2 teaspoon vanilla
1 cup icing sugar
1 can pie filling
Mix margarine, brown sugar and graham crumbs together and press into a 8 by 8 inch square dish and then refrigerate. Prepare Dream whip as on envelope, add cream cheese, vanilla, icing sugar and beat until fluffy. Spread mixture over refrigerated crust and refrigerate until set, about 4 hours. Then add pie filling on top and let set until ready to serve.

tonight were having Swiss Chalet... weve been packing all day and I dont feel like cooking..My husband took me to a Swiss Chalet a few years ago when I first moved to Canada..I didnt care for it, and never went back....last week though he received some Swiss Chalet gift cards for his bday..so if its free, I will give it another try..LOL..and if I still dont like it..I will just put some ranch dressing on it..LOL
also had a coupon for Blockbuster so going to watch a movie too...I chose 3 documentaries "Wild Parrots of Telegraph Hill", "Grizzly Man", and "Souvenir of Canada"...my husband got "There Will be Blood"... will probaly end up doing Rock, Paper, Scissors, to see who gets to pick the movie..LOL

Well, we just got back from a lovely dinner with Karen and Joel at the Blue Willow Inn in Social Circle, Georgia (what a name, eh?). Social Circle is the epitome of the antebellum south with wonderful old plantation mansions and gorgeous landscape 'vista' lawns everywhere you turn:-). Blue Willow Inn is one of them. In spite of having reservations for 6 they made us wait nearly half an hour because a group of 16 who had previous reservations were 1 1/2 hours late and instead of telling them they were no longer good they honoured them even though it made everyone else's reservations late. (They had told Karen they would only hold our reservation for 15 minutes so we were not impressed about this!).
Regardless, once we were seated everything was great. The service was very solicitous and the food - which is a large Southern buffet - excellent. Tonight was 'seafood' night so along with the traditional southern fare of green beans, collards, baked beans, sweet potato casserole, twice baked potatoes ( and a bunch of other stuff) they had scallops, shrimp, crab legs, breaded shrimp, catfish, salmon, stuffed crab, roast beef and barbeque beef - plus a salad bar and a dessert bar. We were all stuffed!
It was lots of fun - Karen and Joel said to say hi to everyone and they are both really busy with work right now but haven't forgotten anyone on VJ :-)! So, what's for dinner tonight? Far, far too much food! hehehehehe

Last night we had one of my favourite salads: romaine, radicchio, fresh basil and Italian parsley from the garden, mushrooms, and fresh shaved parmesan with a red wine vinaigrette. First time hubby ever tried it and he loves it. Yay! We also had a spicy Thai shrimp and noodles dish. Then fresh strawberries with a fruit dip. (cream cheese and marshmallow fluff) I only had room for the salad and the strawberries. I'll probably have the Thai shrimp for lunch or sumpin. Tonight we will have a pork roast, I think.

One, I am jealous that the Georgia gang all got together....I wish some Canuckians lived closer to me.

We haven't had supper yet, cause we had a late lunch: 24 hour marinated chicken breasts covered in panko bread crumbs and baked, creamed corn, and skillet poatoes. Yum!

I'm jealous too ... not only that the GA gang got to enjoy each other's company, but also that they got to eat yummy Southern cooking!!! Of course, if hubby gets his way, we will end up back in GA in a year or two ....
Just got back from CT (mom threw me a baby shower this weekend). Before we left tonight, we had pizza. I really do adore CT pizza (first pizza in the U.S. was in New Haven). Tonight we had 2 kinds: bacon, mushroom, fresh tomato and onion ... and white clam pizza. I was in HEAVEN!!!
This week's menu will feature wedding shower leftovers: lunchmeat for hubby, various cheeses, an artichoke heart appy, chicken salad, potato salad, macaroni salad with shrimp and crab, raw veggies, and tres leches cake (my all time favorite, have only had a few times since leaving CA, and my mom found a bakery to make one!).
