Thai citizens have limited travel destinations without a visa...and those are difficult to get sometimes. After getting her green card and travel authorization, can my wife now travel where I as a U.S. citizen can travel on her Thai passport? I'm trying to figure out how this will work.

No, not until she herself is a USC. There's two exceptions, Canada and Mexico, that allows her to enter visa-free when holding a green card.

If it isn't difficult, it isn't worth it.

You can check this link -- http://www.path2usa.com/countries-that-offer-a-visa-waiver-for-us-green-card-holders -- it says which countries you can visit while having a green card. Not until she becomes a US Citizen and has the American passport can she start travelling the same places a USC can go to. :)

An unofficial list is here. Note that some countries except certain nationalities from this privilege, so be sure to double check with official sources.
