Does immigration at the POE if you any other documents (besides I-551 stamp) that proves/shows you are a legal permanent resident?
I want to travel with my wife, and I want to bring as much evidence as possible in case we run into problems...

On first entry using the CR-1 or IR-1 visa only the visa and immigrations packet are needed, not until after using the CR-1/IR-1 visa do you have residency status. After that just the passport and I-551 stamp are needed, and after you receive the actual green-card, you need to present the green-card to show LPR status.

If your wife's passport is still in her maiden name, have a copy of the marriage license too until you get the green card.

thanks, but I was thinking more about documents that actually say she is a perm. resident?
like will she be given any other papers saying she is a perm. resident besides the I-551 stamp?

The stamp in the passport is the "papers" you are asking about. Nothing else in that regard will be forthcoming until the arrival of the card
