The green cards will be denied since the children have no legal status to adjust from.

When you cheat the system, be prepared to pay the price.

They enter LEGALLY, i know they can't AOS because they have been out of status for more than a year, my question is what is my real risk to do things correct and do this through consular process which is right know. I know that i can wait until i become a citizen and they still be children, They already have their I130 approve, i did my homework.

They cannot file to adjust status in the US. They will need to return home and go through consular processing.

I don't know what the risk of leaving would be. They are underage so they will not have a ban for overstaying. Them remaining here illegally is more of a risk although I think deportation of children is rare.

The easiest way should be Consular Processing. They shouldn't need to be outside the US for very long -- just go interview, get the immigrant visa, and come back. Just make sure they have no potential bans first.

They came legally, my sin is that they are in the school but i have read a lot and attend public school is not consider a public charge i even have paid a really expensive health insurance.

Yes. I'm not sure what you're trying to say. It doesn't matter that they entered legally -- as others have explained, they do not qualify for AOS because they are not in the Immediate Relative category and they are not in status. Yes, attending school is not considered for public charge purposes.
