Hi, my Fiance has completed the Affidavit Support form and we are wondering if he can email it to me then I print it off to send to the consulate, or does he need to post it in the mail?

He needs to send it via mail to you

He needs to mail it to you, wet signature etc. Amsterdam was very strict finding out if our affidavit was originally signed.

It is true, one of the requirement of originality is the signature that's why it cant be scanned and emailed to you.

Indeed, the one form needed for the interview with a wet signature is this one from the petitioner. Also sent the updated "letter of intent" with wet signature at same time.

I sent the scanned 1-134 form into the consulate with the rest of my packet 3 info and wrote a note that I would be bringing the original form with "wet signature" to the interview (since it was in the mail and would take a couple weeks to reach me)

Interestingly enough, they didnt ask for the original form at the interview and I got an approval! I went through the Auckland embassy as well

I agree about mailing it and also popping a new letter of intent in there too just in case, but you only need the new letter of intent if you petition is out of date...
