dinner is about the only time I like to eat Breakfast foods tongue.gif

we did end up having scrambled eggs and hash-browns....

I went with hubby to Rite Aid to pick up the milk and eggs and he wanted some ice cream too... but we ended up spending about 20 bucks tongue.gif they had a lot of their snack type food on sale and hubby kept piling stuff into the basket tongue.gif

tonight we are going to a wedding reception so I have no idea what is for dinner but it will probably be some type of Mexican food...

Well, we are actually going to the grocery store this afternoon! This should make dinner more interesting, however for today we will pick up something at the supermarket, like a chicken or pizza.

Tonight is spaghetti. I made a huge pot of homemade sauce yesterday- I put lots in the freezer for later use.

We have people coming over tonight for the Mardi Grad parades (we live close to the parade route) so it will be so easy to warm some up and boil some noodles.

It's just me...hubby is working and won't be home til 10pm so I'm having leftover rotisserie chicken, mashed potatoes with cheese on top and a salad with homemade Balsamic Vinegar Dressing. Mmmmmm!

Balsami Vinegar Dressing

1/4 cup Balsamic Vinegar
1/4 cup olive oil
2 TB lemon juice
2 tsp soy sauce
1 tsp sugar
3 or 4 garlic cloves, minced (I used the jar stuff)
Salt

Whiz all ingredients together in blender or whisk by hand til oil and vinegar mix. Makes 3/4 cup.

ETA: I forgot the salt but you know, it's pretty good without it.

yesterday at the wedding we had appetizers, mostly seafood and then salad and the main entree was a big piece of chicken with a cream sauce, rice and vegies.... there was actually a lot of food on the plate...

I ended up making Fettuccine Alfredo Tuna Helper for dinner tonight.. it is quick and easy tongue.gif

We had boneless chuck roast, rice, green beans, and a gravy. I try to make enough to have lunch the next day...having eaten school lunches in the past, leftovers from dinner are way more appetizing! smile.gif

that is what I usually try to do for my hubby too.. he says the guys he works with sometimes get a little jealous...

You know, there are all sorts of delicious meatloaf recipes out there. My husband LOVES meatloaf. How about sharing your recipe? smile.gif

I think meatloaf gets a bad rap...

Meatloaf is a big plus here too. I just put a cottage roll in the crockpot with some potatoes and will add cabbage later on in the day. Mmmmmm, get to smell those lovely juices cooking all day - I use apple juice along with a bit of water to make the ham extra sweet. Joe got to take the left over lamb stew from when we went out for dinner on Saturday for his lunch today - there was so much left over we got another whole meal out of it!

We had shepards pie last night. I never make it with ground beef, I use either steak or roast, slow cooked and as I had a roast that's what I used, it was delicious and there is enough left over for Tuesday!

Tonight, as we did go grocery shopping haha - it will be beef stir fry. I bought bean sprouts (one of my favorites) and they don't keep very well.

I made ravioli and garlic bread last night. Tonight is hubby's turn to cook smile.gif

BTW, you guys are making me SOOOOO jealous talking about the grocery stores you get to shop at. In my area, Shaw's has a monopoly ... it is pretty depressing that it is the only large grocery store around (there are a couple mom-and-pop places that are great, but lack variety). Prices are so high at Shaw's. I always take a cooler when we head to CT to visit family ... and we stock up on lots of stuff.

French onion soup tonight for me. I love making it, it's very easy, and it's so awesome, it can probably cure cancer.

I love tabouli - I've made it as well. Your dinner does sound good:-)

I am making the "mock pot roast" recipe that is in the most recent copy of Saltscapes magazine.

In other words, fancy meatloaf and veg. biggrin.gif

I think it is just going to be hot dogs tonight because hubby has school tonight and won't be home until around 9pm... I will mix it up a bit and open up the can of chili and we can have chili dogs tongue.gif

but the stuff I have is ground beef, chicken drumsticks, chicken breasts, some sgetti sauce, a little bit of rice, sgetti noodles, kraft dinner, frozen peas and chicken broth.. that is about it....

Tabouli

1 cup bulgur wheat (#1, if you have a choice on the grind)
2 cups boiling water
2 bunches parsley
2 roma tomatoes
1 (6 ounce) can black olives, chopped
3/4 cup olive oil
1/2 cup lemon juice

1. Pour boiling water over bulgar.
2. Cover and let sit until water is absorbed (time will depend on how fine the grind is).
3. To prepare parsley, wash, pull leaves off the largest parts of the stem, discarding the stems.
4. Spin or pat the leaves to remove excess water, and chop finely. (I use a Pampered Chef chopper).
5. Dice tomatoes.
6. Combine bulgar, chopped parsley, diced tomatoes, and chopped olives in large bowl.
7. Whisk together olive oil and lemon juice.
8. Pour dressing over other tabouli ingredients and mix well.
9. Cover and refrigerate for at least an hour before serving.

Hmmm....ok - here goes. smile.gif Rice, cooked in the chicken broth, with the chicken breasts would make a good entreé. Mix rice, broth together (butter, salt, pepper if you have it), lay chicken breasts in rice mix...bake at 400f til chicken is done and rice is tender. Peas on the side and if you have SR flour, milk, and mayo you can make Mayonnaise Popovers. Mix flour, milk and mayo to make a thick muffin like mixture, spoon into muffin tins and bake. 350f till brown on top. Depending on what the Kraft dinner is (mac n cheese?) you could mix it with the ground beef.

