It's not worth the risk. There's always a chance if she over stays that she will be deported and denied readmission. The K1 visa countdown starts the day she crosses into the USA. If she needs to wait a month before entering the USA that's fine. If it's important to you that your fiance stay in the USA you will adapt your plans to have your documents filed before the deadline.
