Timeline

I read the guide to adjustment of status for K1 visa holders, and it looks like I don't need to submit proof of our marriage and residence, like home rental contract, joint bank accounts and photos until the interview, is this correct?

False, as not may not even need an interview. Send a copy of your marriage license, plus a few other proofs. You do not need much, as you are only just starting your life together.

No joint evidence needed with the I-485 submission. If you have an interview, proof of your marriage, residence and other items will be required.

Our petitions was approved yesterday with only a copy of marriage certificate. We didn't have an interview.

Really? Is that because of the state you live in? I thought everyone had to do an interview

People adjusting from K-1 visas are more likely NOT to have an interview. Not everyone has an interview, as they can be waived. I think out of all the people who filed in the same month I did, only 10% of them had an interview. My husbands GC was approved, no interview, and even before EAD/AP was approved lol.