Hope it helps some...I know what it's like trying to be creative on a VERY limited pantry!

yeah Kraft dinner is mac and cheese.. it is called Kraft Dinner in Canada...


tomorrow I am going to make sgetti and meatballs, I think....

I ended up having to work really late, so I had some raw carrots and fresh pineapple chunks at work, then a slice of frozen pizza hubby had made when I got home. I think tomorrow I am going to make something with chicken thighs in the crockpot. I might have to search the Recipe thread for an easy sauce to put over it smile.gif

this one is yummy... I usually do it in the oven but I don't see why it wouldn't work in the crock pot on low.... my hubby says the sauce tastes like the Jack Daniel sauce from TGI FRIDAYS....

Ugly Naked Chicken

8 pieces bone-in skinless chicken
garlic powder, to taste
salt, to taste
black pepper, to taste

1/3 cup honey
1/3 cup brown sugar
1/8 cup soy sauce (I use low-sodium)
1/4 cup butter or margarine
1/8 cup Worcestershire sauce
1/8 cup lemon juice


1. Preheat oven to 350 degrees F.
2. Place chicken pieces in a 9x13" casserole sprayed with nonstick cooking spray.
3. Generously sprinkle chicken pieces with garlic powder, salt and pepper to taste on both sides.
4. Bake, uncovered, for 40 minutes.
5. Meanwhile, in a microwaveable bowl, combine honey, soy sauce, butter, Worcestershire sauce, and lemon juice and heat on HIGH power for about 30-45 seconds, or until butter melts and you can easily stir ingredients together- watch carefully so you don't overheat it and end up with a melted butter mess in your microwave.
6. After chicken has baked for the 40 minutes, pour the honey mixture all over the chicken and bake another 10 minutes, flip chicken over, bake another 10 minutes longer or until chicken is cooked all the way through and is tender.
7. Note: If you prefer your chicken"dressed," go ahead and leave the skin on.

We had some awesome pulled pork yesterday. I put it in a dry rub for 2 hours, then the oven for 4 hours. Homemade potato salad, pork and beans....very yummy. The tabooli recipe I have calls for a whole cucumber, and a whole green pepper along with the tomatoes all cut up small in it. I also put in shredded carrots and some sunflower seeds. It's very very good. Gene has a pot luck lunch at work on Thursday and wants to make some of that up for the group. Very different from the usual fare.

well, we did end up having chili dogs but they were actually quite good... I used a can of Hormel Chili with no beans... I think so far it is one of the best canned chilis we have tried...

today I plan on making sgetti and meatballs... I make a mean meatball but don't ask me for the recipe because I don't have one tongue.gif I just put in a little of this and a little of that.... and I just use a jarred sauce but the sauce I use is very yummy... I usually fry up some onions and bell peppers and then add the sauce but I only have onion right now... and then i serve it all over angel hair pasta.. my hubby likes that pasta the best....

I love making meatballs this way too Marilyn....actually I do most of my cooking like this. Just putting in a little of this, a little of that. Depends on what I have on hand. I don't usually use a jarred sauce, but I'm running out of my home canned stuff, so I'm on the look out for some jarred stuff I like. Angel hair pasta is MY favourite too!

Tonight I'm making zuchinni sausauge squares. A very quick good recipe. I usually have soup with it, or a salad. If anyone wants the recipe let me know. It's a variation of a recipe I found once years ago. I had it published in the paper here last summer.

Well we did have the stir fry last night, was very good, I put a little curry powder and tumeric in it, which I don't normally and that made it extra good I think. One thing I really like is sesame oil for frying asian dishes, not much, just a few drops - it's great stuff.

Tonight we will be having the left over shepards pie from Monday, yahoo!

I use the Kroger brand from a grocery store around here called Food4Less.... it is soo good... much better then Ragu... tongue.gif

why not?? you just have to make you don't over cook it...

I have also cooked pork roast in it for pulled pork sandwiches...

today for the meatballs, I threw in some chopped onion, some basil, some oregano, some paprika, some garlic powder, some parsley, some thyme, some marjoram and salt and pepper... oh and some bread crumbs, one egg and a dash of Worcestershire Sauce ...

then I made them into about 1 tablespoon size meatballs and baked them in the oven for bout 15 minutes....

Sgetti is one of my favourite meals... I make it with meatballs sometimes because hubby likes it better that way.. although he doesn't complain however I make it heart.gif

re: pork in a crockpot

I think most meat can be cooked in a crockpot...I make BBQ pork in my crockpot..I really love my Fix it and Forget it Cookbooks...its all slow cooker recipes..If you shop online you can probaly get a good deal for the book on Amazon..

tonights dinner.. soup (tomato), spinach salad (baby spinach, radishes, red bell pepper, red onion, sunflower seeds with a balsamic vinigrette (sp)) and sandwhiches...

Hubby is working again tonight *sigh* so it's just me and our daughter and she's not a big eater. Chicken strips and maybe some fries. I'd rather be cooking for the three of us. sad.gif

What is with all these Husbands working until all hours of the night! Just not right. I know sometimes that's just the way it is, but it's too bad that it is.

*sigh* I agree. I'm grateful Joel has a job but come on... blink.gif His boss knows our situation with our daughter and she still refuses to give him daytime hours. Not to mention that we rarely see each other anymore. Boss doesn't have a family nor a SO. Not that I think that has any bearing on how she schedules Joel. whistling.gif
