Timeline

I didn't send paystubs in with my AOS package, was I supposed to, and the fee for everything is $1070 right, I wrote one check for that amount, was that the way I was supposed to do it, please someone let me know the answers to these two questions.

I did not send my husband's paystubs as well. I've only sent off tax return and W-2 as supporting documents for my I-864 with my AoS package. The amount of check was correct if you were asking about that.

From page 5 of the I-864 instructions:

You may include evidence supporting your claim about your expected income for the current year if you believe that submitting this evidence will help you establish ability to maintain sufficient income. You are not required to submit this evidence, however, unless specifically instructed to do so by a Government official.

Since you've already sent the package, there's nothing you can do now. If anything is missing and is required, they will send you an RFE requesting it. It's best to wait for that RFE rather than sending something when it hasn't been requested.

I sent two money orders, one for $1000 and one for $70. As long as the payment adds up to $1070 (AOS + biometrics), you'll be fine.

Yes, it should be sufficient as long as you have followed the instruction on I-864p for federal poverty guidelines.

Complete tax return or an IRS transcript can be used.
