Part 7 of I-131 asks for a separate letter explaining why the Adv Parole is required. What sort of information needs to be included in this letter? I checked the example forms here but there is no sample for this letter.

This has more to do with other NON-Immigrants, not K-1 cases. You can just say to visit family wile waiting for adjustment of status.
